This is quite a refreshing dessert. Serve plain, or with whipped cream or ice cream.

1 recipe pastry for a 9 inch double crust pie
½ cup white sugar
3 tablespoons all-purpose flour
¼ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon lemon zest
5 cups peeled and sliced pears
1 tablespoon butter
1 tablespoon lemon juice

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place a baking sheet on the bottom oven rack.
  • Combine sugar, flour, salt, cinnamon, and lemon zest in mixing bowl. Roll out half the pastry and line a 9-inch pie pan.
  • Arrange pear slices in layers in the pastry-lined pan, sprinkling the sugar mixture over each layer. Dot with butter and sprinkle with lemon juice.
  • Roll out remaining dough for the top crust. Use your finger dipped in a small bowl of water to moisten the rim of the bottom crust. Place top crust over filling, and trim edge using kitchen shears or a sharp paring knife. Fold edge under bottom crust, pressing to seal. Flute edge. Cut slits in top crust to allow steam to escape.
  • Bake in the preheated oven on the baking sheet for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake until crust is golden brown and filling is bubbly, 35 to 40 minutes longer. Allow to cool several hours before serving.

⅓ cup white sugar
2 tablespoons all-purpose flour
4 cups peeled and sliced pears
1 cup sour cream
½ teaspoon vanilla extract
½ teaspoon lemon extract
½ teaspoon almond extract
1 (9 inch) unbaked pie shell
¼ cup all-purpose flour
2 tablespoons brown sugar
2 tablespoons butter or margarine, melted

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, stir together the white sugar and 2 tablespoons flour. Add pears, and toss to coat. Stir in the sour cream and vanilla, lemon and almond extracts until the pears are evenly coated. Pour into the unbaked pie shell.
  • In a small bowl, mix together 1/4 cup flour and brown sugar. Mix in the butter with your fingers until the mixture is crumbly. Sprinkle evenly over the top of the pie.
  • Bake for 10 minutes in the preheated oven, then reduce the temperature to 350 degrees F (175 degrees C). Bake for an additional 45 minutes, or until pears are tender.

2 cups all-purpose flour
1 teaspoon salt
3/4 cup shortening
6 tablespoons cold water
FILLING:
5 cups sliced peeled fresh pears
1 tablespoon lemon juice
1/3 cup all-purpose flour
1/2 cup plus 1 tablespoon sugar, divided
1 teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap and refrigerate 1 hour or overnight., Preheat oven to 425°. In a large bowl, toss pears with lemon juice. In a small bowl, mix flour, 1/2 cup sugar and cinnamon; add to pear mixture and toss to coat., On a lightly floured surface, roll half of dough into an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust even with rim. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edges. Cut slits in top. A scrumptious Caramel Pear Pie made completely from scratch, perfect on a hot day with a scoop of vanilla ice cream.

2½ cup all-purpose flour
1 cup butter (unsalted, cold and cubed)
1 teaspoon salt
1 teaspoon sugar
6 to 8 tablespoon ice cold water
12 pears (peeled, cored, and sliced)
juice from one lime
½ cup butter
3 tablespoon flour
½ cup white sugar
½ cup brown sugar
¼ cup water
½ teaspoon cinnamon
1 egg white (for brushing over the crust)

Steps:

  • Place the butter in freezer for 20 minutes.
  • In a food processor add the flour, salt and sugar and pulse a couple times.
  • Add the butter to the food processor and pulse a few times until the mixture resembles peas. Add the ice water one tablespoon at a time and continue pulsing. The dough should start to hold together.
  • Remove dough from food processor and place it over your working surface. Form the dough into 2 discs, cover in plastic wrap and refrigerate for at least one hour up to 2 days before using.
  • Peel, core and slice the pears and toss with the lime juice.
  • In a sauce pan, add the 1/2 cup of butter and melt over medium heat. Add the flour and mix until the mixture turns into a thick paste. Add water, white sugar, brown sugar and cinnamon and continue stirring. Let it simmer for a couple minutes.
  • Preheat oven to 425 F degrees.
  • Take out the pastry discs from the fridge and roll out a disc so that it's 12 inches in diameter and place it and arrange in your pie dish. Brush the pie crust with egg white so that it doesn't get soggy.
  • Add the pears to the pie dish and pour the caramel sauce over the pears, you don't have to pour it all if you think it's too much sauce. Roll out the other disc so that it's 12 inches in diameter as well and cut it into lattice strips. Arrange the lattice strips nicely over the pears and brush with remaining egg white.
  • Bake for 45 minutes or until golden brown.
  • Let it cool before serving.

3/4 cup sugar
1 dash salt
1 tablespoon cornstarch
1 teaspoon grated fresh lemon rind

1/4 teaspoon cinnamon
1/4 teaspoon mace
1/2 teaspoon ginger
1/2 cup flour
1/4 cup butter or 1/4 cup margarine, softened
1 (9 inch) unbaked pie shells

Steps:

  • Fill pie shell with sliced pears.
  • Mix together 1/4 cup of the sugar,the salt, cornstarch, lemon rind, and lemon juice and spread over the pears.
  • Mix together remaining sugar, spices and flour and add to butter.
  • Stir with a fork until crumbly and sprinkle over pears.
  • Bake at 450F for 15 minutes, reducing to 350F to bake about 30 minutes more.

LATTICE-CRUST PEAR PIE

2 1/2 lb firm-ripe Bartlett or Anjou pears, peeled, each cut into 8 wedges, and cored
1 tablespoon fresh lemon juice
Pastry dough
1 tablespoon milk

Steps:

  • Put oven rack in middle position and preheat oven to 425°F.
  • Whisk together flour, nutmeg, salt, and 2/3 cup sugar. Gently toss with pears and lemon juice.
  • Roll out 1 piece of dough (keep remaining piece chilled) on a lightly floured surface with a lightly floured rolling pin into a 13-inch round, then fit into a 9 1/2-inch glass or metal pie plate. Trim edge, leaving a 1/2-inch overhang. Chill shell while rolling out dough for top crust. Roll out remaining piece of dough on lightly floured surface with lightly floured rolling pin into a roughly 16- by 11-inch rectangle. Cut crosswise into 12 (1-inch-wide) strips with a pastry wheel or a sharp knife. Spoon filling into shell. Weave a lattice pattern over pie with pastry strips. Trim edges of all strips close to edge of pie plate. Fold bottom crust up over edges of lattice and crimp edge. Brush lattice (but not edge) with milk and sprinkle lattice with remaining tablespoon sugar.
  • Bake pie on a baking sheet 20 minutes, then reduce oven temperature to 375°F and cover edge of pie with a pie shield or foil. Continue to bake until crust is golden brown and filling is bubbling, 50 to 60 minutes more. Cool pie on a rack to warm or room temperature, at least 2 hours.

1/4 cup butter
1/4 cup nuts, chopped (I use almonds or walnuts)

Steps:

  • Preheat oven to 400*F.
  • Arrange pear halves cut side up in pie shell.
  • Combine sugar, ginger, sour cream and egg; mix well.
  • Pour over pears.
  • **Streusel Topping**.
  • In small bowl, combine flour, brown sugar and cinnamon.
