CHERRY CHOCOLATE CHIP COOKIES

Fresh cherry cookies made with chocolate chunks!

Number Of Ingredients 11

1/2 cup of butter (1 stick) at room temperature
1/2 cup light brown sugar
1/2 cup granulated sugar
1 egg at room temperature
2 tsp vanilla extract
2 cups all purpose flour
1/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
3.5oz dark chocolate bar cut into small chunks
1/2 cup pitted and chopped fresh sweet cherries

Steps:

  • Add room temperature butter, brown sugar and granulated sugar to a large mixing bowl. Mix with a hand mixer or the paddle attachment of a stand mixer. Mix until smooth and fluffy.
  • Pour room temperature egg and vanilla extract into the bowl and mix again. Mix until a smooth mixture remains. Add flour, salt, baking soda, and baking powder to the mixing bowl and mix once more.
  • You should be left with a smooth, thick dough. Add chopped cherries and chocolate chunks to the bowl and mix in with a spatula. Pop the bowl into the fridge to chill for 20 minutes.
  • Preheat oven to 350F and line a baking sheet with parchment paper. Scoop out 2 tbsp of dough for each cookie and roll into a ball. Place on the baking sheet with space between each cookie.
  • Bake at 350F for 20-22 minutes. Remove from the oven and cook on a cooling rack and enjoy!

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 pound (2 sticks) unsalted butter, room temperature
3/4 cup packed light-brown sugar
3/4 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups oats
1 cup dried cherries
4 1/2 ounces bittersweet chocolate, coarsely chopped
1 cup toffee pieces

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a large bowl, sift together flour and baking soda.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and both sugars on medium speed until light and fluffy, 2 to 3 minutes, scraping down the sides of the bowl once or twice during mixing. Add the egg; mix on high speed to combine. Add the vanilla; mix to combine. Scrape down the sides of the bowl.
  • Add flour mixture to egg mixture, and mix on low speed until well combined. Add the oats, cherries, chocolate, and toffee pieces; mix to combine after each addition.
  • Spoon a heaping tablespoon of dough onto a lined baking sheet. Repeat, spacing 2 inches apart.
  • Bake cookies until golden brown, 14 to 16 minutes, rotating baking sheet halfway through. Transfer to a wire rack to cool. Store in an airtight container up to 2 days.

1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup natural cocoa powder (not Dutch-process)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chunks

Steps:

  • Beat the butter, granulated sugar and brown sugar in a bowl with a mixer on medium speed until fluffy. Add the egg and vanilla; beat.
  • Whisk the flour, cocoa powder, baking soda and salt in a bowl. Add to the butter mixture and beat until just combined. Stir in the chocolate chunks.
  • Preheat the oven to 350 degrees F. Scoop rounded tablespoons of dough and roll into balls. Arrange on parchment-lined baking sheets about 2 inches apart. Refrigerate 30 minutes, then bake until the cookies are golden on the bottom, 12 to 15 minutes. Cool on the baking sheets, 10 minutes, then transfer to racks to finish cooling.

1 teaspoon salt
1 teaspoon baking soda
1 stick butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup dry red wine, such as burgundy
10 ounces dark chocolate, broken into chunks
1 cup dried tart cherries

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, cocoa powder, salt and baking soda in a bowl. In a bowl of an electric mixer, or with a handheld mixer, combine butter and sugars until fluffy. Add egg, vanilla, and wine and combine. Slowly in batches add the flour mixture until just combined. Fold in the chocolate and cherries. On a nonstick cookie sheet, place a heaping tablespoon of dough for each cookie about 2 inches apart from each other. Bake 8 to 10 minutes, or until tops are still soft looking but edges look firm.

2-1/4 cups plus 2 Tbsp. all purpose flour
1 tsp baking soda
3/4 tsp salt
1 Tbsp water
1/2 cup dried sweet cherries
1 pkg (12 oz.) semi-sweet chocolate chunks
1 cup white chocolate chips

Steps:

  • Preheat oven to 350°F. Place parchment paper on top of two baking sheets. Set aside. With mixer on med speed, beat butter and sugars until creamy. Add eggs and vanilla, beat until blended. In bowl, combine flour, baking soda and salt. Gradually add to butter mix, beating well.
  • In microwaveable bowl, combine 1 Tbsp. water and dried cherries, microwave on high for 30 seconds, stirring once. Let stand 10 min. Add chocolate chunks to cookie mix, stir. Add cherries and white chocolate chips to mix, stir until well blended.
  • Drop by tablespoonfuls onto parchment paper on baking sheets.
  • Bake for 8-14 min, or until light brown. Remove to racks to cool.

2 ¼ cups unbleached all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
½ cup butter flavored shortening (such as Crisco®)
½ cup white sugar
¾ cup brown sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ½ teaspoons almond extract
1 cup dried tart cherries
¾ cup chopped walnuts
½ cup chopped pecans
1 (12 ounce) bag semi-sweet chocolate chunks (such as SACO®)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets. Whisk together the flour, baking soda, and salt; set aside.
  • Beat the unsalted butter, butter flavored shortening, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time; beat in the vanilla extract and almond extract with the last egg. Mix in the flour mixture until just incorporated. almonds (optional)

Steps:

  • Preheat oven to 350°F.
  • Mix flour, baking powder, and salt in a bowl set aside.
  • Cream your butter, then slowly add your sugar. Blend well.
