1 can (10-1/2 oz.) chicken broth
1 cup frozen cut green beans
1 Tbsp. soy sauce
1/2 tsp. garlic powder
1-1/2 cups instant brown rice, uncooked
2 Tbsp. sliced almonds, toasted

Steps:

  • Combine broth, beans, soy sauce and garlic powder in medium saucepan. Bring to boil on medium-high heat.
  • Stir in rice. Return to boil. Reduce heat to low; cover. Simmer 5 min. Remove from heat. Let stand 5 min.
  • Fluff rice mixture with fork. Sprinkle with almonds.

1 onion, chopped
1/2 lb. cremini mushrooms, sliced
1 pouch (3.5 oz.) boil-in-bag long-grain white rice, uncooked
1 cup fat-free reduced-sodium chicken broth
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 pkg. (8 oz.) KRAFT Shredded Three Cheese with a TOUCH OF PHILADELPHIA, divided
1/2 lb. fresh green beans, cut diagonally into 2-inch lengths

Steps:

  • Heat oven to 350ºF.
  • Heat oil in large nonstick skillet on medium heat. Add onions; cook and stir 2 min. Stir in mushrooms; cook 3 to 5 min. or until evenly browned, stirring occasionally.
  • Combine rice, broth, sour cream and 1-1/2 cups cheese in large bowl. Add mushroom mixture; mix well.
  • Spoon rice mixture into 9-inch-square baking dish sprayed with cooking spray; top with beans and remaining cheese. Cover.
  • Bake 35 to 40 min. or until casserole is heated through and broth is absorbed, uncovering for the last 5 min.

1 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
1 1/2 teaspoons soy sauce
2 garlic cloves (minced)
1/4 teaspoon pepper
1 tablespoon extra virgin olive oil
1 lb green beans

Steps:

  • Cook green beans as you normally would in a saucepan of boiling water. (usually take about 5 minutes). Drain beans in colander. When drained put beans in a bowl (with a little extra room for mixing).
  • In a small bowl (seperate from the one the green beans are in) wisk all ingredients except for the olive oil. When all are mixed well pour olive oil in the bowl wisking continuously until the oil is well blended into the mixture.
  • When the sauce is done pour over the beans, then "toss" the beans (salad tongs work the best). Being sure to evenly coat the beans.

1 large red bell pepper, diced small

1 to 1/2 cups corn (I used frozen and added it straight from the freezer)
1 cup peas (I used frozen and added it straight from the freezer)
one 15-ounce can black beans, drained and rinsed (I use no-salt added)
one 8-ounce package precooked white rice (another cooked rice may be substituted)
1 to 2 teaspoons cumin
1 teaspoon kosher salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
pinch cayenne pepper, optional and to taste
2 to 3 green onions, sliced into thin rounds
2 to 4 tablespoons fresh cilantro, finely minced
1 tablespoon lime juice

Steps:

  • To a large skillet, add the olive oil, onion, and cook over medium-high heat for about 4 minutes, or until it begins to soften; stir occasionally.
  • Add the bell pepper, carrots, and cook for about 3 to 4 minutes, or until vegetables are crisp-tender; stir occasionally.
  • Add the corn, peas, beans, rice, cumin, salt, pepper, optional cayenne, stir to combine, and cook for about 2 minutes or until warmed through; stir occasionally.
  • Add the green onions, cilantro, lime juice, stir to combine, taste and check for seasoning balance and add additional salt, pepper, cumin, etc. if desired.
  • Serve immediately.

2 slices bacon, chopped
1 small onion, minced
2 tablespoons red wine vinegar

  • Cook green beans in 1-inch simmering water, covered, for 6 minutes. Drain and set aside. Return skillet to stove and set burner to medium high. Add bacon and brown. When fat begins to render, add chopped onions to the pan and cook until tender with the bacon. Add cooked green beans to the pan and turn to coat in bacon drippings and onions. When the beans are hot and bacon crisp at edges and onions translucent add vinegar to the pan and season with beans with sugar. 3 ounces coarsely chopped pancetta
1 shallot, thinly sliced
salt and black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the green beans and boil 3 to 4 minutes until just tender. Drain beans and immediately plunge into ice water. Allow to sit in ice water until cold, then drain well, and set aside.
  • Cook pancetta in a large skillet over medium-high heat until crispy, then set aside. Reduce heat to medium, stir shallots into the pancetta fat, and cook gently until the shallots have turned dark golden brown, about 10 minutes. A different twist to the usual green bean casserole. Given to me years ago by my ex-mother-in-law, this is a tasty, fresh, sweet and tangy new way to serve green beans and it's sure to become a family favorite! Prepare the night before and marinate overnight for the best results. Enjoy!

12 slices bacon, cut in half
2 pounds fresh green beans, trimmed and snapped
1 ½ medium onions, chopped
6 tablespoons apple cider vinegar
6 tablespoons white sugar
½ cup blanched slivered almonds

Steps:

  • In a large deep skillet, cook bacon over medium-high heat until evenly browned. Remove bacon to paper towels, and reserve drippings in the skillet.
  • Place fresh green beans in a large saucepan, and add enough water to cover the bottom by 1 inch. Cover, and bring to a boil over medium-high heat. Cook for 8 to 10 minutes, until bright green and tender. Drain.
  • Place the green beans into a 2 quart casserole dish. Spread the onions in a layer over the green beans. Place bacon strips in a layer over the onions. Sprinkle almonds over the top. Heat the reserved drippings in the skillet over medium heat. Stir in vinegar and sugar, heating just until sugar is dissolved; drizzle over everything in the dish. Cover, and chill for at least one hour, but overnight is best.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake uncovered, for 45 minutes, until the onions are tender, and the almonds are toasted. Check after 30 minutes, and cover if necessary.

  • Rinse beans, and then soak in a large pot of water overnight.

It was so tasty and tangy, that I could not believe that it was green beans (1 of my least favorite vegetables) Maybe it is because I like that lemony-tangy flavor, but I think it is a great and EASY way to give something extra to vegetables. Oh, he told me he got the recipe from the Stop & Shop website. I hope you all like it as much as I do. Try to exchange the broth and the lemon juice with instant lemon flavor iced tea (prepared as if you were going to drink it) for an extra flavor kick.
