MERINGUE CRISP LAYER CAKE
A spectacular dinner party dessert to wow your guests!

- Preheat oven to 160C / 140C fan / Gas Mark 3. Line 2 x 9 inch loose bottomed cake tins with non-stick baking parchment.
- Whisk egg whites, using an electric hand whisk until stiff peaks form. Gradually whisk in the caster sugar, a tbsp at a time, until glossy and thick peaks are left, when the whisks are lifted out.
- Scatter Jordans Chocolate Country Crisp evenly over the base of the two tins, then divide the meringue mixture between the two, smoothing with a spoon. Bake for one hour until crisp. Remove from the oven and leave to cool in the tins.
- Meanwhile whip the cream and icing sugar together until thickened. Stir in half of the passionfruit juice. Chill until ready to assemble.
- To serve, place one meringue layer on a serving plate, held on with a blob of cream underneath. Spoon over the flavoured cream. Add second meringue layer and spoon over the papaya, kiwi and raspberries. Drizzle with remaining passionfruit juice.

- Heat the oven to 110C/ 100C fan/gas ¼.
- Line 2 baking sheets with non-stick liner or parchment paper (meringue can stick on greaseproof paper and foil).
- Tip 4 large egg whites into a large clean mixing bowl (not plastic). Beat them on medium speed with an electric hand whisk until the mixture resembles a fluffy cloud and stands up in stiff peaks when the blades are lifted.
- Now turn the speed up and start to add 115g caster sugar, a dessertspoonful at a time. Continue beating for 3-4 seconds between each addition. It's important to add the sugar slowly at this stage as it helps prevent the meringue from weeping later. However, don't over-beat. When ready, the mixture should be thick and glossy.
- Sift one third of the 115g icing sugar over the mixture, then gently fold it in with a big metal spoon or rubber spatula. Continue to sift and fold in the remaining icing sugar a third at a time. Again, don't over-mix. The mixture should now look smooth and billowy.
- Scoop up a heaped dessertspoonful of the mixture. Using another dessertspoon, ease it on to the baking sheet to make an oval shape. Or just drop them in rough rounds, if you prefer.
- Bake for 1 ½-1 ¾ hours in a fan oven, 1 ¼ hours in a conventional or gas oven, until the meringues sound crisp when tapped underneath and are a pale coffee colour.
- Leave to cool on the trays or a cooling rack. (The meringues will now keep in an airtight tin for up to 2 weeks, or frozen for a month.) Serve two meringues sandwiched together with a generous dollop of softly whipped double cream.

- In a large bowl, beat egg whites, cream of tartar, and salt until soft peaks form. Add vanilla, and slowly beat in sugar until very stiff and glossy. Spread mixture into a 9 inch pie plate to form a shell.
- Bake at 300 degrees F (150 degrees C) for 50 minutes. Turn oven off, and leave meringue in oven for 1 hour. Cool.

CRISPY BAKED MERINGUES
I saw this recipe on a recent episode of "French Food at Home" on Food Network Canada. These meringues are crispy on the outside and fluffy in the middle. Note that I've reduced the amount of icing sugar as the original version is just a little too sweet.

- Whip the egg whites and salt into peaks.
- Add the vanilla, and continue beating until the mixture forms stiff peaks.
- In a separate bowl, stir the cream of tartar into the regular sugar and whisk into the whites very gradually, a spoonful at a time, until the meringue is stiff and the sugar has dissolved.
- Sift together the icing sugar and cornstarch. Sift over the meringue and gently fold until fully incorporated.
- Pipe or spoon the meringues onto a parchment-lined baking sheet. Each meringue should be about the size of a bar of soap.
- Bake at 225ºF/110ºC until cream-coloured and crisp on top when tapped, 1 to 1-1/2 hours.
- Remove from the oven. Cool on the trays. Store in an air-tight container.

NEVER-EVER-FAIL MERINGUE
Some people find it hard to make a good meringue like some people find it hard to make a good pastry shell. I am enclosing this recipe for the ones who need to make it without too many problems encountered.

- Blend cornstarch and cold water in a saucepan. Add boiling water, and cook until thick and clear. Cool completely.
- Beat egg whites till foamy. Gradually beat in sugar, beating until stiff and glossy. Add salt and vanilla, and slowly beat in cold cornstarch mixture. Beat quickly for several minutes. Spread meringue on filled, cooled 9-inch pie.
- Bake pie at 350 degrees F (175 degrees C) for 10 minutes until tips of meringue begin to brown.

- Start with the custard for the filling, as it needs to be completely cold before you use it. Put the egg yolks, cornflour and 60g caster sugar in a medium heatproof bowl and beat using an electric mixer until pale and thickened.
- Put the seeds from the vanilla pod into a large saucepan with the 300ml milk and 200ml of the cream. Set over a low-medium heat until it starts to steam. Pour about half the hot milk into the bowl with the egg yolk mixture and whisk until combined, then pour everything back into the pan. Cook over a medium-high heat, stirring continuously, for 15 minutes or until the custard is thick enough to coat the back of a spoon. Strain into a bowl, then cover with cling film touching the surface. Leave to cool, then chill until cold.
- For the cake, heat the oven to 170°C/150°C fan/gas 3½. Put the butter and 300g of the sugar in a large mixing bowl, then beat using an electric mixer until pale and creamy. Mix in the 10 egg yolks one at a time, beating well after each addition. Sift in the flour and baking powder, then beat until combined. Finally, add the 120ml milk and beat until incorporated. Scrape the batter into the lined cake tin/roasting tin and spread out to an even layer using a spatula. Set aside.
- Make the meringue topping. In a large, very clean mixing bowl, whisk the 10 egg whites with a pinch of salt until they form soft peaks when the beaters are removed. Gradually whisk in the remaining 300g sugar to make a stiff, shiny meringue. Gently spread on top of the cake mix using a spatula, creating swirly peaks. Scatter over the flaked almonds.

- Line two baking sheets with parchment paper and trace two circles, 8-inches in diameter, on each piece of parchment paper, four circles altogether between the two pans.
- In the bowl of a standing mixer with the whisk attachment, beat the egg whites and lime juice on medium speed until frothy, about 3 to 4 minutes. Continue beating and start adding the granulated sugar slowly, about 2 tablespoons at a time, until completely combined and the mixture holds stiff peaks, about 2 to 3 more minutes. The meringue should appear white and glossy.
- Remove the bowl from the stand, sift the cornstarch into the meringue, and use a rubber spatula to gently fold and completely incorporate the cornstarch. Transfer the meringue to the prepared baking sheets, dividing evenly between the 4 8-inch measured circles. Use the spatula to spread it into even circles; you will be able to make some nice wavy shapes.
