These biscuits are a never fail recipe, they're easy to make and everyone enjoys them.

2 cups all-purpose flour
½ teaspoon salt
4 teaspoons baking powder
½ teaspoon cream of tartar
2 teaspoons white sugar
½ cup butter, chilled and diced
¾ cup milk

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large bowl, sift together dry ingredients. Cut in butter until mixture resembles coarse oatmeal. Make a well in the center of the dry mixture and pour in the milk. Stir until dough begins to pull together then turn out onto a lightly floured surface.
  • Press dough together and then roll out until 3/4 inch thick. Cut into 2 inch round biscuits and place on an ungreased baking sheet.
  • Bake in preheated oven for 10 minutes, or until golden.

3 cups flour
2 tablespoons white sugar
3 teaspoons baking powder
3 teaspoons cream of tartar
1 teaspoon salt
1 teaspoon baking soda
3/4 cup shortening (by hand)
1 1/4 cups milk

Steps:

  • Mix flour, sugar, bk powder, cream of tartar, salt and soda in a bowl. Mix well.
  • Then add shortening by hand and then milk.
  • Knead well. Cut out ( I use a small tomatoe paste can with bottom cut out) and place on greased cookie sheet ( I use partchment paper or stone).
  • Bake at 400 for 20 minutes ( sometimes on a hot day will only be 15 minutes).
  • I have used my kitchenaid mixer with dough hook and they have turned out ok.

10 ounces (about 2 cups) self-rising flour
2 tablespoons sugar (if making sweet shortcake-style biscuits)
10 ounces (about 1 1/4 cups) heavy cream, plus more for brushing

Steps:

  • Adjust oven rack to center position and preheat oven to 450°F. Place flour in a large bowl. If making sweet biscuits, whisk in sugar. Stirring with a wooden spoon, drizzle in cream. Stir until a lumpy dough is formed. Do not over mix.
  • For Drop Biscuits: Using a 1-ounce cookie scoop, scoop balls of dough onto a parchment-lined baking sheet, spacing them 2 inches apart. Brush tops with cream and bake until golden brown, about 12 minutes. Let cool slightly and serve.
  • For Flaky Rolled Biscuits: With a rolling pin, roll the dough into a 12-inch square. Using a bench scraper, fold the right third of the dough over the center, then fold the left third over so you end up with a 12-by-4-inch rectangle. Fold the top third down over the center, then fold the bottom third up so the whole thing is reduced to a 4-inch square. Press the square down and roll it out again into a 12-inch square. Repeat the folding process once more, then roll the dough again into a 12-inch square. Use a 3- to 4-inch biscuit cutter to cut out rounds and transfer to a parchment-lined baking sheet, spaced 2 inches apart. Press together scraps to form additional biscuits. Brush tops with cream and bake until golden brown, about 12 minutes. Let cool slightly and serve.

These light and delicious rolls are easy to make, economical, and require no kneading.

2 cups milk, divided
10 tablespoons shortening
1 (.25 ounce) package active dry yeast
¼ cup warm water (110 degrees F/45 degrees C)
10 tablespoons white sugar
4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 ½ teaspoons salt
1 ½ cups all-purpose flour
½ cup margarine, melted

Steps:

  • Place 1 cup milk with shortening in a saucepan. Stir constantly over medium heat until shortening melts. Do not allow to boil. Remove from heat and let cool slightly. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Pour milk and margarine into a large bowl. Add remaining cup of milk and dissolved yeast. In a separate bowl, sift together sugar, 4 cups flour, baking powder, baking soda and salt. Gradually flour mixture to milk mixture, using a wire whisk or electric mixer. Place uncovered bowl on stove. Allow dough to rise 2 to 2 1/2 hours until doubled in bulk.
  • Stir remaining 1 1/2 cups flour into dough and mix well. Turn dough out onto a lightly floured surface and divide in half. Roll out until 1/8 inch thick. Brush with melted margarine and cut with biscuit cutter . Fold each roll in half and dip in melted margarine, place on greased cookie sheets. For immediate use continue to let rolls rise 2 hours or until doubled in bulk. Refrigerate or freeze rolls if you do not plan to use at once.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake in a preheated oven for 15 to 20 minutes until golden brown. When using frozen rolls, remove from freezer at least 4 hours before serving. When using refrigerated rolls, allow 3 hours for rolls to rise.

I've tried biscuit recipes for most of my life. Some work, some don't. Some are ok, but this one is GOOD. And it's an easy NO-FAIL recipe. I haven't even tried another one in years. I've been making these for a very long time now, and cannot remember where it came from. :/ But if you love homemade biscuits and have never had very good luck with them, this one will make you smile and feel proud! Enjoy!! :D Happy to share! (*Sorry about the awful pic. I've been sick and was so tired I didn't get out my rolling pin and just patted the dough, hence why they are a bit lopsided. Normally they are picture perfect. So don't worry, yours will be. ;) )

1 tablespoon(s) + 1 1/2 tsp. baking powder
1 teaspoon(s) salt
1/2 teaspoon(s) baking soda
1 1/2 cup(s) sour cream, i would not suggest subbing light
1 tablespoon(s) + 1 tsp. vegetable oil
4 tablespoon(s) soft butter

Steps:

  • In medium-sized bowl, whisk first 4 ingredients til well mixed.
  • Add sour cream in spoonfuls on top, add oil and mix til all is just moistened with a spoon. Switch to using your hands turning the dough to get all the last of the dry stuff on the bottom of the bowl. Knead 8 times on floured surface.
  • Roll thick to only about an 8" circle. Just a few passes with your (floured) rolling pin. Cut out 6 biscuits with a biscuit cutter or a floured glass. Get 2 more out of the last of the dough. (Bunch it back together, knead it just a bit, pat or roll it and cut.) Pitch any last little tidbit if any left. I place mine on my old round metal pizza pan covered with foil and sprayed with butter-flavored Pam. But a cookie sheet will work just fine.
  • Place little pats of butter on top, or spread it a little if the butter is VERY soft and doesn't deflate the biscuits while doing so. Bake in hot, preheated 425 oven for 12-15 minutes (ovens vary) or til golden brown on top. Remove from oven and butter tops again with other half of butter. Serve warm with more butter and homemade jam or honey. Makes 8 tall sour cream biscuits.
