PERFECT BEEF BURGERS

Steps:
- Sprinkle the ground beef evenly with 1/2 teaspoon salt in a large bowl. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
- Preheat a grill to high. Season the patties with salt and pepper. Grill, undisturbed, until marked on the bottom, 3 to 5 minutes. Turn and grill until the other side is marked and the patties feel firm, 3 to 5 more minutes; if desired, top each burger with 2 slices cheese during the last 2 minutes of cooking and cover with a disposable aluminum pan to melt.
- Serve the patties on the buns; top with lettuce and tomato.
SAVORY SKILLET BURGERS
A last-minute quick meal turned into a family favorite. Best homemade skillet burgers I have ever had and they are surprisingly not too bad for you! Making them into sliders on lightly toasted sourdough is an amazing gourmet treat for guests! My boyfriend got out the ketchup, and after one bite of these burgers he put the ketchup away. These burgers are perfect as-is--you don't even need buns!

- Lightly oil a large skillet and put over low heat.
- Mix ground beef, egg whites, sun-dried tomatoes, goat cheese, sea salt, steak seasoning, and parsley in a large bowl. Shape into 5 hamburger patties.
- Put patties in the skillet and cook for 5 minutes. Flip and cook another 5 minutes. Increase heat to medium or medium-high, cover, and continue to cook, flipping occasionally, until burgers are cooked through and juicy, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top with liquid hickory smoke seasoning.

HAMBURGERS WITH BROWN GRAVY (TOTAL COMFORT FOOD AKA "MEAT CAKES" :)
These are sooooo great (and EZ)! I grew up eating these about once a week and they are incredible with mashed potatoes or buttered egg noodles and a veggie. While this recipe is basically my mom's, I have changed one thing...instead of using chopped onion in the burgers, I use an envelope of onion soup mix...it gives them the PERFECT flavor! This is now one of my family's favorite meals...try it and it will probably become one of your's, too. P.S. These burgers also work for grilling (without the gravy :).

- Combine ground beef, bread, soup mix, salt, pepper, ketchup, garlic powder, parsley and eggs in a large bowl until well mixed.
- Prepare each burger with approx 1/3 cup of meat mixture and form into patties about 1/2 inch thick.
- Heat a 12" skillet over med-high heat and fry burgers for about 5 minutes on each side, until they are almost done.
- Remove burgers to a plate and discard all but about a tablespoon of drippings from skillet.
- Lower heat under skillet and prepare brown gravy with water in a bowl or measuring cup; slowly pour into skillet, stirring constantly, scraping up any brown bits from the bottom.
- When gravy has thickened, place burgers back in the pan and cover.
- Simmer for about 20 minutes, or until burgers are done.
- Serve with mashed potatoes or egg noodles.

- Divide beef mixture into 4 equal portions and form patties.
- Place patties onto grill or grill pan; cook for 8 to 10 minutes, until desired degree of doneness, turning once.

- To each pound of ground beef add 1 medium onion chopped very fine, 1/2 cup of chopped ripe olives and 1 tablespoon of Spice Islands mushroom powder. Grill as with plain hamburgers , seasoning to taste with salt and pepper as the meat cooks.
- Serve these hamburgers with crisp fried potatoes and a salad of sliced tomatoes dressed with olive oil and wine vinegar and garnished with black olives and strips of anchovies.

- In a small bowl, toss the cheese with the cornstarch. Rub the garlic all over the inside of a medium saucepan, then add the clove to the pan with the lager and bring to a boil. Add the cheese mixture in large handfuls, stirring until melted, and bring to a boil. Add the mustard, season with salt and pepper and simmer over moderate heat until thickened, about 3 minutes; keep warm over low heat.
- In a medium bowl, lightly knead the sirloin with the chuck and loosely form into 4 patties about 3/4 inch thick. Season the burgers very generously with salt and pepper and transfer to a plate lined with plastic wrap. Brush the cut sides of the buns with the melted butter.
- Light a grill. When the fire is medium hot, oil the grate. Grill the burgers for about 10 minutes, turning once, for medium meat. Move the burgers away from the heat and grill the cut sides of the buns for about 1 minute, until toasted.
- Set a lettuce leaf and a tomato slice on the bottom half of each bun. Top each with a burger and a generous spoonful of cheese sauce. Cover with the top half of a bun and serve, passing the remaining cheese sauce on the side.
