These wheat germ chocolate chip cookies are filled with oats, wheat germ, and chocolate. Perfect for an easy breakfast on the go or as an afternoon energy-boosting snack. And they taste fantastic!

Number Of Ingredients 14

1 cup old fashioned whole rolled oats
1 cup wheat flour
1 cup wheat germ
1/2 teaspoon baking soda
1/2 cup coconut flakes
Pinch of salt
1/2 cup 8 tablespoons unsalted butter at room temperature
1/2 cup white sugar
1/4 cup brown sugar
1/4 cup date syrup
1 large egg
1 teaspoon vanilla
1 cup bittersweet dark chocolate chips
1/2 cup pecans

Steps:

  • Mix the oats, flour, wheat germ, baking soda, salt, and coconut flakes in a medium bowl. Whisk until mixed in.
  • In a separate bowl, beat the butter with an electric mixer until fluffy. Add the granulated sugar, brown sugar, date syrup, egg, and vanilla, and continue whisking until smooth and creamy.
  • Add in the dry ingredients and continue whisking on low speed until just combined.
  • Stir in the chocolate chips and pecans. Mix well. Chill the dough in the refrigerator for at least 30 minutes.
  • Preheat oven to 400°. Line a cookie sheet with baking paper or a Silpat. Use a cookie scoop to scoop the dough on the baking sheet. Bake for 9-12 minutes or until the edges and top are barely golden.

1 cup packed brown sugar
1/2 cup canola oil
2 eggs, lightly beaten
1/2 cup unsweetened applesauce
1-1/2 cups all-purpose flour
1-1/2 cups toasted wheat germ
1 cup quick-cooking oats
2 teaspoons baking powder
1 teaspoon salt
1 cup (6 ounces) miniature chocolate chips
1/2 cup chopped walnuts or pecans

Steps:

  • In a large bowl, beat brown sugar and oil until blended. Beat in egg, then applesauce. Combine the flour, wheat germ, oats, baking powder, and salt; gradually add to brown sugar mixture and mix well. Stir in chocolate chips and walnuts., Drop by rounded teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. Flatten slightly with a glass bottom coated with cooking spray. , Bake at 350° for 10-12 minutes or until edges are lightly browned and cookies are set. Cool for 1 minute before removing to wire racks.

Steps:

  • Whip butter and sugar.
  • Add egg and vanilla.
  • Add wheat germ.
  • Add flour (mixture will become very thick).
  • Press into 8x8 square inch pan (ungreased).
  • Cook 375 for 15minutes.

3/4 cup wheat germ
1/2 cup quick oats
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter (softened)
1/3 cup sugar
1/2 cup dark brown sugar
1 egg
3/4 tsp vanilla extract
1/2 cup chopped pecan
1 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350˚F. Line a cookie pan with parchment paper or baking mat; set aside.
  • Whisk flour, baking powder, baking soda, salt, oats, and wheat germ together; set aside.
  • In an electric mixer with a paddle attachment, cream butter and sugars on medium speed until fluffy. Add an egg and vanilla extract. Beat well for 2 minutes.
  • Add the dry ingredient mixture and stir until just combined. Stir in the chocolate chips and chopped pecans.
  • Using a cookie scoop or spoon, take 3 tablespoon of dough and roll into a ball. Place cookie balls on a prepared pan, spacing apart about 2-inch in between.
  • Wet your fingers with water and press down the cookie balls slightly. Bake them in a preheated 350˚F oven for 12-14 minutes. Let the cookies rest on a pan for 2 minutes. Transfer them to a cooling rack and cool completely.

I wanted a quick and easy lunch box snack last week and my internet connection was down! Oh the humanity! What would I do witout zaar? Look in my cookbooks I guess :) This is modified from one in the "More With Less" cookbook. I used 5 medium egg whites because I have a lot of medium eggs. If you are using larger eggs, use 4 egg whites. Or you could use 2 whole eggs.

1/4 cup butter
1 tablespoon dark molasses
3/4 cup sugar
5 medium egg whites
2 teaspoons vanilla
1/2 cup dry milk
2 tablespoons dry milk
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup wheat germ
1/2 cup mini chocolate chip

Steps:

  • Preheat the oven to 350 degrees. Spray an 8x8 baking pan with cooking spray and set aside.
  • Melt the butter. Lightly beat the egg whites.
  • Mix the butter, the molasses, the sugar, the egg whites, and the vanilla together. Stir it together well.
  • Add all the milk powder, the baking powder, the salt, and the wheat germ. Stir until combined, but try to stir as little as possible.
  • Add the chocolate chips and stir just to blend.
  • Spread the batter into the prepared pan. Bake for 30 minutes.
  • Cool.
  • Cut into small pieces as this is very rich.

½ cup packed brown sugar
⅔ cup peanut butter
5 tablespoons corn syrup
½ cup applesauce
2 teaspoons vanilla extract
3 cups rolled oats
1 cup chocolate chips
½ cup miniature marshmallows
½ cup toasted oat cereal rings
⅔ cup wheat germ

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, stir together the brown sugar, peanut butter, corn syrup, applesauce, and vanilla. In a separate bowl, stir together the oats, chocolate chips, mini marshmallows, cereal rings and wheat germ. Stir the dry ingredients into the peanut butter mixture until evenly coated. Press lightly into the prepared pan.

3/4 cup lightly salted dry roasted peanuts, coarsely chopped
3/4 cup wheat germ
3/4 cup sunflower kernels
1/2 cup honey
1/4 cup packed brown sugar
3 tablespoons butter
1/3 cup creamy peanut butter
1/3 cup Nutella

Steps:

  • Preheat oven to 400°. In an ungreased 15x10x1-in. baking pan, combine oats, peanuts, wheat germ and sunflower kernels. Bake, stirring occasionally, until toasted, 8-12 minutes. Cool in pan on a wire rack., In a small saucepan, combine honey, brown sugar and butter. Cook and stir over medium heat until mixture comes to a boil; cook 2 minutes longer. A friend of mine gave me an energy bar from Harvest Bread Company. It tasted great, but it was also $2. I didn't want to pay that kind of money so I kept playing around with the ingredients until I came up with something similar.

1/2 cup honey
1/2 cup mini chocolate chip
1/4 cup puffed millet
1/2 cup wheat germ
1/2 cup Puffed Kashi
1 cup oatmeal
1 cup natural-style peanut butter
1 cup raisins or 1 cup craisins

Steps:

  • Mix everything but the raisins and chocolate chips together. Use a food processor if you can because it makes it a lot easier.
  • Then add in the chocolate chips and raisins.
  • Form into bars and refrigerate for about an hour allowing them to harden.
  • I suppose you could freeze them and eat as needed, but they never last that long around here.
  • You can also increase the honey if you want something a little sweeter. I try to cut back on my sugar as much as I can in my food.
