Steps:
- Cook onion and garlic in oil in a 3- to 4-quart heavy pot over moderate heat, stirring, until golden, about 8 minutes. Stir in remaining ingredients except pork, lavash, and coleslaw and simmer, covered, 10 minutes. Add pork and simmer, covered, turning occasionally, until tender, about 45 minutes.
- Transfer pork with tongs to a cutting board. Purée cooking liquid in a blender until smooth (use caution when blending hot liquids) and return to pot. When pork is cool enough to handle, shred lengthwise with your fingers or 2 forks and add to sauce. Simmer, stirring, just until pork is heated through.
- Divide shredded pork among pieces of lavash and top with some coleslaw, then wrap lavash around to form a cone.
LEFTOVER SHREDDED PORK WRAPS
I had some leftover BBQ shredded pork meat and wanted to make something other than the usual sandwich. A recipe on my shredded pork package gave me the idea to make a wrap. This is my version, based on the ingredients I had on hand. I was really happy with how this turned out. This would be equally good with shredded beef or chicken too. I served with with some black beans. All measurements are to taste.

- Toss together the oil and peppers, then cook in a non-stick frying pan for 3 mins until starting to brown. Add the sweetcorn, pork and cumin and stir well. Cook for 2 mins more until the pork and sweetcorn are heated through and starting to turn golden. Season well.

- Make the marinade by mixing the soy with the honey, brown sugar, spices and 1 tbsp water. Put the pork in a shallow bowl, pour the marinade over, turning to make sure the steaks are well coated, then leave to marinate for at least 30 mins.
- Mix the carrot with the lime juice and caster sugar. Brush a piece of foil with oil and line the grill pan. Grill the pork steaks (or griddle if you prefer) for 4 mins each side. Keep an eye on them in case the sugar in the marinade starts to blacken. When cooked, cut the pork into strips.
- Put the lettuce leaves out on a board and divide the pork between them. Add some carrot and cucumber, then fold in both ends of the lettuce leaf and roll up from one side to contain the filling. Serve with sweet chilli sauce, if you like.

- Egg Rolls:.
- 4 cups vegetable oil.
- 3 eggs.
- 3 tablespoons milk.
- 12 egg roll wrappers.
- For the pork: Preheat the oven to 300 degrees F.
- Season the pork with salt and pepper. Place in a braising pan and add the onion, vinegar, and BBQ sauce. Toss well. Braise for 3 hours, covered, until fork tender. Remove meat with a slotted spoon and "pull" with forks until shredded. Add braising liquid, to taste. Cool.
- For the egg rolls: In large saucepan, heat the vegetable oil to 350 degrees F. Add enough oil to keep the egg rolls from touching the bottom of the pan.
- In a shallow bowl, beat the eggs and milk together and set aside.
- With the corner of the wrappers facing you, place approximately 1/12th of the pulled pork on each wrapper. Place a dollop of coleslaw on top. Fold the corner over the filling, and then fold the outside corners in, making a roll a 4 to 5-inches wide. Roll firmly, being careful to not tear wrapper, and seal the final end with egg wash.
- Dredge the roll in egg wash, allow excess to drain off, and submerge the roll in the hot oil. Fry until golden brown. Drain on paper towels and cut on an angle, if desired.

- Cut the pork into three large portions and trim any excess fat.
- Combine the rest of the shredded pork ingredients together in a large bowl; add the pork and toss to combine; marinade pork for 3 hours, refrigerated.
- Remove meat from marinade and cook at 325°F for approximately 1 1/2 hours, or until the pork is very tender, brushing with marinade as needed.
- Remove, cool slightly and shred meat or slice into thin portions.
- For the crepes, combine the flour, salt, egg and sesame oil in a bowl, then Whisk in the milk.
- Stir in the ginger, garlic and scallion.
- In a non-stick pan, add a touch of vegetable oil; swirl around.
- Add just enough batter to spread around thinly; move rapidly as the crepe will start cooking quickly.
- When the outside edges start coming off the pan and are cooked, flip the crepe over and cook the other side for a few seconds (you dont want too much color on your crepes).
- Lay the crepes out to cool on a dry towel.
- Wrap warmed shredded pork around the sesame crepes and serve with chopped scallion, soy sauce and sesame seeds.

This is a quick easy meal for supper. I have added a tomato sliced and seeded and that was really good too. You can season the pork while sauteing but its not necessary. Of course the taste will vary depending on what barbecue sauce you use. I like this with thick and spicy barbecue sauce. Something different and kids like to wrap their own! I also have used chicken and it is equally just as good!

- Slice pork chops, bell pepper and onion into thin strips.
- Start browning the pork chops in a large skillet with 1 tbl oil for about 3 minutes over medium high heat, stirring often.

- Spoon 1/2 the shredded pork onto each tortilla; top each with 2 tablespoons barbeque sauce, 4 Cheddar cheese halves, 1/2 the onion rings, salt, and pepper.
