3 Italian hot sausages (about 12 ounces), casings removed
1 10-ounce purchased fully baked thin pizza crust
1 1/4 cups purchased refrigerated marinara sauce
1 1/4 cups grated mozzarella cheese (about 5 ounces)
1/2 cup thinly sliced fresh basil leaves
1 cup crumbled Gorgonzola cheese (about 4 ounces)
1/4 cup pitted Kalamata olives or other brine-cured black olives, halved
4 thin rounds green bell pepper, halved

Steps:

  • Position rack in center of oven and preheat to 425°F. Sauté sausage in large skillet over medium-high heat until just cooked through, breaking into 1/2-inch pieces with back of spoon, about 10 minutes. Drain off fat; set sausage aside.
  • Place pizza crust on rimless baking sheet. Leaving 3/4-inch plain border, spread 1 cup sauce over crust. Top with 3/4 cup mozzarella, 3/4 of basil, sausage, 1/2 cup Gorgonzola, olives, 1/2 cup mozzarella, bell pepper and 1/2 cup Gorgonzola. Drizzle remaining 1/4 cup sauce over. Bake pizza until crust is crisp and topping is heated through, about 13 minutes. Sprinkle with remaining basil.

3 tablespoons extra-virgin olive oil, divided
4 cups trimmed and sliced mixed fresh wild mushrooms, such as hen of the woods (maitake) and chanterelles
1 pound pizza dough, preferably whole-wheat
2 cloves garlic, very thinly sliced
4 ounces fresh mozzarella, thinly sliced and torn into 1/2-inch pieces
3 cups loosely packed arugula
1 tablespoon agrumato lemon oil (see Tip)
¼ teaspoon kosher salt
3 tablespoons shaved Pecorino Sardo or Toscano cheese

Steps:

  • Place a pizza stone or large rimless baking sheet on the bottom rack and preheat oven to the highest temperature, preferably 500 degrees F, for 30 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Cook mushrooms, stirring occasionally, until beginning to brown, about 5 minutes. Remove from heat and set aside.
  • Roll dough on a floured surface into a 14-inch circle. Transfer to a floured pizza peel (or rimless baking sheet). Scatter garlic over the dough then sprinkle with mozzarella and half of the mushrooms (reserve the remaining mushrooms for Step 5). Drizzle the remaining 1 tablespoon olive oil over the pizza.
  • Carefully slide the pizza onto the preheated pizza stone or baking sheet. Bake until browned, 10 to 15 minutes. Transfer to a cutting board and cut into 4 pieces.
  • Toss arugula with agrumato lemon oil and salt. Top the pizza with the arugula, the reserved mushrooms and cheese. Serve immediately.

1 sweet onion (peeled, halved, and sliced thin)
1/2 pound Mild Italian Sausage (not links!)
1/2 recipe Homemade Pizza Dough (or store-bought)
1/2 cup marinara sauce
1 1/2 cups shredded mozzarella cheese

Steps:

  • Melt butter in a large skillet over medium heat. Add onion slices; stir to separate the slices into individual pieces. Cook until onions just begin to brown - about 5 minutes stirring occasionally. Reduce heat to medium-low and cook until onions are tender and caramelized, about 15 to 20 minutes. Remove to a bowl; set aside.
  • Preheat oven to 500 degrees F.
  • Using the same skillet, add Italian sausage and return heat to medium. Cook until sausage is browned and cooked through, about 5 to 8 minutes. Drain; set aside.
  • Roll out pizza dough to a 14 to 16" round {depending on your baking sheet/pizza stone size}, and place on baking sheet or pizza stone.
  • Bake dough for 5 mins. Carefully remove crust from oven.
  • Top with a thin-ish layer of marinara to within 1/2-inch of the dough edge.
  • Then top with sausage and almost all the onions. Sprinkle pizza evenly with cheese, and the remaining onions.
  • Bake for another 8 to 12 minutes until cheese is bubbly, crust edges are golden brown and the bottom is crispy. Remove from oven, slice, and eat!

1 14.5-ounce can diced tomatoes, drained
1/3 cup roughly chopped fresh basil
2/3 cup ricotta cheese
2 cups shredded part-skim mozzarella cheese (about 8 ounces)
3 tablespoons chopped fresh mint
Kosher salt and freshly ground pepper
4 hot or sweet Italian sausages (about 12 ounces), casings removed
3 cloves garlic, thinly sliced
1 bunch broccolini, cut into florets

Steps:

  • Put an inverted baking sheet on the lowest oven rack; preheat to 475 degrees F. Line another inverted baking sheet with parchment; drizzle with 2 tablespoons olive oil. Form the pizza dough into an 8-inch oval on the parchment; flip to coat with the oil. Drape with plastic wrap; set aside.
  • Combine the tomatoes and basil in a bowl. Mix the ricotta, mozzarella and mint in another bowl; season with 1/2 teaspoon salt and a few grinds of pepper.

500g ciabatta bread mix
3 tbsp olive oil , plus extra for greasing
plain flour , for dusting
4 large red onions , thinly sliced
2 rosemary sprigs, leaves only, roughly chopped
100g young leaf spinach
3 good-quality pork sausages (about 250g)
2 tsp wholegrain mustard
2 tbsp balsamic vinegar
175g cheddar

Steps:

  • Tip the bread mix into a large bowl. Make a well in the centre and pour in 1 tbsp olive oil and 350ml tepid water. Mix to form a dough, then turn out onto a lightly floured surface and knead for 5 mins. Transfer to a lightly oiled bowl, cover and leave to rise for 30 mins.
  • To make the topping, heat the remaining oil in a frying pan and add the onions, rosemary and a good pinch of salt. Cook gently, stirring occasionally, for 25-30 mins until starting to caramelise. Boil the kettle. Put the spinach in a colander and pour over the boiling water. Leave to drain and cool, then squeeze as much liquid from the spinach as you can and season. Squeeze the sausages from their skins into a small bowl and stir through the mustard. When the onions are softened, pour over the balsamic vinegar and stir well. Cook until almost all the vinegar has evaporated and the onions are sticky.
  • Heat oven to 220C/200C fan/gas 7 and pop in 2 baking trays. Tip the dough out and divide into 2 equal pieces - do not knock the dough back or it won't hold its shape. Stretch and roll the dough into 2 large circles, about 30cm diameter. Transfer the bases to the trays. Spread over the onions, top with the spinach and cheddar, then dot over the mustardy sausage. Bake for 15-20 mins until crisp, golden and the cheese is bubbling.

If you are a soup person like me, you're always on the lookout for new things to try. Well, here's a new one on me too! It's a delicious way of low-carb pizza eating. The noodles are a great sub in for the crust, especially if you use whole wheat noodles. Fortunately, I don't have to worry about that. If you're not low-carb'n it, whip up some bread sticks or garlic bread to serve along side this. Oh, if sausage or any of the other "pizza toppings" aren't to your liking, sub in your favorite pizza toppings such as pepperoni.

⅓ cup milk

Steps:

  • Preheat oven to 375 F. Separate crescent rolls into sixteen triangles. Place in two ungreased 12 inch rimmed pizza pans with points toward the center. In each pan, press rolls together, seal perforations and form a circle 1 inch larger in diameter than bottom of pan. Turn edges under to make a slight rim.
  • Sprinkle cooked sausage evenly over each crust. Top with potatoes; add peppers and/or green onions, if desired. Sprinkle with Cheddar cheese. Combine eggs, milk, salt and pepper in small bowl: stir well. Pour half of the egg mixture evenly over each pizza. Sprinkle with Parmesan.

1 pound sweet Italian sausage
5 tablespoons olive oil, divided
2 large onions, sliced
1 clove garlic, pressed
1 (8 ounce) can tomato sauce
salt and pepper to taste
crushed red pepper to taste
¼ cup sliced stuffed green olives
1 (1 pound) loaf French bread, sliced horizontally
6 ounces mozzarella cheese, shredded

Steps:

  • Remove sausage from casings and saute sausage in 2 tablespoons olive oil until browned. Drain to remove excess oil. Remove from skillet and set aside. In skillet, heat 3 tablespoons olive oil, add onions, garlic and saute stirring until onions wilt down. Add tomato sauce, salt, pepper and red pepper to taste. Simmer about 5 minutes on low.
  • Stir together the sausage and onion and chopped olives. Toast bread lightly under broiler. Top with sausage mix and sprinkle grated mozzarella over all. Broil about 3 minutes under broiler until cheese melts. Watch carefully with oven door open. Remove from broiler, slice and serve.

  • Preheat the oven to full whack (240ºC). Pile the flour into a bowl with a small pinch of sea salt, add 80ml of water and mix into a dough, then knead on a flour-dusted surface for 2 minutes, adding a little extra flour, if needed.
