How To Cook Fish From Frozen image

Did you know that you can cook fish from frozen? These are the basic instructions for cooking cod and salmon portions from frozen. To make the fish with crunchy crumb crust pictured here, the instructions are immediately above this recipe.

4 (4-6 oz.) cod or salmon portions
2 tsp. olive oil or vegetable oil
Salt, pepper and/or other seasonings or sauce

Steps:

  • Preheat oven to 450°F.
  • Remove frozen fish from all packaging and rinse under cold running water to remove any ice crystals.
  • Arrange fish in a single layer on a baking sheet. Brush lightly with oil on all sides.
  • Bake for 4-5 minutes. Remove from the oven and add seasonings or sauce.
  • Continue to bake until hot and flaky in the center, about 8-12 more minutes. Thicker portions may need to be flipped over halfway through cooking and may require a few extra minutes to cook through.

Chances are, the "fresh" salmon you buy at your supermarket's fish counter was flash-frozen for transport and then thawed to sell. That fish is best cooked the same day of purchase. So why not pick up some frozen salmon fillets instead that will last for months in your freezer? Here's a little more incentive: We created this recipe so you can cook them straight from the freezer. The tender fillets are doused with an easy lemon-butter sauce for a fast and tasty weeknight meal.

Olive oil, for the foil
Four 4- to 5-ounce skin-on frozen salmon fillets
Kosher salt
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
3 tablespoons unsalted butter, at room temperature

Steps:

  • Position an oven rack in center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with aluminum foil and brush with oil.
  • Rinse the salmon fillets with cold water and pat them well with paper towels. Place the fillets, evenly spaced, in the middle of the prepared baking sheet.
  • Bake for 8 minutes; remove the baking sheet from the oven and season the tops of the fillets with 1 teaspoon salt. Continue to bake until the salmon is opaque throughout and the insides flake easily when you insert a paring knife between the layers, 5 to 8 more minutes, depending on the desired doneness (cook until bright pink for rare, pale pink for medium and orange for well done).
  • Meanwhile, whisk together the lemon juice and mustard in a large bowl. Add the butter and a pinch of salt and whisk until the sauce is smooth. Top each salmon fillet with some sauce.

1/2 cup light sour cream
2 teaspoons Dijon mustard
1/2 teaspoon dried tarragon
3 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 450F.
  • Place fish in a large, oven proof dish, cover loosely with foil and bake for 5 minute (10 minute if frozen).
  • Drain off liquid.
  • Combine sour cream, mustard and tarragon and spread over fish.
  • Sprinkle with Parmesan,.
  • Bake, uncovered, for 5 minute or until golden.

1 tablespoon olive oil
3 cups frozen California-blend vegetables (broccoli, carrot, cauliflower)
½ cup water
1 stalk celery, chopped
½ medium onion, diced
1 clove garlic, minced
1 pinch paprika, or to taste
salt and ground black pepper to taste
1 pound cod fillets

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 2-quart baking dish with olive oil.
  • Combine mixed vegetables, water, celery, onion, and garlic in the bottom of the prepared baking dish. Season with paprika, salt, and pepper.
  • Lightly season cod fillets and layer on top of vegetables.
  • Place in the preheated oven and immediately reduce the heat to 350 degrees F (175 degrees C). Bake until fish flakes easily with a fork, about 30 minutes.

  • Heat oven to 375°F. Grease bottom of rectangular pan, 11x7x1 1/2 inches.
  • Cut fish fillets into 4 serving pieces if needed. Place pieces, skin sides down, in the pan, folding thin ends under if necessary for even thickness.
