SAUCY PORK CHOPS
I got this recipe out of a cookbook that uses 5 ingredients or less. It's the simplest way to make tender, tasty pork chops. I always hated pork chops growing up, only ever eating a dried out, fried, and breaded chop. I refuse to make them this way. These are delicious and the sauce is very good over the rice.

Steps:
- Season pork chops with salt and sprinkle evenly with 1/2 tsp. sugar. Heat 1 Tbsp. oil in a large skillet over medium-high. Cook chops, undisturbed, until well browned underneath, about 3 minutes. Turn and cook just until second side is lightly browned, about 1 minute. Transfer chops to a plate (they won't be fully cooked); reduce heat to medium.
- Pour remaining 1 Tbsp. oil into same skillet and add shallot and garlic. Cook, stirring often, until softened and just beginning to brown, about 3 minutes.
- Add vinegar and remaining 1 tsp. sugar to skillet. Cook, swirling pan occasionally, until vinegar is nearly evaporated, about 2 minutes.
- Add rosemary, capers, and 1/2 cup water to skillet; season with salt. Reduce heat as needed to maintain a very low simmer. Add butter and swirl pan continuously (and vigorously) until sauce becomes smooth, glossy, and emulsified.
- Return pork chops to skillet, arranging darker side up. Simmer gently in sauce, swirling occasionally, until chops are cooked through, about 3 minutes (a thermometer inserted near the bones should register 135°F).
- Transfer pork chops to plates and spoon sauce over.

This is one for those of us that like things quick and EZ, but yet not sacrificing taste...I remember coming up with this recipe years ago, and then tucking it away in a "safe spot". I recently found it again and do remember that it was very good(or else I would not have written down the recipe) I hope someone gives it a try.... PAMMY'S "1/3" SAUCY PORK CHOPS
This is kind of a "sweet and tangy" sauce. My hubby really likes these. He gives them 5 stars. I divide the leftover sauce from the pan into equal servings to use for dipping the bites of chops in. I marinate the chops for 24 hours before baking. Listed as "cooking time". Recipe #109631 is for the basic sauce. It is also listed below. I only make 3 chops so I use 3/4 cup of the basic sauce and 2 boullion cubes. (I save the other 3/4 cup sauce for either this or one of the other recipes I hope to get posted.) For 6 chops use the full 1 1/2 cups of the basic sauce and 4 boullion cubes. I

SAUCY PORK CHOPS
Here is another recipe that I found in a TOH "Best of Country Cooking" for two people. It was contributed by Dorothy Toben of Blackwell, Oklahoma. I included the time for browning the chops. The original recipe had 1/4 cup of water added to the recipe, but I thought it would make the chops to "saucy". Submitted on May 24th, 2006.
