2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter (, softened (2 sticks))
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups semi-sweet chocolate chips
1 cup cashews (, roughly chopped)

Steps:

  • Preheat oven to 350 degrees F.
  • Combine the flour, baking soda and salt in a bowl.
  • In a separate bowl, beat butter, sugars and vanilla together until creamy.
  • Add the eggs, one at a time, mixing after each addition.
  • Slowly add in the flour mixture and stir.
  • Stir in the chocolate chips and cashew pieces.
  • Drop by rounded tablespoon onto ungreased baking sheet.
  • Bake for 9 to 11 minutes or until edges are golden brown. Remove from oven and cool on baking sheet for 2 minutes. Transfer to wire racks to cool completely.

1 1/4 cup all-purpose flour
1 cup whole wheat flour
1 tsp baking soda
1 cup salted butter, (softened)
3/4 cup granulated sugar
3/4 cup brown sugar
1 tsp vanilla extract
2 large eggs
2 cups chocolate chips
1 cup cashews, (chopped)

Steps:

  • Preheat the oven to 350˚F.
  • In a medium bowl, combine the flours and baking soda.
  • In a separate bowl, beat together the butter, sugars and vanilla until light and fluffy. Add the eggs and mix well.
  • Slowly add the dry ingredients to the wet ingredients until fully combined. Fold in the chocolate chips and cashews.
  • Drop the cookie dough onto ungreased baking sheets and bake for 9-11 minutes, or until the edges are golden brown. Remove from the oven and allow to cool on baking sheets for around 2 minutes, then transfer to wire racks to cool completely.

2 cups minus 2 tablespoons white flour
1 2/3 cups bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
3/4 cup butter, softened
1/2 cup shortening
1 1/4 cups light brown sugar
1 cup granulated sugar
2 tablespoons granulated sugar
2 eggs
2 teaspoons vanilla extract
2 1/2 cups chopped milk chocolate
3/4 cup cashews, coarsely chopped
sea salt, for sprinkling

Steps:

  • Sift together the flour, bread flour, baking soda, baking powder and salt into a large bowl and set aside.
  • In another bowl, cream together the butter, shortening and sugars on medium speed until light and fluffy.
  • Add the eggs and vanilla and beat well.
  • Gradually add the dry ingredients and mix until just combined.
  • Add the chocolate chips and cashews to the dough. Stir well. This will be very thick, and I sometimes use my hands to mix together.
  • Using a spoon, scoop the dough into a rough ball, about the size of a golf ball, and place on the baking sheet.
  • Sprinkle lightly with sea salt and bake until light brown and and set for about 9-10 minutes in a 350 degrees oven.
  • Cool cookies on a cooling rack and enjoy!

2 cups unsalted cashew nuts(whole or pieces)
1/2 cup chopped almonds or macadamia nuts
1 1/2 cups Butter Toffee bits

Steps:

  • Preheat oven to 350 degrees F. Combine butter and sugars. Mix untill creamy. Add eggs and vanilla. Mix well. Stir in flour. Add chocolate chips,nuts,and toffee bits. Stir untill combined. Drop by heaping tablespoons onto lightly greased cookie sheets. Bake 12-15 minutes or until edges are brown and center is set. Make 4 dozen.

1 ¼ cups finely chopped cashews
1 teaspoon vanilla extract
½ teaspoon salt
2 tablespoons chocolate chips, or more to taste

Steps:

  • Place dates in a bowl and cover with several inches of cool water until soft, 30 to 60 minutes. Drain, squeeze out extra liquid, and reserve. Chop dates into a thick paste.
  • Combine dates with cashews, vanilla extract, and salt in a bowl. Fold in chocolate chips. Press mixture firmly into a parchment paper-lined 8-inch baking pan until compact. Refrigerate until set, 1 hour to overnight.
  • Cut into bars.
