1 1/2 lbs. salmon
1 tablespoon brown sugar
1 teaspoon curry powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt (more for a larger filet)
1-2 teaspoons olive oil
1 tablespoon olive oil
2 cloves garlic (minced)
1 small knob of ginger (minced)
1 tablespoon of lemongrass paste
1 tablespoon brown sugar
1 tablespoon red curry paste
1 can coconut milk
2 tablespoons fish sauce or soy sauce
lots of lime juice and zest
3 cups fresh spinach, chopped
cilantro, basil, mint, or other fresh herbs

Steps:

  • Preheat the oven to 475 degrees. Line a baking sheet with foil. Place one of the oven racks close-ish to the top, about 6 inches or so.
  • Mix the spices and the olive oil to make a paste. Place the salmon skin side down on the baking sheet. Rub the paste liberally over the top part of the salmon. Bake for 6-12 minutes (depends on salmon thickness and desired doneness - I usually opt for 8-10 minutes). See notes and FAQs for potential broiling issues and alternative methods.
  • Heat the olive oil over medium heat. Add garlic, ginger, and lemongrass; sauté for 5 minutes. Add brown sugar and curry paste; sauté for 3 minutes. Add coconut milk. Season with fish sauce and lime juice to taste. Add spinach; stir into the sauce until wilted.
  • Place salmon over rice. Cover with sauce, lime juice, and fresh herbs.

The idea for this quick dinner is based on a popular English brunch dish. If you don't have smoked salmon on hand, use a 7-1/2 ounce tin of salmon that has been drained and had the skin and bones removed.

1 onion, coarsely chopped
2 teaspoons curry powder
1/2 teaspoon ground coriander
1 cup long grain white rice
500 ml chicken broth
4 ounces smoked salmon
2 hard-cooked eggs, peeled
2 tomatoes
1 cup cilantro, chopped

Steps:

  • Lightly coat a large saucepan with oil and set over medium heat.
  • Add the onion and stir often until it starts to soften, 3 minutes.
  • Stir in the curry powder, ground coriander and rice until well coated, 1 minute.
  • Add the chicken broth and bring to a boil over high heat.
  • Cover and reduce the heat to low.
  • Simmer until the rice is tender and the liquid is absorbed, 18 to 20 minutes.
  • Remove from the heat and let stand for 5 minutes.
  • Meanwhile, break the salmon into chunks.
  • Slice the eggs and tomatoes into wedges.
  • Fluff the rice with a fork and stir in the cilantro.
  • Spoon onto a platter.
  • Scatter the salmon over top and arrange the egg and tomato wedges on the rice.
  • Serve right away or refrigerate until cold.

I love salmon and am always looking for different ways to have it. I came across this recipe in a cook book called 'Take 3 Cooks'. It's really simple and quickly made.

12 ounces wild rice, cooked and kept warm
1 lb salmon, skinned and de-boned,cut into bite-size chunks
1/4 pint double cream
1 bunch spring onion, chopped
2 ounces butter
1 1/2-2 teaspoons mild curry powder
1 lemon, juice of
salt, to taste
pepper, to taste
parsley, chopped,to garnish

Steps:

  • Squeeze the lemon juice over the salmon pieces.
  • In a skillet heat half the butter over gentle heat.
  • Add the spring onions and fry until soft but not brown.
  • Stir in the curry powder and fry for another minute.
  • Add the cream and simmer on low heat for 2-4 minutes.
  • In a second skillet heat the rest of the butter on a very gentle heat.
  • Add the salomon and cook until it's done, time depends on size of chunks.
  • You'll be able to tell from looking at the colour, approx 5-8 minutes.
  • Mix the rice into the cream and onion mixture and stir well, season with salt and pepper to taste.
  • Then add the salmon and mix gently until everything is heated through.
  • Sprinkle the top with chopped parsley and serve.

ONE-PAN TIKKA SALMON WITH JEWELLED RICE

3 tbsp tikka curry paste
150ml pot natural low-fat yogurt
3 salmon fillets , skinned
2 tsp olive oil
1 large red onion , chopped
1 tsp turmeric
50g soft dried apricots , chopped
200g brown basmati rice
100g pack pomegranate seeds
small pack coriander , leaves picked

Steps:

  • Combine 1 tbsp of the curry paste with 2 tbsp yogurt. Season the salmon and smear the yogurt paste all over the fillets, then set aside.
  • Heat the oil in a large pan (with a lid) and add the onion. Boil the kettle. Cook the onion for 5 mins to soften, and stir in the remaining curry paste then cook for 1 min more. Add the turmeric, apricots and rice, season well and give everything a good stir. Pour in 800ml water from the kettle. Bring to a boil, and simmer for 15 mins. Cover with a lid, lower the heat to a gentle simmer and cook for 15 mins more.
  • Uncover the rice and give it a good stir. Put the salmon fillets on top of the rice and re-cover the pan. Turn the heat to its lowest setting and leave undisturbed for 15-20 mins more until the salmon and rice are perfectly cooked. Scatter over the pomegranate seeds and coriander, and serve with the yogurt.

Serve this salmon and coconut curry to your little ones and get them into new tastes and textures. Ideal for weaning, it's suitable from eight months onwards

4 salmon fillets
2tsp vegetable oil
1 onion, diced
300g wholegrain basmati rice
3 cloves of garlic, crushed and diced
1 x 5cm piece of ginger, peeled and grated
1tbsp turmeric
1 pepper, cored and diced
1 handful of mange tout
1 x 440ml can of coconut milk
150g fresh spinach, washed
10g finely chopped coriander

Steps:

  • Season and pan fry the salmon skin side up for 4 minutes in a tablespoon of vegetable oil. Leave it alone, then flip it and cook for another 2 minutes. Remove from the pan and set aside.
  • Cook the rice per packet instructions. Fry the onion in the remaining vegetable oil for 3-4 minutes then add the garlic and ginger. Add the turmeric and a splash of water and mix well.
  • Add in the diced pepper and mange tout, cook for a further minute then add the can of coconut milk. Mix well and it'll go this lovely golden colour. Simmer away for 7-8 minutes.
  • Add in the spinach and cook for 2 minutes so the spinach wilts. Then place the salmon back in and cook for 2 more minutes. Serve with the rice topped with coriander.

  • Combine salmon, oats, eggs and curry powder in a bowl.

1/3 cup soy sauce
1/3 cup canola oil
1 teaspoon garlic powder
1 teaspoon curry powder
1 teaspoon lemon-pepper seasoning
1 teaspoon Worcestershire sauce
1/4 teaspoon Liquid Smoke, optional
6 salmon fillets (8 ounces each)

Steps:

  • In a large resealable plastic bag, combine the soy sauce, oil, garlic powder, curry powder, lemon-pepper, Worcestershire sauce and Liquid Smoke if desired; add the salmon. Seal bag and turn to coat. Refrigerate for 1 hour. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on rack. Grill, covered, over medium heat or broil 4 in. from the heat until fish flakes easily with a fork, 10-12 minutes.

Gochugaru, a mild, fragrant red-pepper powder, bedazzles this quick salmon dinner. As a key ingredient in Korean home cooking, gochugaru proves that some chiles provide not only heat but fruity sweetness as well. Here, that's especially true once it's bloomed in maple syrup, vinegar and butter. If you like shiny things, you may find great pleasure in watching this pan sauce transform into a mirrored, crimson glaze. Try to get long center-cut salmon fillets for uniform thickness and even cooking. Their crispy skin tastes wonderful with white rice, which toasts in the rendered salmon fat. To balance the richness of the fish, serve it with fresh, crunchy things, like cucumbers or pickles, or a big green salad.

4 skin-on salmon fillets (6 ounces each)
Kosher salt (Diamond Crystal) and black pepper
1 tablespoon olive oil
4 cups cooked white rice, preferably leftovers
4 teaspoons gochugaru (see Tip)
2 tablespoons maple syrup
2 tablespoons rice vinegar
2 tablespoons cold unsalted butter, kept whole
Sliced cucumbers or pickles, for serving (optional)

Steps:

  • Season the salmon on all sides with salt and pepper. Heat a large cast iron or nonstick skillet over medium-high heat. Add the olive oil and sear the salmon fillets skin side down until the skin is browned and crispy, 2 to 5 minutes. The salmon's orange flesh will begin to turn pale coral as the heat slowly creeps up the sides of the fish; you want that coral color to come up about two-thirds of the way at this point for a nice medium-rare. Carefully flip the salmon and cook the second side until the flesh feels firm, another 1 to 2 minutes. When you press it, it should not feel wobbly. Transfer the salmon to a plate skin side down and keep the pan with the rendered fat over the heat.
  • Add the rice to the fat in the pan and spread in an even layer, packing it down as if making a rice pancake. Reduce the heat to medium and cook until the bottom is lightly browned and toasted, about 5 minutes. You should hear it crackle. Flip the rice like a pancake, using a spatula if needed. You may not be able to flip it all in one piece, but that's OK. Cook until lightly toasted on the second side, another 1 to 2 minutes. Go longer if you want crispier rice, but the trifecta of crispy-chewy-soft tastes wonderful.
  • While the rice is cooking, stir together the gochugaru, maple syrup, rice vinegar and 1 teaspoon salt in a small bowl. When the rice is done, divide it evenly among the plates. In the now empty pan, add the gochugaru mixture and cook, stirring constantly, over medium-high heat until it bubbles up and reduces significantly, 15 seconds to 1 minute. It should look pretty sticky. Turn off the heat and add the cold butter, stirring with a wooden spoon or tongs until fully melted and incorporated into the gochugaru mixture. Pour this glaze over the salmon and serve with cucumbers or pickles if you'd like.

440 g salmon or 440 g tuna
1 cup long grain rice
1 egg
30 g butter
salt
pepper
45 g butter
1 1/2 tablespoons curry powder
1/2 cup mayonnaise
2 tablespoons parsley (or more)
60 g cheese, grated
2 tablespoons flour
1 1/2 cups milk
2 teaspoons lemon juice
1 egg

Steps:

  • Cook rice in boiling salted water for 12 minutes; drain.
  • Combine rice with butter, egg, salt and pepper.
  • Line a 18cm x 28cm dish with aluminium foil, bringing it above sides of dish.
  • Press mixture over base and sides of tin.
  • Arrange drained, flaked fish over rice base.
  • Sauce:
  • Melt butter.
  • add flour and curry powder, stir until smooth, cook 1 minute and then remove from heat.
  • Add milk gradually, stirring until smooth.
  • Add mayonnaise and return to heat; stir until sauce boils and thickens.
  • Add lemon juice and parsley.
  • Reduce heat, simmer 1 minute and then remove from heat.
  • Add beaten egg, cool slightly.
  • Pour mixture onto fish.
  • Sprinkle with grated cheese.
  • Bake in a moderate oven 25-35 minutes or until golden brown.

1 dash salt
1 dash black pepper
1 medium tomatoes
1 clove garlic
1 medium onion
1 teaspoon ketchup
1 green onion (scallion)
hot pepper (optional)
3 sprigs cilantro

Steps:

  • Open the can of salmon and place in a pan over medium heat.
  • With a spoon or fork, break the salmon chunk in pieces (try not to crush).
  • Wash and slice the tomato, green onion, cilantro, garlic and onion. All the ingredients should now be added to the pot with the salmon chunks.
  • Gently stir everything together, including the ketchup, black pepper and salt. I usually don't use salt, but I'm sure you may like it with a bit of salt. Remember, you can add salt last if it's required also.
  • Cover and let simmer for about 5 minutes, or until all the ingredients get a chance to add their touch to the dish.
  • Serve over rice or with bread.

2 (440 g) cans salmon
3 cups long grain rice
3 eggs
90 g butter
salt
pepper
90 g butter
3 tablespoons curry powder
1 cup fat-free mayonnaise
3 tablespoons fresh parsley, chopped
1 cup reduced-fat cheese, grated
4 tablespoons flour
3 cups skim milk
1 tablespoon lemon juice
2 eggs, beaten

Steps:

  • Boil rice until just cooked.
  • Drain, and add butter, eggs, salt, and pepper. Press mixture into a baking dish, creating the base.
  • Cover rice with the canned fish.
  • Melt butter in microwave. Add flour & curry powder, microwave for 30 seconds.
  • Slowly add milk, whisking to keep it smooth.
  • Add mayonnaise.
  • Microwave for 3 minutes, whisk, and microwave for a further 2 minutes.
  • Add lemon juice and parsley.
  • Microwave 1 minute.
  • Add eggs, stirring well. Set aside to cool fora couple of minutes.
  • Pour the sauce over the fish, top with grated cheese.
  • Bake in a moderate oven for 30 minutes, or until cheese browns.
