2 tablespoons kosher salt
8 slices thick-cut bacon
1/2 cup red wine vinegar
1 to 2 tablespoons honey
1 teaspoon red chile flakes
1 teaspoon dried dill
1 small red onion, thinly sliced
3/4 cup mayonnaise
1/4 cup BBQ sauce
2 tablespoons whole-grain mustard
1 to 2 tablespoons apple cider vinegar
1 teaspoon freshly ground black pepper
3 dashes Worcestershire sauce
1 pinch of kosher salt
1/2 cup fresh parsley leaves

  • Fry the bacon in large skillet over medium heat until crisp, 12 to 15 minutes. Remove to a paper towel-lined plate, chop into 1-inch pieces and reserve.

Toss well to combine and submerge the onions. Set aside or transfer to a container with an airtight lid. The quick-pickled onions can be stored in the refrigerator for up to 7 days.
  • For the dressing: Mix together the mayonnaise, BBQ sauce, mustard, apple cider vinegar, pepper, Worcestershire and salt in a medium bowl until combined.
  • Pour the dressing onto the potatoes, add a third of the pickled onions, two-thirds of the chopped bacon and half the chopped parsley and toss. To serve, garnish with the remaining parsley, bacon and pickled red onions.

DEE'S TRI COLORED POTATO SALAD

Dee's Tri Colored Potato Salad image

I have had many potato salads in my lifetime. I like this one the best. I grew up with them made only with russet potatoes by my mom. I never liked hers because it us too mushy and russets make a grainy texture. I discovered I liked the texture and flavor of red potatoes better. Then when tri colored potatoes came out several yr ago, I started using them. I love the look of the yukon gold, red & purple potatoes in this salad. This is a borrowed net pic. I will post my pic when I make it tomorrow.

Provided by Dee Stillwell @LILLYDEE

Categories     Potatoes

Number Of Ingredients 13

2 - 28oz - bags of tri colored potatoes from trader joe's.or equivelent
8 - hard boiled eggs, shelled & chopped
2 cup(s) diced celery
1 bunch(es) green onions, chopped
1/4 cup(s) dill pickle relish, or finely chopped dill pickles
2 tablespoon(s) yellow mustard
3/4 cup(s) zesty italian salad dressing
2/3 cup(s) mayonnaise, add more if you like it looser
1/2 cup(s) sour cream, add more if you like it looser
1 1/2 teaspoon(s) seasoning salt
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) pepper
2 teaspoon(s) dill weed

Steps:

  • I like to steam my potatoes of this salad so the purple taters don't bleed their color so much. Steam until tender but not overdone & mushy. You can also use the steam water to cook the eggs. Chop all veggies while they are cooking. Cool eggs & potatoes until you can handle them, but still warm. Dice potatoes and pour salad dressing over them. Toss to coat. Dice eggs on top of potatoes. Cover and chill for a couple of hours. Put salad together by adding all the other ingredients. Mix well and adjust mayo or seasonings if necessary. Chill several hours before serving so flavors can marry. Enjoy!

MAMA'S OLD FASHIONED POTATO SALAD - DEE DEE'S

Mama's Old Fashioned Potato Salad - Dee Dee's image

This is the way my mother and my grandmother always made their potato salad. A really nice side dish to go with BBQ! Not bad with fried chicken or for the holiday meals either. I'm sure this basic recipe has be around forever. It's tried and true in our household and the only way our family eats potato salad. Hope you enjoy!

Provided by Diane Atherton @DeeDee2011

Categories     Potatoes

Number Of Ingredients 11

5 pound(s) idaho potatoes, peel and cubed
1/2 medium onion, chopped fine
5 - hard boiled eggs, chopped
1/4 cup(s) sweet pickle cubes or relish
1/2 cup(s) dill pickle cubes or relish
1 stalk(s) celery, diced, optional
- salt and pepper to taste
1.5-2 cup(s) hellman's mayonnaise
1.5-2 tablespoon(s) mustard
- paprika, for garnish, optional
1 - hard boiled egg, sliced, for garnish, optional

Steps:

  • Peel potatoes and cut into 1 inch cubes; place in a 5 quart pot, cover with water (I add some salt to water); boil for approximately 7 to 8 minutes (time may vary so check for firmness around 5 to 6 minutes, don't over cook and don't under cook, you don't want mashed potato salad and you don't want under cooked potatoes; drain and rinse in cold water; drain well.
  • While potatoes are draining and cooling off; combine chopped onion and eggs; set aside.
  • In a separate bowl, combine pickles, celery, salt and pepper, mustard and mayonnaise.
  • Once potatoes are cooled; add chopped onion and eggs; fold together gently; add mayonnaise mixture and combine gently with other ingredients; if salad seems like you don't need all the mayonnaise mixture; don't use it all, if salad seems to dry, add additional mayonnaise.
  • Garnish top with sliced boiled eggs and sprinkle with paprika if desired.

DEE'S POTATO SALAD DRESSING

Dee's Potato Salad Dressing image

This came from a friend of mine who lived in TN who passed away about 5 years ago. Her Grandmother always made this and it is an excellant dressing. It is a tad sweet so you can cut back on the sugar if you like but I find it even better after it has sat over night so the potatoes have a chance to soak up the flavors! I also add cut up hard boiled eggs to my potato salad. To be honest I have no idea how much it makes and how many servings. I make this when I am having company and I boil about 5 lbs of potatoes and it cover that amount.
