This versatile side dish comes together in 10 minutes.

1 tablespoon extra-virgin olive oil
Pinch of red-pepper flakes
1 clove garlic, smashed
8 ounces snow peas, trimmed and sliced in half
8 ounces pea shoots, cut into 2-inch lengths
Coarse salt
1/2 lemon

Steps:

  • Heat oil, red-pepper flakes, and garlic in a large skillet over medium-high, stirring constantly, until garlic is golden, about 1 minute. Add snow peas and cook, stirring, until bright green and still crisp, about 1 minute.
  • Add pea shoots in batches along with 1 tablespoon water. Cook, stirring, until just wilted, about 30 seconds. Season with salt, squeeze lemon over top, and serve.

1 tablespoon butter
2 medium carrots, julienned
1 garlic clove, minced

  • Add carrots and garlic and continue to saute for 1-2 minutes longer or until veggies are crisp-tender.

Steps:

  • In a large saucepan of boiling salted water boil snow peas 30 seconds and drain. Refresh snow peas under cold water and drain. Snow peas may be prepared up to this point 8 hours ahead and chilled, covered.
  • In a heavy skillet sauté snow peas in oil over moderately high heat, until heated through and season with salt and pepper.

1 tablespoon peanut oil
2 garlic cloves, finely minced
1 teaspoon grated fresh ginger
3/4 lb baby bok choy, leves separated
1/2 lb snow peas
1/2 cup chicken stock (or vegetable stock if you wish to keep it vegetarian)
2 tablespoons oyster sauce
1/2 teaspoon sesame oil

Steps:

  • Add the oil, garlic and ginger into a wok or large saute pan. Turn the heat to medium-high. As the oil heats, the garlic and ginger will infuse the oil with flavor. Take care that they do not burn. When the oil is hot, add the bok choy and the snow peas and toss to coat them in the oil.
  • Stir-fry the mixture for about a minute. Add the stock and oyster sauce and bring to a boil. Cover and cook for 2 minute until the bok choy stems are crisp-tender. Drizzle the sesame oil over the mixture and serve.

Steps:

  • Heat oil in a large, shallow pan over high heat. Cook garlic 30 seconds, stirring to prevent burning. Combine stock and oyster sauce in a bowl; add to pan. Add peas; cook, turning peas constantly, until bright green and crisp, about 2 minutes. Divide among 8 bowls; top each with a handful of pea shoots.

  • Heat olive oil and sesame oil in a large nonstick skillet over medium-high heat; add onion; cook, stirring frequently, for 1 minute. Add snow peas and soy sauce mixture (and sesame seeds, if using them); cook, stirring frequently, for about 3 -4 minutes or until snow peas are crisp-tender.

Pea shoots are the tips of the vines and the top set of leaves of the pea plant. I was introduced to these by my BIL a couple of years ago. I found no recipes for it here or on line. Which lead me to add my recipe.

1 tablespoon vegetable oil
1 teaspoon sesame oil
1 tablespoon fresh ginger, minced
2 garlic cloves, finely minced
1/2 teaspoon sugar
1 1/2 lbs young pea shoots, loosely packed
1/4 teaspoon soy sauce
2 tablespoons oyster sauce

Steps:

  • Rinse the pea shoots thoroughly in cold water twice, lightly drain.
  • In a large wok or skillet over high heat, heat oils add ginger, garlic and sugar. Toss and add shoots, soy, & oyster sauce.
  • Stir-fry for two to three minutes, or until the leaves soften and are tender. Remove shoots leaving the liquid in pan. Place shoots on serving dish. Reduce the remaining liquid by 1/2. Pour over shoots and serve immediately.
