TENDER PORK CHOPS IN GRAVY
I'm posting this as a reply to someone who was looking for tender pork chops without using a crock pot. I've had this recipe for so long, probably even before there WERE crock pots! (BTW - this recipe can also be made in a crock pot.)

Steps:
- Season the pork chops on both sides with sea salt, garlic powder, onion powder, and pepper.
- Heat the olive oil in a dutch oven over medium-high heat. Add the pork chops and sear on both sides, about 3 minutes per side without moving, until browned. Transfer the pork chops to a plate and set aside.
- Reduce heat to medium-low or medium. Using the same dutch oven, saute the sliced onions for 15-20 minutes, until caramelized.
- Once the onions are caramelized, preheat the oven to 375 degrees F (190 degrees C).
- Add the minced garlic and thyme leaves to the dutch oven. Saute for about a minute, until fragrant.
- Add the chicken broth to the dutch oven. Scrape any browned bits from the bottom of the pan. Bring to a gentle boil, then simmer for about 2-3 minutes, until it gets thicker and the volume is reduced by at least 1/4.
- Remove from heat. Add the cream cheese. Stir in the cream cheese until it melts into the sauce.
- Return the pork chops to the dutch oven and spoon the sauce and onions over them. Cover with the lid and bake for 20-25 minutes, until cooked through. (Time will vary depending on the thickness of your pork chops - use a thermometer to check and cook to 145 degrees F (63 degrees C).)

- Take the pork chops out of the fridge at least 15-30 minutes prior to starting the recipe. Prep the other recipe ingredients.
- Add the oil to a skillet over medium-high heat. Heat the pan for a few minutes (I heated my cast iron for 5 min). It needs to be HOT for the pork chops to get a good sear and cook through fast.
- Meanwhile, pat the pork chops dry with paper towel. Season each pork chop with salt & pepper on both sides.
- Add the pork to the pan and cook for 3-5 minutes/side (3 minutes for thinner chops and 5 minutes for pork chops that are up to 1" thick). Pork should be golden brown and cooked through. Test for doneness at this point. It's safe to eat at 145F (a bit pink inside), and the temperature will rise a bit as it rests. If the pork chops aren't quite cooked through yet, sear them for a little longer (don't overcook). Transfer the pork to a plate and set aside. If the pork chops are particularly large, sear them in two batches (don't crowd the pan or they'll steam).
