1/2 cup green olives, chopped
1 teaspoon lemon zest
1 dash salt & pepper
1 tablespoon olive oil
2 large tilapia fillets
1/3 cup mayonnaise
1/4 cup parmesan cheese

Steps:

  • Thinly slice the tomato.
  • Lay the tomato across the bottom of a 9x13.
  • Scatter the green olives and lemon zest over the tomatoes.
  • Season with salt and pepper and drizzle over the olive oil.
  • Combine the mayonnaise and parmesan.
  • Lay the fish over the tomato and spread with the mayo/parmesan.
  • Bake at 375 until the fish is opaque and topping is golden in spots, approximately 20 minutes.

I found this recipe on the back of a Market Pantry tilapia package, and fell in love. This is a great recipe for a delicious, spicy and crunchy quick meal. Note: add more pepper to make spicier, but consider using frosted corn flakes to help counteract the zing!

2 cups corn flakes, crushed
4 tablespoons shredded parmesan cheese
1/2-3/4 teaspoon cayenne pepper
2 tablespoons milk
1 egg

Steps:

  • Heat oven to 400 degrees
  • Spray baking pan with nonstick cooking spray.
  • Toss together cornflakes, parmesan cheese and cayenne pepper in a shallow bowl or pie plate.
  • Whisk together egg and milk in a second shallow bowl or pie plate.
  • Dip each fillet in egg mixture; then coat with cornflake mixture.
  • Salt and pepper to taste.
  • Bake 12 to 14 minutes or until fish flakes easily with fork.
  • Serve fish with tarter or cocktail sauce and top with more parmesan cheese, if desired.

This is a fabulous recipe for oven fried tilapia slightly adapted from Paul Prudhomme's wonderful "Fork In The Road" lower fat cookbook. I served this for dinner with family and it got rave reviews. Even my picky 5 year old eater enjoyed it. The ingredient list here is long, but is mostly spices. Please don't be put off, this is wonderful stuff and once you get the spice mixture combined, quite easy to make.

1 teaspoon salt
3/4 teaspoon paprika
3/4 teaspoon onion powder
3/4 teaspoon dry mustard

4 (4 ounce) tilapia fillets
1/2 cup breadcrumbs

  • In a small bowl combine the spices from the salt through the Italian seasoning and set it aside.
  • In a shallow container mix the bread crumbs, dried parsley, and green onions.

  • Add the remaining spice mix to the bread crumbs, mixing well. Add the olive oil to the bread crumb mix, blending it in with your hands.
  • Dredge the fish in the breadcrumbs, coating well.
  • Shake off any excess breadcrumbs.
  • Place the fish on a baking pan that has been sprayed with non-stick spray.
  • Bake for 6 minutes.
  • Turn over and bake for 4 minutes.

  • After a recent review, I realized that I use ruby red grapefruits for everything, but it reminded me that not everyone has ruby reds. And for me, I love grapefruit but for those who don't, the option of adding a teaspoon of honey to the juice, butter and dill will give a bit of sweetness to the dish. I did that once for some friends who were a bit more "less" of a grapefruit fan.
  • Fish -- Spray a parchment lined or foil lined pan with pam. Then add your fish fillets and brush well with the grapefruit butter. Cook on the middle rack 400 degrees for 12-15 minutes. I baste with the butter 2 times during the baking process.
  • That's it. Easy simple and big flavor. You can serve a little dollop on top right at the end of cooking if you want along with the baked grapefruit slice.

After thinking and thinking about what to do with Tilapia filets I decided I was going to use the "same" recipe G-Pa used for his empanadas. I twisted it a little but boy did these came out great! You can either place the crackers in the blender (for more smoothnes) or you can place them in a plastic bag and just crush (I prefer this one, I hate to pull out the blender just for crackers!). I might be a little off on the measurements for the seasonings (I apologize) but I will say just go "by taste".

2 tablespoons adobo seasoning

1/4 cup celery, chopped
1/4 cup onion, chopped
1/4 cup sweet red pepper, chopped
3 tablespoons butter
3 tablespoons flour
salt and pepper
1 teaspoon fresh tarragon
1 teaspoon fresh basil
1/4 cup milk
1 cup mozzarella cheese, shredded

Steps:

  • Saute the celery, onions and bell pepper in butter until the vegetables soften.
  • Add flour, salt, pepper, tarragon, basil, and milk, stirring until blended.
  • Cook sauce until it thickens, stirring constantly.
  • Lower the heat and add cheese, stirring until the cheese just melts. Do NOT boil the cheese or it will get stringy.
