STEAMED BROCCOLI WITH LIME DRESSING
All it takes is a little lime and sesame oil to transform an everyday vegetable into a dish the whole family will love.

- Prepare broccoli: Cut off and discard tough ends of stalks, leaving about 2 inches attached to the florets. Using a paring knife, cut broccoli lengthwise into pieces. With a sturdy vegetable peeler (or sharp knife), peel away the tough outer layer from the stalks. In a large pot fitted with a steamer basket, bring 1 inch of water to a boil. Add broccoli pieces in a single layer. Cover, and steam until tender, about 5 minutes.
- Meanwhile, in a large bowl, whisk together lime juice and sesame oil; season with salt.
- Add broccoli to dressing; toss lightly to coat. Serve immediately.

- Chop the broccoli into florets.
- If using, thinly slice the onion. Place it in a bowl of water while you're making the rest of the recipe, then drain. (This helps to reduce onion breath and remove some of the spicy bite. If you use green onion, skip this step!)
- Place 1 1/2 cups water into a saucepan or pot. If using a steamer basket without a handle, add it to the pot now: the water surface should be right under the basket. Bring the water to a boil.
- Once boiling, add the broccoli (in the steamer basket, if it has a handle). Steam with the lid on 3 to 4 minutes until just tender, testing with a fork to assess whether it's done. We like our broccoli on the crisp side: if you'd like it more tender, cook 1 minute more. Just be careful not to cook much longer or the color will immediately fade and it will be overcooked!
- Carefully remove the broccoli to a bowl. Toss with the olive oil, kosher salt, feta cheese (optional), and drained red onions. Top with freshly ground black pepper.

PERFECTLY STEAMED BROCCOLI

- Add 1 inch of water to a saucepan and bring to a boil.
- Rinse the broccoli. Use a vegetable peeler to peel the stalks.
- Cut the broccoli into bite-size florets and pieces, and place them in a steamer basket.
- Steam until tender-crisp. Start checking after 5 minutes. As soon as a fork can pierce the stalks, the broccoli is done. Even if the rest of the meal is not ready yet, remove the broccoli from the steamer onto a plate. Crisp steamed broccoli is delicious even at room temperature. Warm limp broccoli is not.
- While the broccoli is steaming, in a small bowl, whisk together the lemon juice, olive oil, salt, pepper, and garlic powder.
- Place the broccoli in a bowl. Pour the dressing on top and gently mix. Serve immediately.

- Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
- While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. - You can use fresh broccoli, frozen, or what I like to do is get the pre-cut, pre-washed package of "fresh" florets. Just divide it all up into a few snack-sized portions in a zip-lock bag, add a teaspoon of water and toss in the fridge (no water needed if it's frozen).
- When it's time for a snack, toss one of the bags (with the zip NOT sealed!) into the microwave for about 30 seconds (depending on the power of your microwave). This will steam the broccoli in the bag.
- Remove and add a tablespoon or 2 of your favorite dressing (I like low-fat Ranch), seal the bag and shake it up to coat everything with the dressing.
- Pour into a bowl for a fast, easy, healthy snack.

BROCCOLI SALAD WITH PEANUTS AND TAHINI-LIME DRESSING
Broccoli stalks, often overlooked or tossed in favor of the florets, take center-stage in this summer picnic salad. While many broccoli slaws are made with mayonnaise-based dressings, this one is inspired by the bright flavors of Thai cuisine, and uses sesame oil, lime juice, salted peanuts, scallions and a dash of hot sauce for heat. (Garnish the slaw with fresh Thai basil, if you like.) Tossed with a creamy vegan tahini-lime dressing, the broccoli softens just enough to lose that raw broccoli flavor without giving up any of its satisfying crunch. A food processor or Mandoline makes quick work of the stems, but with a little bit of patience, a good knife does the trick, too. Finally, this salad is best the day it's made, though its components can be prepared in advance to save time.

- Trim the broccoli stalks and peel them to remove the tough outer layer. Cut off the florets, leaving as much of the stalk as possible intact, and set the florets aside. Using the shredding or julienne blade of a food processor, a mandoline or a sharp knife, julienne the stems and place them in a large bowl.
- Finely chop or julienne the florets and add them to the bowl, along with the scallions and peanuts.
- In a small bowl or glass measuring cup, combine the tahini, lime juice, sesame oil, soy sauce, honey, garlic and hot sauce and whisk until smooth. Pour the dressing over the vegetables and toss thoroughly to coat. Set aside at room temperature for at least 15 minutes, tossing occasionally, to allow the broccoli to soften slightly.
- Just before serving, add the fresh herbs and toss well. (You can refrigerate for up to 8 hours before serving.)
