Provided by Food Network Kitchen

Categories     main-dish

Time 26m

Yield 4 to 6 servings

Number Of Ingredients 8

Kosher salt
1 pound spaghetti
3 cloves garlic, minced
1/2 cup extra-virgin olive oil
Pinch red pepper flakes
2 tablespoons chopped flat-leaf parsley
1/2 lemon, zested, optional
Freshly grated Parmigiano-Reggiano, optional

Steps:

  • Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook, stirring occasionally until al dente, tender but not mushy, about 8 minutes.
  • While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt and the red pepper flakes in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden, about 8 minutes.
  • Drain the pasta in a colander set in the sink, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well. Add the parsley and lemon zest (if using). Adjust seasoning, to taste. Transfer to a large serving bowl or divide amongst 4 to 6 dishes. Serve topped with grated cheese, if desired.

MIDNIGHT PASTA WITH ROASTED GARLIC, OLIVE OIL AND CHILE

Midnight Pasta With Roasted Garlic, Olive Oil and Chile image

This recipe is a version of aglio e olio pasta, which is often known as midnight pasta because it can be made quickly with a few pantry staples: garlic, olive oil, red-pepper flakes and pasta. This recipe takes a bit more time because it calls for roasting the garlic first, but doing so adds a complex, mellow flavor to the entire dish. If you're a planner, you could even roast a couple of heads of garlic in advance. (Roasted garlic will keep in an airtight container in the refrigerator for up to two weeks and in the freezer for up to two months.) Add whatever vegetables or proteins look good to you.

Categories     dinner, pastas, main course

Time 1h

Yield 4 servings

Number Of Ingredients 8

1 large head of garlic
Kosher salt
1/2 cup plus 1 teaspoon extra-virgin olive oil
1 cup firmly packed parsley leaves
1 pound spaghetti or other long pasta
1/2 teaspoon red-pepper flakes, plus more for garnish
Black pepper
Freshly grated Parmesan, for serving

Steps:

  • Heat the oven to 400 degrees. Cut off the top 1/4 inch of the head of garlic to expose the top of the cloves, then place on a piece of foil, cut-side up. Sprinkle exposed cloves with salt, then drizzle with 1 teaspoon oil. Wrap the garlic in the foil and roast until soft and golden brown, 40 to 50 minutes.
  • When you're ready to make the pasta, bring a large pot of salted water to a boil. Finely chop the parsley leaves. Add pasta to the boiling water and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta.
  • While the pasta cooks, in a large Dutch oven or skillet, heat the remaining 1/2 cup oil over medium heat. Squeeze the roasted garlic cloves into the oil and cook, breaking them up with your spoon, until very fragrant, 2 to 3 minutes. Add the red-pepper flakes and a few generous grinds of pepper. Remove the pan from the heat to infuse the oil while the pasta finishes cooking.
  • When the pasta's done, heat the garlic oil over medium, then add the cooked pasta, 1/2 cup reserved pasta water and the parsley, and simmer, tossing constantly and adding more pasta water as needed, until the pasta is glossed with sauce.
  • Serve with more red-pepper flakes, black pepper and Parmesan.

SPAGHETTI AGLIO E OLIO (GARLIC SPAGHETTI)

Spaghetti Aglio e Olio (Garlic Spaghetti) image

Try this easy recipe for Spaghetti Aglio e Olio, which is Italian for spaghetti with garlic and oil.

Provided by Leah Maroney

Categories     Entree     Pasta

Time 30m

Yield 4

Number Of Ingredients 8

1 pound dried spaghetti
8-10 garlic cloves
⅓ cup extra virgin olive oil
1 teaspoon kosher salt
¼ teaspoon ground black pepper
½ teaspoon crushed red pepper flakes
½ cup parsley (fresh)
1 cup parmesan cheese (grated)

Steps:

  • Gather the ingredients.
  • Boil a large pot of water. Add salt when it has boiled and add the pasta. Once the pasta has cooked to al dente (look at the package instructions), reserve a cup of the pasta water for the sauce and drain.
  • Slice the garlic into thin slivers (as thin as you can).
  • Mince the parsley.
  • Add the olive oil to a large pot (the same one you cooked the pasta in, if you wish) and cook on medium heat. Add half of the garlic and saute until just fragrant. Then add in the salt, pepper, red pepper flakes, and chopped parsley. Cook for another minute. Just be careful not to overcook or over toast the garlic. This can lessen the garlic flavor and can make the garlic taste bitter.
  • Add half a cup of the reserved pasta water, the pasta and the remaining garlic. Toss and cook for another 2 minutes or until it is all heated through. Add in more pasta water if needed.
  • Add the parmesan cheese and more salt to taste. Serve immediately.

SPAGHETTI WITH GARLIC, OLIVE OIL AND RED PEPPER FLAKES

Spaghetti with Garlic, Olive Oil and Red Pepper Flakes image

Provided by Giada De Laurentiis

Categories     main-dish

Time 25m

Number Of Ingredients 7

1 pound dried spaghetti
1/2 cup extra-virgin olive oil
3 cloves garlic cloves
1 tablespoon red pepper flakes, plus more if desired
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon chopped fresh basil leaves
1 tablespoon chopped fresh mint leaves

Steps:

  • Bring 6 quarts of salted water to a boil in a large pot. Add the pasta and cook until al dente, 6 to 8 minutes. Drain the pasta in a colander, reserving 2 tablespoons of the pasta water. The reserved pasta water will help create the sauce. Do not rinse pasta with water -- you want to retain the pasta's natural starches so that the sauce will stick.
  • Heat the olive oil in a large saute pan over medium heat. Add the garlic and saute until light brown and fragrant. It's important not to burn the garlic or else it will become bitter. Remove and discard the browned garlic. Add the red pepper flakes and saute for 1 minute. Carefully add the pasta and toss to coat in the flavored oil. Add the reserved pasta water and cook, stirring, to create a sauce, 1 minute.
  • Remove the pan from the heat and top with the fresh herbs.

Olive oil Parmesan Pasta w/ red pepper flakes image

If you like it a little hot, then you'll love this dish. I get requests for this a lot. You can eliminate the crushed pepper if you'd like, still makes a great tasty dish. You need not worry about extact measures. Add more or less of any of these ingredients .. it won't hurt the recipe at all.

SPAGHETTI WITH GARLIC, OIL AND HOT RED PEPPERS

Spaghetti With Garlic, Oil and Hot Red Peppers image

This is the kind of quick, simple dish Italians often throw together after an all-night party or when spirits are flagging and an infusion of food is called for. Other types of long, thin pasta, like vermicelli, linguine or taglierini, may be substituted. If anchovies are omitted, adjust the salt in the sauce.

Provided by Nancy Harmon Jenkins

Categories     dinner, lunch, quick, weekday, pastas, main course

Time 15m

Yield 6 servings

Number Of Ingredients 7

4 to 6 plump garlic cloves
1/2 cup extra virgin olive oil
Sea salt to taste
1 pound spaghetti
3 to 4 anchovy fillets, coarsely chopped (optional)
1 small dried hot red chili pepper, crumbled, or 1/2 teaspoon hot red pepper flakes or more to taste
1/2 cup minced flat-leaf parsley

Steps:

  • Bring 5 to 6 quarts water to rolling boil.
  • Peel garlic cloves, removing green sprout at center, if necessary, and chop coarsely. In pan large enough to hold all the drained pasta, cook garlic in oil very gently over medium-low heat. Cook just until garlic softens and starts to turn golden. Do not brown.
  • Add at least 2 tablespoons salt to vigorously boiling water. Add spaghetti, stirring.
  • If using anchovies, add them to oil and garlic. Cook briefly, mashing anchovy pieces into oil with fork. Stir in chili pepper and half of the parsley, and carefully add a ladleful of the pasta cooking water. Let simmer, and reduce slightly while pasta finishes cooking.
  • Start testing pasta after it has cooked for 4 minutes. When it is still a little chewy in the center, drain and add it to pan with sauce. Turn heat up slightly, and cook, mixing pasta and sauce together well for 1 to 2 minutes, or until pasta is done to taste. Turn pasta into preheated serving bowl, sprinkle with remaining minced parsley, and serve immediately.

SPAGHETTI WITH OLIVE OIL AND GARLIC

Spaghetti with Olive Oil and Garlic image

This Spaghetti with Olive Oil and Garlic is full of flavor, with just a hint of heat. You'll love the way the garlic and herbs come together in this delicious pasta dish.

Provided by Tania Sheff

Categories     Main Course

Time 30m

Number Of Ingredients 7

1 lb. spaghetti
1/3 cup olive oil
6 garlic cloves, peeled and sliced very thinly
1/2 tsp. red pepper flakes
1/3 cup fresh parsley, chopped
1/4 cup fresh basil, chopped (optional)
1 cup Parmesan cheese, grated

Steps:

  • Bring a large pot of water to a boil. Then add salt and put in the pasta. Stir well.
  • In the meantime, combine the garlic and olive oil in a cold skillet and bring them to a gentle simmer. Cook them for about 6-7 minutes, until the garlic has softened and just started to brown.
  • At this point, add about 1/2 cup of pasta water to stop the garlic from cooking further.
  • Drain your spaghetti and add it to the skillet. Add the parsley, basil, and Parmesan. Then stir everything together nicely. If the sauce looks a bit too dry, add in another 1/4 cup of the starchy pasta water.
  • Serve this pasta garnished with freshly grated black pepper, chili flakes, fresh herbs, and/or Parmesan on top.

1 Tbsp lemon juice
1/4 cup Italian flat-leafed parsley (chopped)

  • This receipe may seem hard but it’s the easiest dish you will ever make and the one that will impress your entire family. I promise you! This is more about technique than anything. Just follow the instructions below and you will be fine!
  • Heat a skillet/saute pan over medium-high heat for a few minutes. Melt coconut oil and add almond flour, a pinch of salt and a couple turns of freshly cracked pepper. Stirring often, saute until toasty brown and fragrant. This will happen fast (about 2 mins) so watch closely as this can burn easily. If you screw up then throw everything out and try again. No big deal. Once toasted, set aside and save for garnishing the dish at the end.
  • Wipe out the pan and heat the Olive Oil over low heat. Add garlic, red pepper flakes, a couple pinches of sea salt and freshly cracked black pepper. Saute, stirring constantly, until the garlic is fragrant (about 30 secs - 1 minute). Do not allow the garlic to brown.
  • Add the flesh of one Roasted Spaghetti Squash to the pan and, using tongs, turn in the olive oil/garlic sauce until the squash is heated completely through. Season again with a couple pinches of sea salt and freshly cracked black pepper. Using a micrograter, zest the lemon directly over the spaghetti squash (this is important because you want the flavorful oils from the lemon in the pan...trust me!) Slice the lemon in half and squeeze the juice of both lemon halves into the pan. Using tongs again, gently turn the squash with the lemon juice and zest.
