COTTAGE CHEESE COOKIES
These are my favorite cookie next to chocolate chip. This is the only crisp cookie I like. They are so buttery and taste wonderful with a cup of coffee. You do not taste the cottage cheese at all, so if you hate cottage cheese, you'll never taste it.

CRISPY RICE DROP COOKIES
This is a wonderful cookie that has been a family favorite. The puffed rice cereal added into the cookie makes it very crispy and just delightful. Puffed brown rice works well for this If the cookie batter is a bit dry, just add two tablespoons extra milk or water.

SPICY CHEESE "COOKIES"
These are SO good and SO easy, I don't know why I don't make them more often. These are savory, NOT sweet, but the method is more like making cookies than anything else, hence the name...

Steps:
- Preheat oven to 350°.
- Cream together butter/margarine and the grated cheese.
- Add flour and cayenne; mix until thoroughly blended.
- Roll into marble-sized balls and place on ungreased cookie sheet. These barely spread at all, so fairly close spacing is OK.

- Bake 15 - 17 minutes.
- Cool completely before eating!
CAROLYN'S SPICY CHEESE COOKIES
My mom used to make these for the holidays. They go well with cocktails or anytime you want a savory crisp cookie. The puffed rice cereal give these cookies their crunch. Adjust the cayenne pepper to your liking. Wash those hands thoroughly, because the dough is mixed by hand! Have fun!
