SAUSAGE-VEGETABLE EGG BAKE
Steps:
- Preheat oven to 350°. In a large skillet, cook sausage over medium heat 5-7 minutes or until no longer pink, breaking into crumbles. Using a slotted spoon, transfer sausage to a greased 13x9-in. baking dish, spreading evenly. Remove drippings from pan., In same skillet, heat butter over medium-high heat. Add mushrooms; cook and stir until tender, 3-5 minutes. Add Swiss chard, wine and garlic; cook and stir until chard is tender and liquid is almost evaporated, 1-2 minutes longer. Add to baking dish., In a large bowl, whisk eggs, milk, salt and pepper until blended; pour over vegetable mixture. Sprinkle with mozzarella cheese., Bake, uncovered, 45 minutes. Sprinkle with Parmesan cheese. Bake until a knife inserted in the center comes out clean, 10-15 minutes longer. Let stand 5 minutes before serving. Sprinkle with parsley.

- Line a sheet pan with foil paper. (Dimensions: 17 x11).
- Place the potatoes, squash, zucchini, carrots, onions, peppers, cauliflower sausage on the sheet pan.
- Drizzle olive oil all over the vegetables and sausages.
- Sprinkle salt, pepper, paprika, garlic powder, ginger powder, oregano, parsley, thyme, basil, red chili flakes.
- Toss everything together until everything is evenly coated.
- Bake at 400 degrees for 20-25 minutes, making sure tossing the vegetables around halfway through for even cooking.
- Cook until vegetables are tender and sausage has browned.
- Remove from oven, sprinkle some parmesan cheese and serve immediately!

- Preheat the oven to 180C/160Fan/Gas mark 4.
- Drizzle a little of the oil in a large frying pan and gently fry the sausages. When they are brown, remove from the heat and set aside. Add the remaining oil and gently fry the onion on a low-medium heat for five to eight minutes or until softened. Add the crushed garlic and cook for a further two minutes.
- Add the diced pepper and sliced mushrooms, tomato puree, mixed herbs and smoked paprika. Season with salt and pepper and cook for about 5 minutes or until the vegetables have softened. Pour in the beef sock and chopped tomatoes, turn up the heat slightly and allow to simmer for a couple of minutes. Transfer everything to a deep casserole dish and cook for 50-60 minutes, until bubbling and piping hot.
- Check the casserole for seasoning and serve with buttery mash or baked potatoes.

- 1. Preheat oven to 400°F. Spray 9 x 13 baking dish with garlic mist nonstick cooking spray.
- 2. Combine potatoes, onion, carrots, butter, salt, Mama's Meatball seasoning, salt, garlic powder, thyme, and pepper in prepared baking dish; toss to coat. Bake 30 minutes.

- Peel and dice two sweet potatoes. Toss with olive oil and salt and pepper.
- Top with one roughly chopped onion and two bell peppers.
- Place the honey garlic sausage on the very top.
- Drizzle with a little more olive oil and garnish with a few fresh sprigs of thyme.
- Bake for 40 minutes.
- Remove from the oven and slice the sausage into one inch pieces. Bake for an additional 10-15 minutes.

- Preheat oven to 350°F. Lightly coat a 9 x 13 inch baking dish with non-stick cooking spray. Prepare pasta according to package instructions and leave in strainer with a pat of butter if desired.

- Heat oil in a large saucepan over a moderate heat whilst preparing your vegetables. Dice the onion finely and cut the pepper into strip or chunks. Crush the garlic clove and add it all to the pan, frying until slightly softened.
- Cut the sausage into chunks. Some may prefer to remove the skins by slicing down the length of the meat with the tip of a knife and peeling it away - I prefer to leave it on as it helps to keep the meat together in the pan. Put the sausage on to fry.
- After a few minutes, when the sausage has browned a little, add the chopped tomatoes. Reduce the heat and allow to simmer gently. If you’d rather eat sooner than later, don’t make up your stock - simply crumble the cube directly into the pan. By the time you’re done cooking, you’ll have stirred the casserole enough to have completely dissolved the stock.
- Peel and chop your potatoes, parboiling them before adding them to the mix. If you leave them to cook with the casserole, you could be waiting a while!
