Pimento Cheese 2 | Gluten-Free, Goat Cheese image

We make this decadent pimento cheese with Trader Joe's goat milk creamy cheese, goat milk cheddar cheese, mayo, pimentos and few simple ingredients.

4.5 oz Trader Joe's Goat's Milk Creamy Cheese
2 cups freshly grated goat milk cheddar ((8 oz package))
1/3 cup GF mayonnaise
2 tsp local organic wildflower honey
1 tsp organic red wine vinegar
4 oz jar of pimentos, (drained and chopped)
1/2 tsp organic onion powder
1/2 tsp organic garlic powder
Splash of GF hot sauce

Steps:

  • Put all the ingredients into a food processor. Hit pulse a few times. Scrape into a bowl.
  • Cover, refrigerate for a bit and then enjoy!

Number Of Ingredients 10

1 11-ounce log fresh goat cheese, softened
4 ounces smoked cheddar cheese, shredded (1 packed cup)
1/2 cup mayonnaise
1/4 cup drained jarred pimientos, coarsely chopped
2 scallions, white and green parts, thinly sliced
1 tablespoon sweet pickle relish
1 teaspoon onion powder
1 teaspoon Tabasco sauce
Salt and freshly ground pepper
Halved radishes and celery sticks, for serving

Steps:

  • In a medium bowl, using a wooden spoon, blend the goat cheese with the cheddar cheese, mayonnaise, pimientos, scallions, pickle relish, onion powder and Tabasco; season with salt and pepper.
  • Transfer the spread to a bowl and serve with radishes and celery.

Pimento Cheese Toasts image

This pimento cheese is a little different in that it is made with roasted peppers and spread on tiny toasts, then broiled to transform it into hot melted heaven. A combination of sharp orange and white cheddar works well. You can make the cheese spread up to 3 days ahead and have it covered and chilled in the fridge until ready to use. 10 ounces extra-sharp cheddar cheese, coarsely grated (4 cups)
1/8 teaspoon cayenne
3/4 cup mayonnaise
1/4 cup finely diced bottled roasted red pepper (rinse and pat dry first)
1 baguette

Steps:

  • Preheat broiler.
  • Stir together all ingredients, except baguette, plus 1/8 teaspoon pepper and salt to taste.
  • Slice baguette crosswise 1/3 inch thick and spread bread thickly with cheese mixture. Broil 5 to 6 inches from heat until cheese is bubbling and browned, about 2 minutes.
