CORN AND CRAB CHOWDER

1 tablespoon vegetable oil or extra-virgin olive oil, 1 turn of the pan in a slow stream
2 tablespoons butter
2 all-purpose potatoes, peeled and diced
2 ribs celery, chopped
1 medium yellow onion, chopped
1 small red bell pepper, seeded and diced
1 bay leaf, fresh or dried
Salt and freshly ground black pepper
1 tablespoon Old Bay seasoning blend, found near seafood department or, on spice aisle in your market
3 tablespoons all-purpose flour
2 cups vegetable or chicken stock or broth
1 quart whole milk
3 cups corn kernels, scraped fresh from the cob, or frozen kernels
8 ounces cooked lump crab meat, fresh is available in plastic tubs at many fish counters
4 small bread boules, 6 inches, hollowed out, preferably sour dough, optional
Oyster crackers
Hot cayenne pepper sauce
Sliced scallions

Steps:

  • Heat a deep pot over moderate heat. Add oil and butter. As you chop your veggies, add them to the pot: potatoes, celery, onion, and red bell pepper. Add bay leaf to the pot. Season vegetables with salt and pepper and Old Bay seasoning. Saute veggies 5 minutes, then sprinkle in flour. Cook flour 2 minutes, stirring constantly. Stir in broth and combine. Stir in milk and combine. Bring soup up to a bubble. Add corn and crab meat and simmer soup 5 minutes. Adjust the soup seasonings. Remove bay leaf. Ladle soup into bread bowls or soup bowls and top with oyster crackers, hot sauce and sliced scallions.

1 medium onion, chopped
5 tablespoons butter
1/3 cup all-purpose flour
3-1/2 cups milk
4 bacon strips, cooked and crumbled
2 cans (6 ounces each) crabmeat, drained
2 medium potatoes, diced
1 small green peppeer, chopped
1 celery rib, chopped
1 can (8-1/4 ounces) whole kernel corn, drained
1 cup half-and-half cream
1 bay leaf
1 tablespoon chopped fresh parsley
1 teaspoon salt
1/4 to 1/2 teaspoon ground nutmeg
1/4 teaspoon white pepper

Steps:

  • In a large saucepan, saute onion in butter until tender. Add flour; cook and stir until thick and bubbly. Gradually add milk; cook and stir until thickened. Add remaining ingredients. Cover and simmer until vegetables are tender, about 35-40 minutes. Remove bay leaf before serving.

1 - 2 lb shrimp, peeled and deveined
1 1/2 stick plus 1 Tbsp butter, divided
1 1/2 large onion, diced
2 stalk(s) celery, diced
1 medium red pepper, diced
4 clove garlic, minced
2 large red potaoes, diced
4 Tbsp Old Bay seasoning, divided
1 tsp Season All, to taste
1 dash(es) garlic powder
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried basil
1/2 c all-purpose flour
32 oz chicken broth
1 1/2 - 2 qt half and half
1+ c milk, 2% (optional to thin chowder)
1 c heavy cream (optional to thin chowder)
2 c corn, frozen
1 can(s) chipotle pepper w/Adobo sauce (7 oz)
1/2 tsp salt and pepper, to taste
2-4 dash(es) Frank's hot sauce
1 lb backfin/lump crab meat (fresh preferably, not pasteurized)
dash(es) brandy (optional)

Steps:

  • 1. In a large skillet, saute shrimp with a little butter until they turn pink. This should take 5 minutes or less. Dice and set aside to add later.
  • 2. In a large soup pot or Dutch oven, melt 1 1/2 sticks of butter. Saute onions, celery, red bell pepper, garlic, and red potatoes.
  • 3. Add to the veggie mixture 1 Tbsp of Old Bay, 1 tsp of Season All, a dash of garlic powder, and 1/2 tsp each of oregano, thyme, and basil.
  • 4. Roux: Don't be intimidated, it's easy peasy. Sprinkle flour slowly over sauteed veggies while gently stirring (careful not to break up veggies). Stir from the bottom of the pan until all the flour is absorbed and bubbling.
  • 5. Add 32 oz. chicken broth slowly stirring.
  • 6. Once all the broth is added and there are no lumps of roux, allow this mixture to simmer about 15 minutes until the potatoes are mostly done. Stir this often from the bottom to avoid burning or sticking.
  • 7. Once potatoes are mostly done, slowly add half and half stirring as you add. Start with 1 1/2 quarts.
  • 8. Bring the chowder to a simmer. It will thicken as it simmers. The rest of the half and half can be added if it's too thick. NOTE: The optional milk and cream can be added if you want the chowder to be thinner like a soup. But remember, if adding additional milk/cream add additional seasoning. Don't be afraid to kick it up a notch.
  • 9. Once the chowder is to desired thickness, add 2 cups of frozen corn and chopped chipotles (seeds removed) with a couple of tablespoons of the Adobo sauce. Reduce heat to a very low simmer for approximately 10 minutes as it continues to thicken. Remember stir from the bottom to avoid sticking.
  • 10. Add additional Old Bay a tablespoon at a time. Be liberal with the Old Bay! Plus, salt and pepper to taste. Let simmer for a few minutes to see how you like the flavor.
  • 11. Add a few dashes of Frank's Hot Sauce.
  • 12. Gently mix in diced shrimp and crab meat trying not to break up the crab.
  • 13. Add an additional tablespoon of butter and let rest 5+ minutes with the lid on the pot. Remove from the burner. Serve immediately with/without a dash of brandy.

2 tablespoons unsalted butter
1 yellow onion, finely chopped
4 stalks celery, cut into 1/4-inch slices
1 tablespoon finely chopped fresh thyme
salt and ground black pepper to taste
7 potatoes, cut into 1/2-inch pieces
2 cups whole milk
1 (15 ounce) can fish broth
1 cup heavy whipping cream
1 (8 ounce) bottle clam juice
1 ½ pounds Dungeness crab meat, chopped

Steps:

  • Melt butter in a large pot over medium heat. Cook and stir onion, celery, thyme, salt, and pepper in hot butter until onion and celery start to soften, about 5 minutes. Stir potatoes, milk, broth, cream, and clam juice into onion mixture. Bring to a simmer; cook until potatoes are soft, about 10 minutes.
  • Pour broth mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to pot and stir in crabmeat. Cook until soup is hot and crab is heated through, about 5 minutes. Season with salt and pepper.

2 Tbsp olive oil
2 Tbsp unsalted butter
1/2 c flour
3 c chicken broth, low fat
5 clove garlic, minced
1/2 medium onion (diced)
1 c half and half (fat free)
1 tsp creole seasoning
1 tsp cayenne pepper
1 tsp old bay seasoning
2 c frozen corn (thawed)
1/2 red bell pepper (dice)
16 oz fresh lump crabmeat

Steps:

  • 1. Making the Roux Cook time about 3 - 5 minutes In a medium sauce pan, add olive oil and butter. Once the butter has melted and combined with the olive oil, sprinkle in the flour. Cook over gentle / low heat, stirring constantly with wood spoon, for about 2 minutes. (Your roux should be light yellow color, do not let it get dark.) Remove from heat and gradually stir in room temperature half & half, adding a little at a time and stirring constantly until the cream is incorporated before adding more. When all the milk has been added, return to the heat and cook, stirring until thick and smooth. Then add creole seasonings, cayenne pepper, and old bay seasoning. (See special note about making Roux's) (Set aside for next step).
  • 2. let's get down to the chowder In a 3 - 5 quart soup pot, add chicken broth, garlic and onions and let simmer for about 5 minutes. Then add your roux, blend all ingredients well. Now add corn and bell peppers. Season to taste with salt and pepper, let simmer for another 3 - 5 minutes.
  • 3. Add the crabmeat to that chowder ! Add crabmeat and be careful not to break up the lumps. Let simmer 3 -5 minutes then serve in soup bowls and garnish with fresh chives. For extra comfort - serve chowder with French bread, crackers or parmesan cheese toast. My Comfort Zone Chowder has crowd pleasing possibilities. Enjoy
  • 4. Special Note about Roux's Roux is a cooked mixture of flour and fat, traditionally clarified butter. It is the thickening agent of three of the mother sauces of classical French cooking: sauce béchamel, sauce velouté and sauce espagnole. Butter, vegetable oils, or lard are commonly used fats. It is used as a thickener for gravy, other sauces, soups and stews. It is typically made from equal parts of flour and fat by weight.

This is a quick and easy recipe! When I am short of time, I've found this to be a pretty good substitute for regular corn and crab chowder. Found this in "Starlight and Moonbeams" cookbook out of Hilton Head Island, SC.

1 garlic clove, minced
1/8 teaspoon ground red pepper
1 tablespoon butter, melted
2 (10 3/4 ounce) cans cream of potato soup, undiluted

1 (15 1/4 ounce) can corn, undrained
1 (8 ounce) package cream cheese, cubed and softened
1 (6 ounce) can crabmeat, drained

Steps:

  • Saute green onions, garlic, and red pepper in butter in a large saucepan over medium heat, stirring constantly, until tender.
  • Combine the soup and milk, stirring well. Add the soup mixture, corn and remaining ingredients to the saucepan. Reduce heat to medium-low; cook, stirring constantly, just until the cheese melts. Serve immediately.

1 onion, finely chopped
2 garlic cloves, finely chopped
2 celery ribs, finely chopped
1 small carrot, finely chopped
3/4 cup white wine (medium-dry)
2 1/4 cups vegetable stock
1 1/2 cups corn (fresh or frozen)
1 pinch cayenne pepper
1/2 teaspoon dried herbs
1 1/2 cups heavy cream
3/4 cup sour cream
1 tablespoon fresh dill, chopped
8 ounces crabmeat
salt
pepper
whole wheat bread, to serve

Steps:

  • Melt the butter in a large pan.
  • Add the onion, garlic, celery, and carrot and cook over low heat, stirring occasionally, for 5 minutes, or until softened.
  • Increase the heat to medium, pour in the wine, and cook for 2 minutes, until the alcohol has evaporated.
  • Pour in the vegetable stock and bring to a boil, then add the corn, cayenne, and mixed herbs.
  • Bring back to a boil, reduce the heat, and simmer for 15 minutes.
  • Add the heavy cream and simmer gently over very low heat for an additional 10 to 15 minutes. Do not let the soup boil.
  • Gradually add the sour cream, whisking continuously with a balloon whisk, then stir in the dill and crabmeat and season to taste with salt and pepper.
  • Heat gently for 3 to 4 minutes, then ladle into warmed bowls and serve immediately with bread rolls.
