SAUTEED EGGPLANT WITH TOMATOES AND BALSAMIC VINEGAR

Sauteed Eggplant With Tomatoes and Balsamic Vinegar image

This recipe is from the vegetarian cookbook Mediterranean Harvest. Soaking the eggplant in water first prevents it from soaking up a lot of oil when sauteed. Easy, healthy and surprisingly satisfying when served with crusty bread and olive oil for dipping.

Provided by Eat Your Vegetables

Categories     Vegetable

Time 3h5m

Yield 4 serving(s)

Number Of Ingredients 10

1 large eggplant, cut into 1-inch dice
8 cups water
1/4 cup kosher salt
2 tablespoons extra virgin olive oil
1 small onion, sliced
4 garlic cloves, minced
fresh ground pepper
1 tablespoon balsamic vinegar
14 ounces chopped tomatoes, with juice
4 fresh basil leaves, slivered

Steps:

  • Place the eggplant in a large, wide bowl. Pour in the water, add 1/4 c salt, and stir together. Cover with a plate and place a weight, such as a can of tomatoes, on top of the plate to keep the eggplant submerged. Soak the eggplant in the salted water for 1-2 hours. Drain and pat dry.
  • Heat the oil in a large nonstick skillet over medium heat and add the onion. Cook, stirring often, until tender, abut 5 minutes. Stir in the garlic and cook for 30 seconds to a minute, until fragrant.
  • Add the eggplant and turn the heat to medium-high. Cook, stirring often, until the eggplant is browned and just about tender, about 10 minutes. Season with salt and pepper.
  • Add the balsamic vinegar and stir for a minute, then add the tomatoes. When the tomatoes begin to cook quickly, reduce the heat to medium. Cook, stirring often, for 10 minutes, until the tomatoes have cooked down a bit. Cover the pan, reduce the heat to medium-low, and continue to cook for another 5 to 10 minutes, until the eggplant is very tender and the mixture is thick. Taste and adjust seasonings. Stir in the basil.
  • Transfer to a serving dish. Cool slightly and serve. This is excellent at room temperature.

SAUTéED EGGPLANT AND TOMATOES

Sautéed Eggplant and Tomatoes image

Sautéed Eggplant and Tomatoes (melanzane a funghetto) is a quick side dish that's simple to prepare and good for you. Can be served as a side, as part of an antipasto, as a topping for bread, or on top of pasta.

Provided by Natalie Gregory

Categories     Side

Time 25m

Number Of Ingredients 8

1/2 cup olive oil (doesn't have to be extra virgin)
1 pound plum tomatoes (chopped about 4 or 5)
2 - 3 cloves garlic (chopped)
1 eggplant about 1 - 1 1/2 pounds (unpeeled, cut into 1-inch chunks)
1 teaspoon dried oregano
A few fresh basil leaves
Kosher salt (to taste)
Pepper ( to taste)

Steps:

  • In a large skillet, over medium high heat, heat the olive oil and add the eggplant. Sprinkle with some salt and pepper, and toss to coat. Sauté until the eggplant gets a little color and softens just a bit. This should take at least 5 minutes. Stir them here and there so it fries up, then cover them for about 5 or so minutes and let them stew.
  • Uncover and stir. You'll notice the eggplant released some of the oil it had absorbed. Add the garlic and oregano and stir until fragrant. Then add the tomatoes, oregano, and some salt and pepper to your taste. Stir and let cook for about 5 minutes or so to allow the tomatoes to break down a bit. The tomatoes should have "melted" and created a sauce. Tear or slice the basil and stir it in. Remove from heat.
  • You can top with grated Parmesan or Romano cheese but this is delicious as is.
  • Can be served as a side, a light meal, as a topping for bread, or mixed with some pasta.

SPICED EGGPLANT AND TOMATOES WITH RUNNY EGGS

Spiced Eggplant and Tomatoes With Runny Eggs image

A little like an eggplant version of shakshuka, this velvety skillet meal features sautéed eggplant and tomatoes seasoned with garlic, spices and lemon zest. It's topped with runny eggs and a crunchy garnish of toasted nuts. The yogurt and hot sauce simultaneously heat things up and cool things down, and really add a lot to this hearty, meltingly soft dish. Serve it for brunch or dinner, with a crisp green salad and some flatbread on the side.

Provided by Melissa Clark

Categories     soups and stews, vegetables, main course

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 14

1 1/2 pounds Italian eggplant, cut into 1-inch cubes
1 1/2 teaspoons kosher salt (Diamond Crystal), plus more as needed
1/3 cup pine nuts or slivered almonds
1 1/4 teaspoons baharat blend (or use another spice blend, such as garam masala)
Freshly ground black pepper
5 1/2 tablespoons extra-virgin olive oil, plus more as needed
1/2 teaspoon finely grated lemon zest
3 fat garlic cloves, finely grated, pressed or minced
2 cups chopped fresh tomatoes (about 1 pound)
3/4 cup chopped fresh herbs, such as basil, mint, cilantro, parsley, dill or any combination, plus more for garnish
4 to 6 large eggs
Lemon wedges, for serving
Plain whole-milk yogurt, for serving
Hot sauce (such as Tabasco), for serving

Steps:

  • Put eggplant in a colander in the sink and toss with 1 teaspoon salt. Let drain while preparing the nuts.
  • In a small bowl, combine nuts, 1/4 teaspoon baharat and a large pinch of salt and pepper. Heat 1/2 tablespoon oil in a large skillet over medium heat. Add pine nut mixture and cook, stirring frequently, until fragrant and toasted, 2 minutes. Pour nuts back into the small bowl and stir in lemon zest. Set aside for serving.
  • Add 3 tablespoons oil to the skillet and heat over medium-high until oil thins out, about 20 seconds. Add enough of the eggplant to fit in one layer without overlapping. Cook eggplant until browned, stirring occasionally, about 7 minutes. Use a slotted spoon to transfer eggplant to a plate. Repeat with more oil and eggplant, taking care not to crowd the pan.
  • When all the eggplant is browned, push the last batch still in the pan to one side. Drizzle the empty part of the pan with a tiny bit of oil and add garlic. Cook until fragrant, about 30 seconds. Return the rest of the browned eggplant back to the pan and stir well to incorporate garlic.
  • Add tomatoes and remaining baharat, 1/2 teaspoon salt and a big pinch of pepper. Reduce heat to medium and simmer, stirring occasionally, until tomatoes and eggplant become stewy, 8 to 10 minutes. Stir in herbs. Taste and add more salt, if needed.
  • Make small hollows into the stewed eggplant with the back of a spoon. Gently crack an egg into each hollow. Season eggs with salt and pepper. Cover with a lid or piece of foil and cook on medium-low until the eggs are just set, but still soft, 4 to 7 minutes. Remove the lid, and garnish with the spiced nuts, more herbs and a squeeze of lemon. Serve with yogurt, hot sauce and more lemon wedges on the side.

Grilled Eggplant with Balsamic Vinegar Relish image

Grilled eggplant topped with a fresh tomato, oregano, and balsamic relish. Can be served as a side dish to meat or fish, or as an appetizer with some crusty grilled bread! Serve warm or cold, but my preference is to serve it at room temperature.

Provided by Kim's Cooking Now

Time 55m

Yield 4

Number Of Ingredients 7

1 medium eggplant, sliced lengthwise into 1/4-inch-long strips
2 ¼ teaspoons salt, divided
4 tablespoons extra-virgin olive oil, divided
2 tablespoons balsamic vinegar
1 tablespoon chopped fresh oregano
⅛ teaspoon ground black pepper
½ cup diced tomato

Steps:

  • Place sliced eggplant in a colander in the sink. Sprinkle eggplant with 2 teaspoons salt. Let sit for 30 minutes to release any bitter juices. Rinse with cold water and dry on paper towels.
  • Heat a grill pan to high heat. Place 2 tablespoons olive oil in a small bowl. Brush eggplant lightly with olive oil and grill for 2 minutes, pressing down occasionally with a spatula. Turn each slice, without flipping, and continue grilling for 2 more minutes to form beautiful grill marks. Flip eggplant and repeat this process on the other side. Remove grilled eggplant to a serving platter.
  • Whisk together remaining 2 tablespoons olive oil, balsamic vinegar, oregano, remaining 1/4 teaspoon salt, and pepper in a small bowl. Add tomato and mix well. Pour over the grilled eggplant.
