SHRIMP AND SAUSAGE CIOPPINO

Steps:
- In a Dutch oven or large saucepan, heat the oil over medium-high heat. Add the fennel, garlic, shallots, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, until the vegetables are slightly softened, about 4 minutes. Add the sausage and break into 1/2-inch pieces with a wooden spoon. Cook until brown, about 5 minutes. Add the wine and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Stir in the tomato paste, chicken broth, and bay leaf. Bring to a simmer, cover, and cook for 10 minutes.
- Uncover the pan and add the shrimp, beans, basil, and thyme. Simmer, uncovered, until the shrimp are pink and cooked through, about 4 minutes. Remove the bay leaf and discard. Season with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Ladle the cioppino into soup bowls and serve with crusty bread.
SPICY SHRIMP AND SAUSAGE STEW
Andouille sausage and shrimp are simmered in a tomato-based broth with a kick of cayenne.

- Heat the oil in a large Dutch oven over medium-high heat. Add the sausage and cook, stirring occasionally, until browned, about 5 minutes. Sprinkle the flour over the sausage and cook, stirring, until lightly toasted and the meat is well coated, about 2 minutes. Add the cayenne, garlic, bell peppers and onion and continue to cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the tomatoes with their juices, clam juice and 4 cups water, scraping up any browned bits from the bottom of the pot.
- Bring the stew to a simmer and continue to cook, adjusting the heat as needed to maintain a simmer, until the stew is thickened, about 30 minutes. Stir in the shrimp and cook until opaque, about 5 minutes. Remove from the heat and stir in the parsley. Season with salt.

- Sprinkle flour over bottom of heavy large pot. Stir flour constantly over medium-low heat until flour turns golden brown (do not allow to burn), about 15 minutes. Pour browned flour into bowl.
- Heat oil in same pot over medium heat. Add onion and bell pepper and sauté until tender, about 7 minutes. Add garlic, thyme and bay leaf; stir 1 minute. Add sausages and sauté until brown, breaking up with back of spoon, about 5 minutes, then add browned flour. Add tomatoes with juices, broth and Creole seasoning. Bring to boil. Reduce heat, cover and simmer 20 minutes to blend flavors, stirring frequently.
- Add shrimp and catfish to pot and simmer just until seafood is opaque in center, about 5 minutes. Discard bay leaf. Season with salt and pepper and serve.
FIESTA CHICKEN & SAUSAGE STEW
Hearty Supper meal, feeds those teenagers and hungry men too. I like to to make extra for leftovers.

Steps:
- Combine oregano, marjoram, mustard, salt, pepper & cayenne. Rub over chicken. Cover and refridgerate for 1 hours
- In large skillet, heat 1 Tbls of oil and brown the sausages, remove to a plate, add the other 1 Tlbs of oil and brown chicken, put into large casserole.
- Drain fat, cook garlic and carrots stirring for 7-9 mins, add peppers and cook for another 2 minutes
- Arrange veggies and sausage over the chicken.
- Add tomatoes to skillet and bring to a boil scraping up the bottom of pan pour over chicken, veggies and sausage.
- Bake uncovered for 30 mins at 400, basting often. Add zucchini, cover and bake, basting often for 15 - 30 mins or until chicken juice runs clear.
SHRIMP AND TURKEY SAUSAGE STIR-FRY
It was originally a "random stir-fry" because I simply used what I had in my refrigerator. I also experimented with Worcestershire sauce this time. It's not a traditional ingredient that we would use for stir-fry. I did love the outcome. The combination of onions, bell peppers, turkey sausage and shrimps makes this dish look colorful and go very well with rice. Plus, it is healthy!

- In a wok, heat grape seed oil over medium high.
- Stir-fry onion and ground black pepper until onion becomes transparent. Add turkey sausage and stir-fry for about 3 minutes.
- Stir in all bell peppers, Worcestershire sauce, shrimps and sea salt. Stir-fry until peppers turn soft and shrimps are cooked and turn red.
- Serve hot with rice.

SAUSAGE CACCIATORE WITH GRANDMA'S PEPPERS
Grab your rolls, toss your romaine and get ready for a completely wonderful Italian meal! We used the mock pepper recipe and were just blown away by the yummy results. Enjoy!

- 1. Prepare mock sauce & peppers if you do not have the canned peppers. The mock sauce isn't exactly the same, but will do in a pinch. NOTE: If preparing the mock sauce, you will omit the additional 14 oz. tomato puree. Place tomato puree, sauce, sugar, salt, cider vinegar, garlic & onion powder in saucepan. Bring to a simmer boil. Add cut up peppers and allow to cook for 10 minutes. Remove from heat, & cover until ready to use with sausage. (Covering will allow pepper flavoring to soak into sauce while preparing remainder of dish).
- 2. In a large skillet, add sausage, casings removed, and onions. Cook on low-medium heat until cooked through.
- 3. Add 2 pints of "Grandma Vinion's Canned peppers in Red Sauce" and tomato puree. If you are using mock sauce & peppers, add at this point. Add Italian seasoning. (photo is before adding tomato puree) Cover, simmer for 30-40 minutes, stirring occasionally.
- 4. In the meantime, prepare fettuccine- al dente, according to package directions. Drain & toss with a bit of EVOO to prevent sticking.
- 5. To serve, we serve fettuccine, then top with preferred amount of Sausage Cacciatore & top with Ramona cheese. Goes well with prepared fresh vegetables, broccoli, squash etc.
- 6. Can also serve up as a "Sausage Cacciatore Sloppy Joe" on fresh Italian Sausage rolls. My husband Loves this dish, and if we have any left overs, he takes the Sausage Sloppy Joe's for lunch.
SKILLET CHICKEN CACCIATORE
This is one of the easiest, quickest recipes I've found for chicken cacciatore. I don't remember where I got it, but it makes a great week-night meal served over noodles, with a salad on the side.

- In a large skillet, heat italian dressing. Add onion, bell pepper, and chicken. Mix well to combine, and cook over moderate heat for approximately 6 minutes, stirring occasionally.
- In a small bowl, combine italian seasoning, sugar, and undrained stewed tomatoes. Spoon this over the chicken evenly, and lower heat so chicken is just simmering. Simmer for about 12-14 minutes, stirring occasionally. When chicken is fork-tender, it is ready to be served over hot noodles.

This is the 2005 runner-up prize winning recipe from the aidells.com website. Aidells' chicken, turkey and pork sausages should be available in your local grocery store - any flavored sausage will work. I added more curry and cumin and cayenne - we like it spicy! This was a cinch to make and it was delicious!
