15-Minute Fried Herbed Chicken image

This chicken takes so little time but tastes so good that it raises the bar for weeknight cooking. Chicken pieces are smothered in an herb and onion paste, dredged in flour and fried in the amount of time needed to make a salad. The amount of oil you need to crisp up the chicken is minimal, and the flavor is terrific.

2 to 3 cloves garlic
1 medium onion, roughly chopped
1 to 2 tablespoons mixed fresh herbs, like tarragon and sage
2 tablespoons tahini or peanut butter
1/4 cup olive oil, more for frying
Flour for dredging
6 boneless, skinless chicken thighs or 4 half-breasts
Chopped fresh parsley leaves for garnish
Lemon wedges for serving
Salt to taste

Steps:

  • In a blender or the container of a food processor, combine garlic, onion, herbs and tahini. As you purée the mixture, slowly add just enough olive oil through the feed tube to make a thick, smooth paste; do not let it get too thin.
  • Put flour in a shallow bowl. Place chicken in another bowl. Rub puréed mixture over chicken, then dredge each piece in flour. Gently shake off any excess flour, coat again with paste and dredge once more in flour.
  • Heat 1/4 inch olive oil in a skillet; when it is hot, fry chicken for about 4 minutes each side, until well browned and cooked through; it will take longer if you use chicken with the bone in. Garnish with parsley and serve hot or warm, with lemon wedges.

1 1/2 pounds boneless skinless chicken breast, cut into 1 1/2-inch-wide strips
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
1 cup all-purpose flour
1 cup Greek yogurt
2 teaspoons chipotle powder, optional
1 1/2 cups fine breadcrumbs
1 teaspoon garlic powder
1 teaspoon mustard powder
Nonstick cooking spray
1 cup creme fraiche or sour cream
1/2 cup mayonnaise
2 tablespoons fresh lemon juice
1/4 cup chopped fresh basil
1/4 cup fresh parsley leaves, chopped
2 tablespoons sliced fresh chives
1 teaspoon fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • For the chicken: Season the chicken breast strips with the salt and pepper. Sprinkle with the flour and toss to coat on all sides.
  • In a small baking dish, combine the Greek yogurt and chipotle powder if using. Whisk to combine. In a second small baking dish, combine the breadcrumbs, garlic powder and mustard powder. Coat each chicken strip in the yogurt mixture and then the breadcrumb mixture. Place the strips on a wire rack set over a rimmed baking sheet. Repeat until all the strips are completely coated in breadcrumbs. Spray the chicken strips with cooking spray and bake until golden and crunchy and the center is cooked through, 10 to 13 minutes.
  • While the chicken bakes, make the dip: Whisk together the creme fraiche, mayonnaise, lemon juice, basil, parsley, chives and thyme in a medium bowl. Season with salt and pepper and refrigerate until ready to serve.

I got this recipe from the Asian guy that works at a Chinese food restaurant, Yasuko Yao, he said it was supposed to be like Mushu chicken, but they wanted to make a breakfast out of it and this is what he got. Great snack or even appetizer for any occasion.

2 white boneless chicken breast halves
3 tablespoons honey
1/4 cup maple syrup
1 -1 1/2 cup pancake batter
1 tablespoon butter
2 cups vegetable oil (for frying)

Steps:

  • Put your tablespoon of butter in a skillet until skillet is coated.
  • Toss in your 2 chicken breasts until they're cooked to your liking.
  • Slice up the chicken breasts into strips, then cut each strip in half.
  • Prepare your pancake batter in a bowl as directed on it's box.
  • Dip each piece of chicken in the batter then fry in a pan of vegetable oil until golden brown.
  • Mix together the 3 tablespoons of honey and 1/4 cup of maple syrup in a small bowl.
  • Using a pair of tongs, dip each piece of chicken in the honey-syrup mixture until lightly coated.
  • Eat up.

10 ounces boneless, skinless chicken thighs, trimmed of fat and diced into 1/4-inch cubes
½ cup Italian-seasoned bread crumbs
¼ cup chopped onion
¼ cup shredded mozzarella cheese
1 egg
¼ cup mayonnaise
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
2 tablespoons vegetable oil

Steps:

  • Mix chicken, bread crumbs, onion, mozzarella cheese, egg, mayonnaise, salt, pepper, and garlic powder in a bowl until well combined. Shape mixture into 8 equal-sized patties.

butter
1 1/2 cups chopped cooked chicken
2/3 cup chopped cooked ham

milk
2 cups fresh breadcrumbs
oil (for frying)
1 cup corn (optional)

I got this recipe from one of my mom's church cookbooks. I always seem to find the best tasting recipe in church cookbooks! This recipe uses boneless chicken with a blend of spices to give it a wonderful taste. I usually make this with potatoes (prepared as fancy or simple as you like) and a vegetable. I also like to combine spices ahead of time. I've tried this by eliminating 1 or 2 spices when I was out and it still turns out wonderful.

8 boneless chicken breasts
1/2 cup butter or 1/2 cup margarine
2 tablespoons parmesan cheese
1 tablespoon parsley, dried

1/2 teaspoon sweet basil
