AZTEC CORN BBQ'D IN HUSKS
This is a great corn recipe to serve at your next BBQ. You do it in advance and just finish cooking just before serving. Great flavor and you will get a few OOHs from your guests

Steps:
- Carefully peel back the husks from the corn and remove all the silk (be careful not to tear the husks).
- Remove the cob from the husks without tearing the husks.
- Discard 2 husks and soak the remaining 8 in water for about 20 minutes.
- Meanwhile cut the corn from the cobs, discard cobs.
- Mix together the peppers, cilantro onions and corn.
- Heat the butter in a skillet and saute the corn mixture for about 5 minutes. The corn should still be crunchy.
- Season with salt and pepper.
- Take the husks from the water and dry the inside of the husk with a paper towel.
- Spoon about 1 cup of the mixture into each husk, fold the husk around the corn and tie (use a waxed cord, if possible) at the top and around the middle so the husk is securely around the corn mixture. (You can prepare the recipe to this point several hours ahead of time, keep at room temperature).
- Arrange the husks around the outer edge of the BBQ, cook until heated through approximately 10 minutes.
- Turn several times, mist with water to prevent burning (the husks will be slightly charred but not black).
- Remove cords and serve immediately.

SUPER EASY, FAT-FREE GRILLED CORN-IN-THE-HUSK
I was looking for a recipe that did not require soaking the husks prior to grilling. This is a variation on the method I found on Simply Recipes website. Husks are placed directly on a screaming hot grill without the need to soak beforehand in water. The husk essentially steams the corn in its own moisture, resulting in crisp, smoky kernels with a natural corn flavor. This method will work best if you cook the corn as soon as possible after buying, preferably without refrigerating. If the corn has been refrigerated, allow it to come to room temperature before grilling. For those who prefer spicy flavors, add 1/4 tsp. chili powder and cayenne to the salt and pepper mixture before rubbing.

- Prepare grill with direct, high heat, about 550°F.
- Remove just the visible silks from the tips of the corn. If the husk has several thick layers, peel a few layers off, leaving a few layers of husk covering the corn.
- Place the corn husks on the hot grill. Cover.
- Turn the corn occasionally, until the husks are charred on all sides, about 15 to 20 minutes. (Approximately 5 minutes on each side.).
- Remove corn from the grill. Let sit for 5 minutes.
- Using a hand towel, remove the silks and charred husks from the corn.
- Cover stem of corn with a piece of aluminum foil, making a handle for the corn.
- Squeeze lemon lemon wedge over the hot corn.
- Mix salt and pepper in a small bowl. Dip lemon wedge into spice mix and rub into corn.
- Serve immediately.

KITTENCAL'S MILK SOAKED GRILLED CORN IN HUSKS... DELICIOUS!
You are in for a real treat! grilling with the husks left on insures for tender moist flavorful corn, make certain to soak the corn in the water/milk mixture for the stated amount of time, if you like a little heat then add in a small amount of cayenne pepper to the butter mixture. *NOTE* to save some time you can prepare the corn earlier in the day, tie with string and refrigerate, just soak for stated time before grilling you may wrap the corn in foil after soaking if you wish but I prefer grilling in just the husks, I find it has more flavor, also see my recipe#121897 :)

Steps:
- Carefully peel back the husks for the corn to within 1-inch of the bottom; remove the silk and discard silk.
- In a bowl combine soft butter with fresh parsley, salt and black pepper; spread over the corn (I use my hands for this).
- Rewrap corn in the husks.
- Tie with a heavy string in two places (near top and bottom, do not use nylon string!).
- Place the corn in a very large bowl; cover with cold water then mix in 1 cup milk into the water (make certain to soak the corn with the string on).
- Soak the corn in the water/milk mixture for about 30 minutes or a little more (no less than 30 minutes!).
- Grill the corn covered on the grill over medium heat, and cook for 22-30 minutes or until tender, TURNING OFTEN.
- Serve with more butter, salt and freshly grated Parmesan cheese (I use a cheese shaker to shake the cheese onto the corn at the table while eating).
- DELICIOUS!

GRILLED CORN IN HUSKS
If you're new to grilling corn in the husk, season the ears with butter, Parmesan cheese and parsley. It's especially good! Be sure to give the corn a long soak before putting it on the grill.
