- Preheat oven to 400 degrees. Roll out dough on a lightly floured work surface, just until creases are smooth. Trim dough to a 10-inch square. Lightly score a 1/2-inch border around dough. Brush off excess flour and transfer dough to a parchment-lined baking sheet. Freeze 15 minutes.
- Brush border of dough with the beaten egg. Bake until puffed and starting to brown, 10 to 12 minutes. Toss asparagus with the oil, and season with salt and pepper.
- Remove tart shell from oven and press down on the center with a spatula. Arrange asparagus on top. Bake until asparagus is crisp-tender, about 8 minutes. Remove from oven and sprinkle cheese evenly on top. Bake until cheese is melted, about 4 minutes more. Let cool on a wire rack 5 minutes before slicing into squares.

- Pre-heat the oven to 220ºC/430ºF. Line a baking sheet with baking/parchment paper.
- To make the cheese mixture, combine the cream cheese, egg yolks, Parmesan, thyme, lemon zest, salt and pepper and mix well.
- Gently roll the puff pastry out into a large rectangle (to fit the baking sheet). Score a border around the edge (taking care not to cut all the way through the pastry).

- Preheat oven to 325 degrees. Roll out pastry, line tart pan with the pastry and cover the pastry with foil. Weigh down with dry beans or pastry weights. Place in the oven and bake 10 to 12 minutes, until the pastry looks dry. Remove foil and weights and continue baking until the pastry is golden, about 15 minutes longer. Remove pastry from the oven and increase oven temperature to 375 degrees.
- Melt butter in a skillet, add the onions and saute slowly until they are transluscent and tender. Snap the ends off the asparagus and peel them about half way up from the bottom. Cut the asparagus into half-inch-thick slices on a sharp slant. You should have about one cup of cut asparagus. Add to the skillet with the onions, toss in the butter and add the chives. Season with salt and pepper.
- Scatter the asparagus mixture in the baked pastry shell. Whisk the eggs and half and half together and pour into the shell. Sprinkle with the cheese. Place in the oven and bake until set and golden brown, about 40 minutes.

- Clean and trim tough ends on asparagus.
- Take pastry from fridge 10 minutes before using.
- Preheat oven to 425°F.
- Unroll Pastry and place on baking sheet.
- With a sharp knife point score a line around the pastry about a half inch from the edge. Do not cut all the way through.
- Lightly prick inside the rectangle with a fork and brush the edges with a little beaten egg.

- Take the spinach and remove the stalks and wash the leaves well. Heat the olive oil in a frying pan and fry the spinach in it. Season with salt and nutmeg and then place on a plate and let cool in the refrigerator.

- 2. Add the goat cheese, ricotta and 2 eggs to the bowl of a food processor fitted with the blade attachment. Pulse until the mixture is evenly combined. Next add in the grated garlic, chopped herbs, Parmesan cheese, lemon zest, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Pulse once again to combine all the ingredients. Set aside.
- 3. On a separate rimmed baking sheet, toss the trimmed asparagus with 1 tablespoon olive oil, 1/4 teaspoon salt, 1/4 teaspoon pepper. Set aside.
- 4. Unroll the puff pastry on a lightly floured work surface and dust a rolling pin lightly with flour. Roll the puff pastry out to a 13- by 11-inch rectangle. Add the goat cheese herb mixture to the puff pastry and spread it out into an even layer, leaving a 1-inch border all the way around the puff pastry. Nestle in the asparagus into the cheese mixture alternating directions.

- Bring a large pot of water to a boil. Line a baking sheet with paper towels. Add the asparagus and blanch for 30 seconds then immediately remove them from the water and arrange them on the paper towel-lined baking sheet to cool.
- Lightly flour your work surface then unfold the puff pastry onto it and roll it into a 10x12-inch rectangle. Transfer the pastry to the lined baking sheet then using a sharp knife, score a rectangular border about 1 inch from the edges. Prick the center of the pastry with a fork then bake it for about 10 minutes or just until it is pale golden.

Gently and loosely twist each pastry strip. Return pastry twists to pastry perimeter, placing on top of brushed egg and pressing gently into pastry base to seal. Trim any overhang from twists. Using a paring knife, lightly score interior perimeter of pastry just inside twist border. Freeze 10 minutes.
- Meanwhile, drain asparagus mixture, and pat dry; set aside. Stir together ricotta, 1/4 cup Parmesan, lemon zest, thyme, salt, pepper, and remaining beaten egg in a medium bowl; set aside.
