SLOW-COOKER TAIWANESE BEEF NOODLE SOUP



Slow-Cooker Taiwanese Beef Noodle Soup image

You'll love this easy-to-make version of a traditional Taiwanese noodle soup.

2 lb boneless beef shank, cut into 1-inch pieces
5 cups water
2 cups Progresso™ beef broth (from 32-oz carton)
1/2 cup soy sauce
1/3 cup cooking rice wine
1/4 cup Muir Glen™ organic tomato paste (from 6-oz can)
1 piece (1 1/2 inches) fresh gingerroot, peeled, cut into matchstick-size strips
2 tablespoons spicy bean paste
1 1/2 teaspoons sugar
1 1/2 teaspoons five-spice powder
4 green onions, thinly sliced (about 1/4 cup)
1 lb Chinese broccoli
1 package (11.2 oz) dried Taiwanese wheat noodles

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. In slow cooker, mix beef, water, broth, soy sauce, rice wine, tomato paste, gingerroot, bean paste, sugar, five-spice powder and half of the sliced green onions. Cover; cook on Low heat setting 8 to 9 hours or High heat setting 4 to 5 hours.
  • Separate thin Chinese broccoli stems from large stalks; discard large stalks. Cut small stems, florets and leaves into 2-inch pieces; stir into beef mixture. Cover; cook about 10 minutes longer or until broccoli is crisp-tender.
  • Meanwhile, cook and drain noodles as directed on package. Rinse with cold water; drain.
  • Divide noodles among bowls; ladle soup mixture over noodles. Top with remaining sliced green onions.

This recipe, which focuses on the broth for beef noodle soup, was passed along by my Taiwanese father-in-law's friend. It's a slight twist on the original beef soup with the tomato but is arguably more delicious. I modified his recipe to use in a rice cooker or slow cooker to make it even easier! After you make this broth, you should add noodles and additional vegetables to eat with your meal.

1 beef shank
2 green onions
6 slices ginger
20 garlic cloves
1 sliced onion
2 teaspoons red pepper flakes
1 -2 tomatoes (optional)
3 teaspoons rice wine
3 teaspoons black bean sauce
1 cup soy sauce
1 teaspoon sugar
6 star anise
10 cups water
4 tablespoons oil

Steps:

  • While you are cutting vegetables, bring a pot of water to boil. Add the beef shank to the boiling water and simmer for about 10 minutes to remove any impurities.
  • Remove beef shank from the boiling water and cut into desired size.
  • In a stock pot (if you don't have a rice/slow cooker to use) or a wok (if you plan to transition to a rice/slow cooker), heat up the oil on medium-high heat.
  • Add the garlic and red pepper flakes and sauté until the garlic is fragrant.
  • Add the sliced onions to the pan and sauté until the onions are transparent.
  • Add the black bean sauce, soy sauce, sugar, and rice wine and stir fry over medium heat for 1 minute. You can add the tomato at this point (optional).
  • Add the beef back into the pot with the stir-fried ingredients.
  • If you plan to use the stock pot, add the star anise, green onions, and ginger (ideally in a spice sachet so you can remove easily later) and ~10 cups of water to the pot, bring to a boil and simmer on low heat for at least an hour.
  • If you are using a rice or slow cooker, transfer the contents to the rice/slow cooker container and add the star anise, green onions, and ginger (ideally in a spice sachet so you can remove easily later) and ~10 cups of water to the container. Cook on low heat for at least an hour.
  • After broth is complete, let cool and store, or eat with noodles immediately. You can add additional water to taste. Tip: Cook noodles in a separate pot of water, then combine with the broth for best results.

1 1/2 lbs beef chuck, in one piece
8 cups beef broth
4 cups water
1/2 cup soy sauce
1/2 cup very thinly sliced peeled ginger
2 tablespoons very thinly sliced peeled ginger
1 onion, coarsely chopped
3 garlic cloves, thinly sliced
1/2 star anise, pod
1/2 lb shiitake mushroom, caps only, thickly sliced
3 large scallions, thinly sliced
1 lb fresh Chinese egg noodles or 1 lb thick japanese udon noodles
toasted sesame oil or hot chili oil, for serving

Steps:

  • In a slow cooker, combine the meat with the broth, water, soy sauce, ginger, onion, garlic and star anise. Cover and cook on high for 4 hours, until the meat is tender. Transfer the meat to a plate and let cool slightly. Using 2 forks, pull the meat into thick shreds.
  • Strain the broth, discarding the solids. Return the broth to the cooker. Add the shiitakes, scallions and shredded meat. Cook on high for 15 minutes, until the mushrooms are tender.
  • Meanwhile, bring a large saucepan of salted water to a boil. Add the noodles and cook until al dente. Drain well.
  • Add the noodles to the soup. Serve in deep bowls, passing the sesame or chili oil at the table.

  • In a slow cooker, add 7 cups of water, the prepared beef chunks, onion, garlic, ginger, carrots, soy sauce, apple cider vinegar, salt and pepper. Set to cook for 8 hours on low temperature. When the time is up, the slow cooker should automatically switch to the "warm" setting.
  • Once the soup is ready, prepare the noodles. In a medium pot, bring water to a boil over high heat and add noodles. Cook for 6 mins while continuously stirring to ensure that the noodles do not stick together or to the bottom of the pot. Then, dip the bok choy into the boiling water for 30 seconds, take it out and set it aside. Drain the noodles.
  • Assemble the beef noodle soup, in 2 large bowls divide the drained noodles. Add bok choy and a boiled egg on top. Pour in desired amount of beef soup. Add in beef chunks and carrots. Sprinkle on sliced green onions, and add salt and pepper to taste.
