1 2-4 lb chuck roast
1 1/2 lb Red potatoes (quartered)
3/4 large white onion (quartered)
2 cups baby carrots
6 oz white mushrooms (sliced (can go up to 8 oz))
6 garlic cloves
2 tbsp olive oil
2 tsp kosher salt
1 tsp granulated sugar
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
4 cups beef or vegetable stock
1/2 cup marsala wine
2 roma tomatoes (diced)
1 carrot (chopped)
2 celery stalks (chopped)
1/4 large white onion (chopped)
2 garlic cloves
1/4 cup dijon mustard
4 tbsp butter
2 tbsp tomato paste
2 bay leaves
2 tsp granulated sugar
2 tsp Italian seasoning
1 tsp kosher salt
3 tbsp cornstarch (optional)

Steps:

  • Preheat oven to 325 degrees. Toss together the salt, garlic powder, onion powder, sugar, and black pepper. Pat the beef dry with paper towel and season the beef on all sides with the spice mixture.
  • Heat 1 tbsp olive oil in a large Dutch oven and sear the roast to form a mice crust. Remove the meat and add the last tablespoon of olive oil to the pot. Sear the other side until crusted. About 5 minutes per side. Remove from the pan and set aside on a rimmed dish.

3 -4 lbs chuck roast, trimmed
2 tablespoons vegetable oil
salt and pepper
1 cup carrot, chopped
1 cup onion, chopped
1 cup celery
4 garlic cloves, minced
2 cups chicken stock (or a combination) or 2 cups beef stock (or a combination)
2 tablespoons sugar
1 sprig thyme
1/4 cup dry red wine
water

Steps:

  • Pre heat oven to 300 degrees.
  • Season roast with salt and pepper on all sides.
  • In a large dutch oven heat oil, over a medium high heat, do not allow to smoke.
  • Brown meat on all sides in dutch oven, this should take about 10 minutes.
  • If at any time the oil starts to smoke remove from heat, lower the temperature and continue cooking.
  • Once browned remove meat from pot and place on a deep plate (to catch the juices).
  • Add vegetables to dutch oven, stirring often, cook until lightly browned and tender.
  • Add garlic and cook until fragrant, about 1 minute.
  • Add stock, bring to a boil and stir/scrape until all the brown bits are removed from the bottom of the pan.
  • Add red wine and sugar. Allow to boil until alcohol smell is gone, put thyme, meat and accumulated juices back in pan.
  • Add water until liquid comes halfway up sides of the meat.
  • Bring to a simmer, cover with a large piece of foil and the pan lid (to assure seal).
  • Place in oven, be sure to turn the meat over every 30 minutes or so.
  • Cook until fork tender, 2 1/2- 3 1/2 hours (meat needs to remain above 200 degrees F. for 30 minutes).
  • Remove meat from pan onto serving plate, cover with foil.
  • Place dutch oven back on stove; boil till liquid is reduced to 1 1/2 cups or so (about 15 mins).
  • Thicken if desired.

By cooking this roast in its own juices, rather than with canned stock or water, it is full of flavor and falls apart! It took years to perfect this recipe, my own creation, but well worth it. The butter adds a real creaminess to this dish, and the seasonings give it that extra kick!

3 -4 lbs boneless beef chuck roast
salt and pepper
2 -3 tablespoons olive oil
2 tablespoons butter
1 yellow onion, Quartered
3 -4 garlic cloves
red wine
1 beef bouillon cube
1 tablespoon dried parsley
1 tablespoon italian seasoning
2 cups carrots, chopped
2 cups yukon gold potatoes, chopped
2 tablespoons butter
2 tablespoons flour
2 -3 cups beef stock
salt and pepper

Steps:

  • Warm skillet with olive oil to medium high heat. Add butter until melted. Sprinkle roast with salt and pepper and brown on all sides. Remove from pan and set on plate.
  • Carmelize onions and garlic in the skillet then deglaze pan with red wine.
  • Put bouillon on bottom of crock pot, and pour stock from skillet on top, including onions and garlic. Place meat on top.
  • Sprinkle parsley and Italian seasoning over meat, toss in carrots and potatoes.
  • Cook for 1 hour on high then reduce to medium high for 3 to 5 hours.
  • Remove roast and veggies to serving platter.
  • Pan Gravy: In saucepan melt butter, then whisk in flour and cook until slightly browned.
  • Whisk in ladles filled with crock pot juices until desired thickness. Add salt and pepper if needed.
  • Spoon over roast and serve remaining gravy at table.

One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

4 lbs chuck roast, trimmed
2 teaspoons vegetable oil
1 tablespoon salt
1 tablespoon pepper
1 cup carrot, chopped (or unchopped baby carrots)
1 cup vidalia onion, rough slivers
1 cup celery, chopped
2 cups fresh mushrooms, cut in half if large
5 large yukon gold potatoes, peeled and 1-inch cubes
4 garlic cloves, minced
3 cups beef stock, divided
1 tablespoon thyme
1/4 cup red wine, dry

Steps:

  • Pre heat oven to 300 degrees.
  • Season roast with salt and pepper on all sides.
  • In a large dutch oven with lid off for now, heat the oil over a medium high heat, do not allow to smoke. Brown meat on all sides in dutch oven, this should take about 10 minutes.
  • If at any time the oil starts to smoke remove from heat, lower the temperature and continue cooking.
  • Once browned, add to the pot the beef stock, then add water so that all liquid covers 1/2 the roast, and sprinkle with 1/2 the thyme. Put lid on pot and place in middle rack of oven and slow-roast it for 1 hour.
  • After 1 hour, pull roast from oven and add veggies to the pot first, then add remaining ingredients, and more salt and pepper to taste. Cover pot with lid and place in oven. Roast in oven for another 45-60 minutes, or until potatoes done.
  • Remove meat from pot and onto serving plate, cover with foil.
  • Place dutch oven back on stove; boil till liquid is reduced to desired thickness (about 15 mins). Thicken if desired with corn starch.

1 chuck roast
1 teaspoon kosher salt
fresh ground pepper
3 tablespoons flour
2 tablespoons olive oil
2 cups low sodium beef broth
2 cups low sodium chicken broth
1 cup red wine
2 garlic cloves
1 (1 1/4 ounce) package onion soup mix
1 sweet onion
4 -6 carrots
3 -4 potatoes
horseradish sauce, if desired

Steps:

  • Assemble all ingredients except carrots, potatoes and horseradish. Be sure to use a good wine that you would drink.
  • Mince garlic and chop onion into quarters. Choose a pan that is large enough for roast to lie flat and that has a tight fitting lid.
  • Pat meat dry and lightly sprinkle with kosher salt and pepper. Rub flour into meat. (If using regular table salt, use even less.).
  • Sear in oil over medium-high heat until browned on all edges.
  • Add remaining ingredients except the carrots, potatoes and horseradish. If not enough liquid to cover roast, add water (or more wine).
  • Cover and bring to a boil, then reduce heat to low (more than simmer) and cook for 8 hours, or until the whole roast is falling apart.
  • The secret to tender pot roast is to cook it long enough, so if it's not tender yet, that means it's not done yet.
  • If you don't have enough liquid to cover the roast, you'll have to flip the roast over every hour or so.
  • Add carrots and potatoes the last hour. Peel them and chop to desired size.
  • Serve with horseradish sauce and au jus (broth from pan).

I had this delicious and super-tender pork roast at my friend's home. It didn't even require a knife to cut. I had to get this recipe. It's unbelievable! It was so tasty no one needed the gravy, but the recipe is included just in case you want it.

1 (2 1/2 lb) pork loin roast
1 small onion, thinly sliced
1 1/2 tablespoons italian seasoning
1/4 teaspoon crushed red pepper flakes
1 (14 1/2 ounce) can beef broth
1/8 teaspoon pepper
1 bay leaf
1 lb fresh baby carrots
8 small red potatoes, quartered
1 tablespoon water
4 teaspoons cornstarch

Steps:

  • Make 6 horizontal cuts down center of roast 3x3". Stuff each cut with a slice of onion, reserving remaining onion.
  • Place roast in ovenproof dutch oven. Sprinkle with seasonings. Pour broth around roast.
  • Place remaining onion slices, pepper, bay leaf, carrots, and potatoes around roast.
  • Cover bake at 325°F for 2 1/2 hours.
  • If desired, bring pan juices to boil; boil 10-12 minutes or till reduced to half. Discard bay leaf. In a small bowl combine water and cornstarch. Blend till smooth. Add pan juices. Cook, stirring till mix is bubbly and thick.

A friend of mine shared this recipe with me. My kids like this roast over any other recipe I've ever cooked. With this recipe you don't have to buy the most expensive roast to get the tenderness. So, I recommend just getting an inexpensive roast. You'll know why when you eat this. It is so tender and juicy. You'll need to cook this for 24 hours, so be patient.

1 (16 ounce) jar mild pepperoncini peppers, pepper rings (Do NOT drain the juice)

Steps:

  • Combine both ingredients in a crock pot 24 hours before you need to eat it.
  • Cook on low heat.
  • After cooking for 14 hours, use a fork and knife to chunk the roast into smaller pieces.
  • I do this 3 times before I serve it.
  • It will become shredded like roast beef sandwich meat.

  • Salt and pepper roast all over.
  • Place roast in roasting pan in a pre-heated oven at 450 for 15 minute.
