- Cook macaroni according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk, bouillon and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 1 cup cheddar cheese, ham, Parmesan cheese and macaroni., Transfer to a greased 2-qt. baking dish. Sprinkle with remaining cheddar cheese. Bake, uncovered, at 350° until bubbly, 20-25 minutes. Let stand for 5 minutes before serving.

- Heat oven to 350ºF.
- Prepare Dinners in large saucepan as directed on package. Meanwhile, heat oil in medium skillet on medium heat. Add ham, onions, peppers and garlic; cook 5 min., stirring frequently.
- Add ham mixture to Dinners with eggs and chopped cheese; mix lightly. Mix cracker crumbs and parsley; stir half into Dinner mixture. Spoon into 2-qt. casserole sprayed with cooking spray; top with remaining crumb mixture.
- Bake 35 min. or until center is set and casserole is heated through.

- Cook macaroni according to package directions for al dente; drain. Transfer to a greased 5-qt. slow cooker., Melt 2 tablespoons butter in a large skillet over medium-high heat. Add jalapenos; cook and stir until crisp-tender, about 5 minutes. Add to slow cooker. Stir in the cheeses, milk, soups, mayonnaise and pepper., Cook, covered, on low for 3 hours or until cheese is melted and mixture is heated through. Melt remaining butter; stir in crackers. - Heat broiler. In a large straight-sided, oven-safe skillet, melt butter. Remove 1 tablespoon butter and combine with breadcrumbs and Parmesan.
- Add jalapenos and scallions to skillet and cook until softened. Whisk in flour and cook, stirring, 1 minute. Very gradually whisk in milk and bring to a simmer. Add macaroni and cook, stirring constantly and scraping bottom of pan, until tender, about 6 minutes. Remove from heat, stir in remaining cheese and the corn, and season with salt and pepper. Top with breadcrumb mixture and broil until golden brown, 1 to 2 minutes.

JALAPENO HONEY GLAZED HAM

- For the ham: Preheat the oven to 325 degrees F and adjust the oven rack to the lowest level.
- Using a sharp paring knife or box cutter, score the entire fat layer of the ham with deep cuts (being careful to not cut into the meat) in a 1/2-inch-wide diamond pattern.
- Place the ham cut side-down in a roasting pan fitted with a rack and add water to the bottom of the roasting pan about 1/2 inch deep. Cover loosely with foil and bake for 45 minutes.
- Meanwhile, make the glaze: In a small saucepan over medium heat, stir together the honey, jam, mustard, vinegar, garlic, jalapeno, orange zest and juice and pepper to taste until combined. Bring to a gentle simmer over medium heat. Cook, stirring often, until the glaze is slightly thickened, 3 to 5 minutes. Remove from the heat and set aside.
- Remove the foil from the ham and spoon the pan drippings over the top; then generously brush the glaze all over. Continue baking the ham, uncovered, and repeat the basting with juices and brushing with glaze every 20 minutes until the glaze is deep golden brown and caramelized or until the internal temperature reaches 130 degrees F, 10 to 12 minutes per pound, about 1 hour more.
- Loosely cover the ham with foil and let rest 15 minutes before slicing. Serve warm or at room temperature as a main course, or prepare a sandwich bar.
- For the ham sandwich bar: Arrange all the ingredients on the table or counter. I like to assemble my sandwich like this: Put cheese and then a couple of slices of ham on a bun bottom. On the bun top, dollop mustard and mayo, then top with cornichons and Pickled Red Onions. Close up the sandwich.
- To a saucepan, add the vinegar, sugar, salt, bay leaf, red pepper flakes to taste and 1/2 cup water and bring to a boil. Put the onions in a heatproof container and pour the boiling pickling liquid over them. Let the onions sit for 30 minutes to let cool. Cover and refrigerate until ready to use.

- Cook macaroni. Drain.
- In large saucepan, melt 1/4 cup butter.
- Blend in flour, brown sugar, mustard, salt, and pepper.
- Add milk all at once.
- Cook and stir until thickened and bubbly.

- Turn into a 2-quart casserole dish.
- Combine bread crumbs and melted butter.

JALAPEñO MACARONI AND CHEESE
This is a version of Jimmy Buffet's Macaroni that they serve at Margaritaville. Made this last night along with bbq ribs. Was a big hit. I made it as the recipe states as this was my first try. I think I will cut down the juice and up the cajun seasoning next time. It is a good and spicy macaroni and cheese. So if your looking for traditional, this is not it. If your looking for a macaroni and cheese to spice up dinner try it!

- In a saucepan melt butter.
- Add cream cheese and mix until blended.
- Add heavy cream and whisk.
- Add jalapeño juice and whisk.
- Mix in cheddar, stirring until cheddar is completely melted.
- Add salt, Cajun seasoning and flour. Whick until all ingredients are completely incorporated.
- Stir in jalapenos.
- Spray loaf pan with pan coating.
- Layer bottom of pan with cooked macaroni. Cover with cheddar mixture. Add another layer of pasta and cheddar mixture. Dust top with bread crumbs.
- Cover and bake at 350 degrees for 30 minutes.

A nice creamy comfort dish. I like it best on a cold winter's night with a good tequila lime chicken dish, but I'm sure you could have it anytime and it would be just as tasty! You may want to add some salt to this recipe. I leave it out because my doc wants me to stay away from excess sodium.

- Saute minced jalapenos, garlic,& onion until tender.
- Add flour,pepper, cumin, and cayenne and stir mixture for two minutes.
