RIDICULOUSLY HEALTHY BANANA OATMEAL COOKIES

In a bid to add to my seemingly-naughty-but-actually-very-healthy recipe collection, I invented these ridiculously healthy banana oatmeal cookies! They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

3 ripe bananas
2 cups oats (not instant, the proper scotts type)
1/2 cup skim milk
1 egg
2 tablespoons Splenda sugar substitute
1/2 teaspoon vanilla extract
1 tablespoon low-fat peanut butter (optional)

Steps:

  • Preheat the oven to 180c.
  • Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). These measurements make the mixture just the right consistency for my liking, but if it looks a bit runny to you at this point, throw in another handful of oats to thicken it up.
  • Grease a cookie tray with 1 cal spray and spoon the mixture on to make around 9 large cookies.
  • Bake for around 20mins until golden brown.

Very nice texture, chewy, not too sweet!! Full of fiber, Omega 3's, lignans, and potassium. Very yummy and so very good for you. My daughter loves these. These are very good made with natural sugar as well ( I use natural sugar for my daughter). 1/2 to 1 cup, depending on how sweet you like it.

1/2 cup butter (1 stick)
3/4 cup Splenda brown sugar blend
2 eggs
1 1/2 cups flax seed meal
1 1/2 teaspoons vanilla extract
1 1/2 cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon clove
3 medium bananas, ripe and mashed
2 cups rolled oats (pulsed in processor or quick oats)
1/2 cup walnuts, chopped

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy.
  • Mix in flax meal.
  • Beat in eggs and vanilla.
  • Combine the flour, baking soda, salt, cinnamon, nutmeg and cloves; add to creamed mixture and mix well. Stir in bananas, and oats ( I like to process thick oats in the food processor for just a minute, it makes a nicer texture). I prefer not to use quick cooking oats.
  • Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 375° for 10-12 minutes. Immediately remove cookies to wire racks to cool.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment paper.
  • Mix bananas, oats, oat cereal, chocolate chips, cranberries, and coconut in a bowl, adding more oats or cereal as needed to make a soft dough. Roll into 12 equal balls. Arrange balls on the prepared cookie sheet and gently flatten.
