Steps:
- Spray a baking sheet with vegetable oil. Set aside. Separate the pita pockets into halves. Cut each half into 8 sections. Set aside.
- Combine egg whites and sesame oil in a glass or ceramic bowl. Brush the egg-white mixture on both sides of the pita. Sprinkle both sides with sesame seeds. Place on the baking sheet and bake until crisp, about 10 minutes. Store in a cookie tin.

- Preheat oven to 350º.
- Place the first 6 ingredients(through marjoram) in a food processor; pulse until corasely ground.
- Arrange 4 pita halves, rough sides up, on a baking sheet.
- Brush with 2 tablespoons oil.
- Spread 4 teaspoons pitachio mixture over each pita half.
- Bake at 350º for 16 minutes, or until lightly browned and crisp.
- Repeat with remaining pita halves.
- Cool.
- Break each half into 4 pieces.
- Serve alone or with your favorite dip.

I used to buy pita bread and have lots left over. So I would make these and serve them at weekend parties with dips, my Okinawan friends loved them!

Steps:
- Heat oven to 350 degrees.
- Cut each slice of pita bread into 6-8 triangles, depending on how big a piece you have. I usually got 6 triangles from 1 round.
- Place triangles on cookie sheet. Brush with olive oil. Sprinkle with salt and fresh cracked pepper to taste.
- Slip into oven for about 10 minutes or until golden brown and crispy, but not burned! I always have to watch them closely. I have burned many trays myself by becoming distracted.
- Put on plate/rack to cool. Repeat with remaining triangles till you have no more! When cool put in serving bowl or however you are gonna serve them. Enjoy!

- Preheat broiler.
- Split pitas horizontally into 2 rounds.
- Spread rough edges with margarine.
- Place on cookie sheet.
- In a small bowl, toss together oregano and Parmesan cheese.
- Sprinkle over margarine.
- Cut each bread into wedges.
- Broil about 5" from heating element until crisp, about 2 minutes.
- Watch carefully!
- VARIATIONS: experiment with other herbs of your choice such as chives and parsley; or, omit oregano and sprinkle with sesame seeds.
- Serve alone or with dips or pates.

Toss the crisps with the additional cumin and salt to taste and let them cool. The crisps keep in an airtight container for 1 week. Serve the crisps as a topping for vegetable or tossed green salad.

- Arrange oven racks in upper and lower thirds of oven and preheat to 350°F Line 2 large shallow baking sheets with foil.
- In small bowl, stir together vegetable oil, chili powder, cumin, and cayenne. Lay 1 pita round on cutting board. Brush both sides with oil mixture and sprinkle one side with 1/4 cup Cheddar.
- Cut into 6 triangles and place, cheese side up, on baking sheet. Repeat with 5 more pitas (3 pitas per sheet).
- Bake 6 minutes. Remove pans from oven, turn chips over with tongs, and bake until golden and crisp, about 3 to 4 minutes more. Transfer crisps to a rack and let cool.
- Repeat process with remaining pitas. Store airtight at room temperature up to one month.
