BUTTERSCOTCH APPLE PUDDING



Butterscotch Apple Pudding image

A self saucing pudding to warm you on cold days. As the pudding bakes it forms a butterscotch sauce under the apple studded crust. This comes from another of my Alison Holst recipe books from the 1970's. Still making in the 2000's :)

Number Of Ingredients 10

1 cup flour
2 teaspoons baking powder
1/4-1/2 teaspoon nutmeg or 1/4-1/2 teaspoon ginger
1/2 teaspoon salt
2 -3 apples, diced (cooking ones are best, but I use whatever I have on hand)
1/2 cup milk
1 cup brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter
2 cups water

Steps:

  • Sift the flour, baking powder, spice and salt together.
  • Peel, core & dice apples and toss them into the flour mixture.
  • Add milk and mix with a knife to blend all the ingredients.
  • Spread mixture into a greased baking dish approx 9" (23cm) square or a round one of similar size.
  • Measure the topping ingredients in the order given into a saucepan and bring to the boil.
  • Pour boiling mixture carefully over the batter in the pan.
  • Bake uncovered at 375'- 400'F (190' - 200'C) for approx 45-60mins, or until topping is firm in the centre and golden brown.
  • Serve warm with sweetened whipped cream or vanilla ice cream.

3 cups thinly sliced peeled tart apples (about 3 medium)
1/3 cup packed brown sugar
1/4 cup all-purpose flour
1/4 cup quick-cooking oats
1/3 cup cook-and-serve butterscotch pudding mix
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed
Vanilla ice cream, optional

Steps:

  • Place apples in a 1-1/2-qt. slow cooker. In a small bowl, combine the brown sugar, flour, oats, pudding mix and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apples. , Cover and cook on low for 2-1/2 to 3-1/2 hours or until apples are tender. Serve with ice cream if desired.

  • Set a large roasting pan on the bottom rack of the oven, fill it halfway with hot water, and preheat the oven to 350°F., To make the topping: Melt the butter in a large frying pan, add the apple, and cook over medium heat 2 minutes., Add the Pie Filling Enhancer or flour, sugar, and cinnamon and cook for 2 minutes, until the apples start to caramelize.
  • Add the walnuts and remove from the heat., Place the caramel and cream in a 4-quart oven- and burner-safe crock set over medium heat.
  • Bring to a simmer, stirring to combine., Remove from the heat, and spoon the apple mixture over the caramel., To make the pudding: Beat the butter and sugar until smooth., Add the eggs one at a time, beating well after each addition., Fold in the flour, salt, and cinnamon., Spoon the mixture over the apples, spreading to level.
  • Cover the crock and place it in the pan of hot water., Bake the pudding for 70 to 80 minutes, until a toothpick inserted into the center comes out clean., Remove it from the oven, and let it rest for 15 minutes before serving., Serve warm, or at room temperature; ice cream or whipped cream are always a good option.
