Number Of Ingredients 14

10 cloves garlic, peeled
2 cups white vinegar
6 teaspoons kosher salt
Several sprigs of fresh dill
1 teaspoon celery seed
1 teaspoon coriander seed
1 teaspoon mustard seed
1/2 teaspoon black peppercorns
1/2 teaspoon pink peppercorns (if you have 'em)
6 Kirby cucumbers, quartered lengthwise
6 young spring carrots, peeled and cut in half lengthwise
1 handful large scallion pieces or green beans
A few pieces of cauliflower to tuck wherever they'll fit
4 small hot red chiles or 2 jalapenos

Steps:

  • In a medium saucepan, bring 4 cups water to a boil, reduce the heat so the water simmers and add the garlic. Cook for 5 minutes. Add the vinegar and salt, raise the heat and bring to a boil, stirring until the salt dissolves. Remove from the heat.
  • In 2 clear 1-quart jars, place a few sprigs of dill. Divide the seeds and peppercorns between the jars. Using tongs, remove the garlic from the brine and place 5 cloves in each jar. Then pack the jars full of cucumbers, carrots, scallions or green beans, cauliflower and chiles. You want them to be tightly stuffed.
  • Bring the brine back to a boil, pour it over the vegetables to cover completely, let cool, then cover and refrigerate. The pickles will taste good in just a few hours, better after a couple of days. And they'll keep for about 3 months.

6 springs dill
1 garlic clove
3/4 cup water
3/4 cup vinegar

Steps:

  • After peeling and trimming the carrots to fit, pack them into a glass mason jar. I used a tall 750ml jar (which is about 25oz for my US friends, or you can divide them between two smaller jars).
  • I packed as many as I could (about 6) while still having room to add the whole clove of garlic and dill.
  • Add the rest of the ingredients into a saucepan and bring to a boil. Once the sugar and salt are dissolved, remove from heat and carefully pour into the jar.
  • Let cool to room temperature (about 30-40 minutes), put a lid on the jar and move to the refrigerator.

1/4 cup kosher salt
10 black peppercorns
10 coriander seeds
1 head of garlic, unpeeled, cut in half crosswise
3 quarts (about 2 pounds) small baby carrots, any stems trimmed to 1/2 inch
5 small fennel bulbs, trimmed, fronds reserved, sliced lengthwise inch thick
5 sprigs fresh dill
3 fresh New Mexico (Anaheim) chiles, sliced, seeds left intact

Steps:

  • In a small saucepan over high heat, bring 2 cups water to a boil. Remove from the heat and add the salt, peppercorns, coriander, and garlic. Let cool and then add the mixture to 2 quarts cold water.
  • Layer the carrots, fennel, dill, and chiles in a crock or a large glass jar. Pour the brine over the vegetables, covering them completely. Put a small plate on top so that it keeps everything submerged. Store in a cool (65° to 70°F is ideal), dark room for about a week, checking every day or so and skimming off any mold or foam that rises to the top. The pickles are done when they are pleasantly sour and tangy but still firm. Refrigerate for up to 3 weeks.

1 or 2 garlic cloves
2 dill weed heads (preferably flowered with seeds)
fresh raw carrots
4 cups water
1 cup distilled white vinegar
2 tbsp brown sugar
2 tbsp pickling salt
500 mL pickle jars with lids and seals

Steps:

  • Wash, peel, and cut the carrots into sliced spears. Peel garlic. Wash dill weed heads. Set aside.
  • Prepare your jars, lids and seals for canning. Bernardin has an excellent step-by-step Home Canning resource here.
  • Once your jars and lids are sterilized, place 1 - 2 garlic cloves and 2 dill weed heads into each jar.
  • Fill the jars with the carrot spears to 1 inch of the top, making sure to pack them in as tightly as you can.
  • In a saucepan boil together all of the brine ingredients.
  • Then using a small funnel, pour the brine over the carrot spears, filling the jar to about 1/2 inch from the top (1/2 inch headspace).
  • Put on the lids and seals, then process in a hot water bath for 1/2 hour.
  • Let marinate for at least a week, a few weeks is best.

1 cup white vinegar
1 cup water
1 tablespoon pickling salt
1 teaspoon dill seed

  • Bring a small pot of water to a boil in which to blanch the carrots.
  • Prepare 1 pint and a half jar, or 2 12-ounce jelly jars. Place lid(s) in a small pot of water and bring to the barest bubble to soften sealing compound.
  • Peel carrots and trim to fit jars. Cut into thin sticks.
  • When the water comes to a boil, drop in the carrots and cook for either 90 seconds if you plan on canning your pickles, or 3 minutes if you're making them as refrigerator pickles.

  • Wipe the rims and apply the lids and rings.
  • If you're canning the pickles, process them for 10 minutes in a boiling water bath.
  • When time is up, remove jar(s) from canner and let cool.
  • Sealed jars can be stored in a cool, dark place for up to one year. Refrigerator pickles should be placed in the fridge as soon as the jars are cool.
  • Let pickles rest in pickling liquid for at least 48 hours before eating.

  • Safe Home Pickling. This recipe is a project that I made to go with my Instructables Canning & Preserving Class. I will not be going over all the safety ins and outs of home canning and pickling in this instructable, so I highly recommend that you read through Lessons 1, 2 & 3 of my class before you give this recipe (or any other home pickling or canning) a go!
  • Tools & Equipment. Here's the equipment you'll need to make each style of dilly carrot: large pot. slotted spoon. colander. scale. deep canning pot w/ round rack.
  • Recipe. This recipe is a bit of a 'choose your own adventure'. I did both a canned jar and a refrigerator jar of dilly carrots so I could contrast and compare tastes and textures of each.
  • Prepping the Carrots. To prep the carrots for either or both preservation methods (fridge or canned), fill your large blanching pot halfway with water and set it to boil.
  • Packing the Jars. Now it's time to pack the carrot spears into their respective jars along with the de-skinned garlic cloves, dill, and spices.
  • Making the Brine. Now it's brine time! Bring the water, vinegar and kosher salt to a boil in a medium sauce pan. As soon as it boils, turn off the heat and move the pot to a cold burner to cool.
  • Setting Up the Canning Station. If you're giving the canned version a go, it's time to set up the canning station. Fill your canning pot that works with pint jars 3/4 full of water and set it to boil.
  • Filling the Jars. While the canning water is boiling, fill the refrigerator jar with brine*, completely covering the carrots. Use the ladle to push down on the carrots, making sure they're snug in place.

  • Hot water processing is the easiest step! Use the tongs to lower the jars into the boiling water of the hot water bath canner, then process accordingly. Processing time varies, by altitude. Here in Calgary, 25 minutes at a rolling boil is recommended.
