SESAME ASPARAGUS..DIFFERENT AND DELISH!
I just love asparagus, but we were getting bored roasting them on the grill, but I just didn't want to steam them either, so I came up with this twist, one that I have used on my recipe #139885 Sesame Broccoli. Steps:
- Prepare asparagus by snapping off tough ends and peeling if stalks are very thick.
- Place asparagus in large sauté pan of boiling salted water and let blanch for 3-5 minutes, until tender, but not soft.
- Drain asparagus and put back in sauté pan and toss with sesame oil and soy sauce, over medium heat for 3 minutes, or until warm.
- salt and pepper to taste.
- Sprinkle asparagus with toasted sesame seeds prior to serving.

SESAME GRILLED ASPARAGUS
Steps:
- In a shallow pan, soak skewers in cold water for 1 hour, then drain and set aside.
- Preheat grill to high. Snap off the woody bases of the asparagus and discard. Skewer 4 or 5 asparagus spears together, using the toothpicks or 2 bamboo skewers, forming a raft shape.
- In a small bowl, combine the sesame oil, soy sauce, and garlic and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and lots of pepper.
- When ready to cook, place the asparagus rafts on the hot grate and grill until nicely browned on both sides, 2 to 4 minutes. Sprinkle with the sesame seeds as they grill. You can serve the asparagus as rafts or unskewered.

- Cook asparagus in large pot of boiling salted water until crisp-tender, about 3 minutes. Drain. Rinse asparagus under cold water. Drain well. (Can be made 1 day ahead. Wrap in paper towels and chill.)
- Heat vegetable oil in large nonstick skillet over medium-high heat. Add bell pepper and stir 1 minute. Add asparagus and sauté until heated through, about 2 minutes. Add soy sauce and sesame oil; toss until asparagus and bell pepper are coated, about 1 minute. Transfer to platter. Sprinkle with sesame seeds.

- Place the asparagus in a large pot filled with water 1 inch deep. Bring to a boil, and cook until tender, but still bright green. This will take about 5 minutes, or longer if your asparagus spears are thick. Drain and place on a serving dish.
- Meanwhile, melt the margarine or butter in a skillet over medium heat. Stir in the sesame seeds, and cook, stirring frequently, until they are golden brown and toasted, about 2 minutes. Stir in the lemon juice and parsley; season to taste with salt and pepper.

- Snap off the tough ends of the asparagus. Remove scales from stalks with a vegetable peeler, if desired.
- Cut asparagus diagonally into 1-inch pieces.
- Cook asparagus in boiling salted water to cover for 6 to 8 minutes or until crisp tender, drain. Run under cold water to stop the cooking process.
- Cook the green onions in butter in a skillet over medium heat 1 minute, stirring constantly.

Steps:
- Cook asparagus in a pot of boiling salted water until almost crisp tender.
- If serving chilled, cook until crisp tender.
- Drain.
- Place in a bowl of ice water to stop the cooking process.
- Drain, pat dry, cover and refrigerate until ready to use.
- Combine sesame oil and butter in a large skillet over medium heat.
- Add asparagus.
- Saute about 2 minutes until crisp tender.
- Mix lemon juice with soy sauce.
- If serving cold, mix 2 T olive oil, sesame oil, lemon juice and soy sauce.
- Do not cook further.
- Toss with asparagus to coat.
- Transfer to a serving plate and sprinkle with toasted sesame seeds.

- Trim any tough ends from the asparagus stalks. Cut into 1 inch pieces on the diagonal.
- Heat butter in a skillet and cook the asparagus about 1 minutes, tossing and shaking to cook evenly. Sprinkle with sugar and cook, while tossing, about 30 seconds more. Sprinkle with soy sauce and continue cooking another 30 seconds being careful not to overcook.
