I found this recipe in an old Pillsbury cookbook. It is packed with whole grains for a healthy breakfast or anytime snack.

Steps:
- Heat oven to 400 degrees. Grease 12 muffin cups.
- In mixing bowl, combine all dry ingredients; mix well.
- In large bowl, combine all wet ingredients; blend well.
- Stir in dry ingredients, just until moistened. Stir in raisins.
- Spoon batter into prepared muffin cups, filling 2/3 full.
- Bake for 15-20 minutes or until toothpick inserted in center comes out clean.
- Immediately remove from pans.

- Sift together the flour, baking powder, salt, baking soda and cinnamon.

Cool for 5 minutes before removing from pan to a wire rack.

OATMEAL MUFFINS
Steps:
- Combine the oats and milk in a large bowl and let stand 30 minutes.
- Preheat the oven to 400 degrees F. Line 10 cups of a 12-cup muffin tin with paper liners
- In a separate medium bowl, whisk together the flour, baking powder, cinnamon, baking soda and salt.
- Stir the melted butter, eggs and brown sugar into the bowl of oats and milk until well combined. Stir the flour mixture into the oat mixture until well combined. Fold in the white chocolate chips and dried apricots.
- Using an ice-cream scoop or 2 large tablespoons, divide the batter among the 10 lined muffin tins. Bake until a toothpick inserted into the center of a muffin comes out with some crumbs sticking to it, about 20 minutes. Let the muffins cool 5 minutes in the tins before removing them to a wire rack to cool completely.

- In a medium bowl, combine rolled oats and milk. Set aside to soak.

- Combine buttermilk, rolled oats, and raisins in a bowl. Cover and refrigerate 8 hours to overnight.
- Preheat the oven to 400 degrees F (200 degrees C). Liberally grease a 12-cup muffin tin.

- Soak the raisins for 15 minutes in the rum before mixing into batter. This will plump, refresh and add extra flavor to your raisins. Set aside.

- Lightly grease 1/2 cup muffin tin or use paper liners.
