2 cans (15 ounces each) garbanzo beans or chickpeas, rinsed and drained
3 cups water
1 jar (16 ounces) mild salsa
1 can (14-1/2 ounces) diced tomatoes, undrained
2 celery ribs, chopped
1 cup sliced fresh or frozen okra
1 medium onion, chopped
2 teaspoons Cajun seasoning
1 pound smoked kielbasa or Polish sausage, cut into 1-inch pieces

Steps:

  • In a 5-qt. slow cooker, combine the first 8 ingredients. Cover and cook on low until vegetables are tender, 6-8 hours. Stir in kielbasa. Cover and cook until heated through, about 30 minutes longer.

1 white onion, chopped
1 lb bulk Hot Italian Sausage
Qt. Chicken broth
3 cans garbanzo beans, rinsed and drained
1 cup water
Handful of chopped fresh cilantro
Drizzle of Olive Oil

Steps:

  • Drizzle olive oil in soup pan; heat. Add onions and fry until translucent. Add sausage to onions; break up the sausage while cooking. Add a little bit of chicken broth to deglaze the pan. Add remaining chicken broth, cup of water, garbanzo beans and cilantro. Bring to a boil. Reduce heat to a simmer and cook for 45 minutes.

2 fully cooked Spanish chorizo links (3 ounces each), cut into 1/2-inch pieces

1/2 cup ditalini or other small pasta
1/2 teaspoon salt

Steps:

  • Place the water, celery, chorizo and chickpeas in a 4- or 5-qt. slow cooker. Cook, covered, on low until beans are tender, 8-10 hours. Stir in tomatoes, pasta and salt; cook, covered, on high until pasta is tender, 15-20 minutes longer., Freeze option: Freeze cooled soup in freezer containers. 3 medium Yukon Gold potatoes, diced
1 large sweet onion, chopped
½ cup diced carrots
½ cup diced celery
3 cloves garlic, chopped
salt and ground black pepper to taste
¼ teaspoon red pepper flakes, or more to taste
1 bunch kale, stems removed and leaves chopped
2 bay leaves
5 cups chicken broth
½ pound linguica sausage, diced
½ pound chorizo sausage, diced
1 (14 ounce) can diced tomatoes
1 (14 ounce) can garbanzo beans, with liquid

Steps:

  • Heat oil in a soup pot over medium heat until it sizzles, about 1 minute. Add potatoes, onion, carrots, and celery. Cook and stir for 3 to 4 minutes. Add garlic, salt, pepper, and red pepper flakes. Stir for another 2 to 3 minutes.
  • Add kale and bay leaves to the pot. Cover and let kale wilt for 2 to 3 minutes.
  • Add chicken broth, linguica, chorizo, tomatoes, and garbanzo beans with their juices to the pot and bring to a boil, about 5 minutes. Reduce heat to medium and simmer until veggies are tender, about 15 minutes more.

3/4 pound turkey sausage, casings removed, crumbled
8 large garlic cloves, chopped
1 cup canned diced peeled tomatoes with juices
2 tablespoons thinly sliced seeded jalapeño chili
1 teaspoon ground cumin
1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried
3 15- to 16-ounce cans garbanzo beans (chick-peas), undrained
2 cups canned chicken broth or beef broth
2 tablespoons fresh lemon juice
Chopped fresh cilantro
1 avocado, peeled, sliced

Steps:

  • Heat olive oil in heavy large Dutch oven over medium-high heat. Add turkey sausage and chopped garlic and sauté until sausage is golden brown and cooked through, breaking up sausage with back of fork, about 5 minutes. Reduce heat to medium. Add tomatoes with their juices, sliced jalapeño chili, ground cumin and chopped fresh rosemary and simmer 10 minutes, stirring frequently. Add garbanzo beans with their liquid and chicken broth and bring to boil. Reduce heat and simmer soup 15 minutes. Stir in fresh lemon juice. Season soup to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat before continuing.)
  • Ladle soup into bowls. Sprinkle soup with chopped fresh cilantro and top with sliced avocado. Serve immediately.

Builds a simple meal around this very easy soup; just adds cheese and fruit to complete the menu.

Number Of Ingredients 9

4 tablespoons olive oil
3 1/2-inch-thick French bread slices (each about 3 x 5 inches)
2 tablespoons minced garlic
3 14 1/2-ounce cans low-salt chicken broth
10 ounces fully cooked smoked garlic sausage (such as kielbasa or linguiça), thinly sliced into rounds
1 cup drained canned garbanzo beans (chickpeas)
2 teaspoons paprika
6 tablespoons chopped fresh parsley
1 large egg, beaten to blend

Steps:

  • Heat 2 tablespoons oil in heavy large pot over low heat. Add bread. Cook until brown, about 2 minutes per side. Transfer bread to paper towels and cool. Cut into 1/2-inch croutons.
  • Heat remaining 2 tablespoons oil in same pot over medium heat. Add garlic and stir 30 seconds. Add broth, sausage, garbanzo beans and paprika. Bring soup to simmer. Mix in parsley and egg; stir constantly to break egg into strands as it cooks. Season with salt and pepper. Ladle into bowls. Top with croutons.

This is so easy but so flavorful--I couldn't believe how little time it took to prepare. If you want something spicier use chorizo or hot Italian sausage. You can also eat this over rice, quinoa, or couscous. I topped mine with avocado and cilantro but didn't have any lime wedges or sour cream, and it was still delicious. YUM! turkey sausage or Italian sausage
1 garlic, bulb (cloves separated, peeled, and chopped)
1 jalapeno pepper (seeded and finely chopped)
1 teaspoon ground cumin
14 ounces diced tomatoes (undrained)
2 cups chickpeas (if canned, rinsed and drain 19 oz can)
4 cups chicken stock or 4 cups beef stock
squeeze lime juice
salt
pepper
sour cream
avocado
fresh cilantro
lime wedge

Steps:

  • In a large saucepan, heat a drizzle of oil over medium-high heat.
  • Add the sausage and garlic and saute until the sausage is golden brown and cooked through, breaking it up with a spoon.
  • Add the jalapeno and cumin and cook for another minute or two.
  • Add the tomatoes and tomato juice, chickpeas, and stock and bring to a simmer.
  • Reduce the heat to medium-low and simmer for 30 minutes, until everything is cooked through and the broth has thickened slightly.
  • Add a squeeze of lime, season with salt and pepper, and serve hot, topped with sour cream, chopped avocado, and fresh cilantro. Serve with extra lime wedges alongside.

1 tablespoon salsa
1/2 tablespoon dried thyme

1 pound Italian turkey sausage, casings removed
2 carrots, thinly sliced
1 large onion, chopped
1 cup thinly sliced mushrooms
⅓ cup chopped fresh parsley, divided
1 clove garlic, minced
3 cups water
1 (15 ounce) can garbanzo beans (chickpeas)
2 cubes beef bouillon
½ teaspoon dried sage
salt and ground black pepper to taste

Steps:

  • Heat a pot over medium heat. Cook and stir turkey sausage in the hot pot until browned and crumbly, 5 to 7 minutes.
  • Stir carrots, onion, mushrooms, 1/4 cup parsley, and garlic into sausage. Cook and stir until onion is soft, 7 to 10 minutes.
  • Pour water, garbanzo beans with liquid, beef bouillon cubes, and sage into sausage mixture. Bring to a boil, cover the pot, reduce heat to low, and simmer until carrots are tender, about 10 minutes. Skim and discard any accumulated fat. 3 links hot Italian turkey sausage, sliced
1 onion, chopped
4 -6 cups water

1 (15 ounce) can red kidney beans, drained and rinsed
1 (15 ounce) can garbanzo beans, drained and rinsed
1 (15 ounce) can black-eyed peas, drained and rinsed

Steps:

  • Heat oil in a medium frying pan, saute sausage and onion until sausage has browned. Drain.
  • In crockpot, mix water and dressing mix. Add kidney and garbanzo beans, and black-eyed peas.
