SLOW COOKER CHIPOTLE BEEF
Smoky shredded roast beef, cooked in spices and chipotles in adobo, then served with a tangy cabbage and red onion slaw.

Steps:
- Place roast in a lightly greased slow cooker. Add the onion, garlic, chipotles, oregano, cumin, bay leaves and salt and pepper. Cover and cook on low for 7-8 hours, or until beef is very tender.
- Transfer the beef to a medium bowl and shred with 2 forks. Strain the cooking liquid through a fine mesh strainer into the bowl. Toss liquid with beef to combine.
- Prepare the slaw about 30 minutes before serving by combining all of the ingredients in a medium bowl and mixing well.
- Serve shredded beef in warm tortillas with cilantro lime slaw.

- Preheat oven to 425°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Brush cut cloves with 1 teaspoon oil. Wrap in foil. Bake until cloves are soft, 30-35 minutes. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork., Meanwhile, in a large dry skillet over medium-high heat, toast chilies on both sides until puffy, 3-6 minutes. (Do not blacken.) Cool. Remove stems and seeds; coarsely chop chilies. Place in a small bowl; cover with beer. Let stand until softened, about 30 minutes., In the same skillet, heat 1 tablespoon oil over medium-high heat. Brown beef in batches, adding additional oil if needed; transfer to a 6-qt. slow cooker. In the skillet, heat 2 teaspoons oil over medium heat. Add onions; cook and stir until tender. Add to beef., Stir in the remaining ingredients, mashed garlic and dried chilies mixture. Cover and cook on low until meat is tender, 7-9 hours. If desired, serve with cheese and jalapenos.

My friend Keni's love of smokey chipotle peppers inspired this recipe. It comes together perfectly and is a unique chili that will stand out against others. It is a spicy chili that at the same time is mellow. It gives you the kick without the lingering burn like many chilis do.

- Heat a large skillet over medium-high heat. Cook and stir beef and sausage in the hot skillet until some of the fat renders, 2 to 3 minutes; add onion and garlic and continue to cook and stir until the meats are browned and crumbly, 5 to 7 minutes more. Transfer beef mixture to a slow cooker.
- Stir kidney beans, chili beans, diced tomatoes, crushed tomatoes, celery, green bell pepper, red bell pepper, chipotle chiles, bacon bits, chili sauce, hot pepper sauce, chili powder, brown sugar, cumin, and salt with the beef mixture.
- Cook on Low until vegetables are completely tender but the celery retains a slight bit of firmness, 6 to 8 hours (or 3 to 4 hours on High).

This recipe keeps it simple with typical ground beef, tomatoes, fresh vegetables, spices, and beans (sorry, Texas). For a little extra kick and smoky flavor, add chipotle chiles, then let everything come together low and slow in a slow-cooker.

- Heat a skillet over medium heat and add the sirloin, garlic, and onion. Cook until the beef is browned, 6-7 minutes.
- Transfer the sirloin mixture with a slotted spoon to a slow cooker and add the next 8 ingredients (through cumin). Season with salt and cook on low 6 hours.
- Stir in the tomato paste and taste for seasoning, adding more salt, if needed. Cook 1 hour longer.

- Set the slow cooker to low. Heat 1½ tbsp oil in a large, non-stick pan over a high heat and fry the mince for 10-12 mins or until evenly browned. Tip into the slow cooker.
- Heat the remaining oil in the pan. Fry the onion, celery and pepper for 10 mins or until softened. Add the garlic, cumin and paprika and fry for 1 min. Tip into the slow cooker.
- Stir in the oregano, chipotle paste, tomato purée, tomatoes and stock. Season. Cover and cook for 6-8 hrs.
- Stir in the beans and chocolate during the final 30 mins of cooking. Serve with a bowl of rice or tortilla chips and a dollop of soured cream.

SLOW COOKER MEATY CHIPOTLE CHILI
I finally had to try coming up with my own chili recipe--as I always seem to make so many changes to others! I hope that you enjoy! This isn't quite as spicy as I like it--but it is a good compromise for those who like and don't like their chili super spicy. Please add additional chili powder and chipotle sauce as you like!

- Cut the bacon into 1/4 inch pieces and brown in pan over medium heat. Remove and reserve on paper towls.
- Drain the bacon grease, then brown the ground pork and beef in the pan.
- Crumble the bacon a bit and combine with the (drained) ground pork and beef, sirloin, beans, tomatoes, and onion in a slow cooker.
- Add the seasonings (garlic, salt, chili powder, cumin, and oregano) to the slow cooker and stir well.
- In a bowl, combine the tomato paste, beer, and chipotle sauce. Stir until well combined and pour over the mixture in the slow cooker.
- Mix everything together.
- Cook on low for 8 hours.
- Serve with sour cream and shredded cheese.

- In a large bowl, combine beans, tomatoes, onion, green pepper, chipotle peppers, adobo sauce and garlic. In another bowl, combine beef, cumin, oregano, salt and pepper., Pour half of the tomato mixture into a 4- or 5-qt. slow cooker; add beef. Top with remaining tomato mixture. - Cook sausage and ground beef in a large pot over medium-high heat until lightly browned and crumbly.
