SALSA VERDE: GREEN TOMATILLO SALSA

Salsa Verde: Green Tomatillo Salsa image

Provided by Food Network

Categories     condiment

Time 25m

Yield about 1 cup

Number Of Ingredients 5

8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Salt

Steps:

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

CHEF JOHN'S GREEN CHICKEN CHILI

Chef John's Green Chicken Chili image

Make this easier version of chili verde using chicken and a tomatillo-based green salsa instead of roasting and pureeing fresh tomatillos. Note that this is a green chili made with chicken and not a chili made with green chicken. Sorry if this disappoints anyone. You can serve it with sour cream, avocado, cilantro, and corn tortillas or corn bread.

Categories     Soups, Stews and Chili Recipes     Chili Recipes     Chicken Chili Recipes

Time 1h50m

Yield 6

Number Of Ingredients 13

3 pounds skinless, boneless chicken thighs
kosher salt to taste
1 (24 fluid ounce) bottle tomatillo-based salsa verde
½ (4 ounce) can chopped roasted green chiles
3 cloves garlic
1 large jalapeno pepper, seeded and sliced
½ cup lightly packed cilantro leaves and stems
1 tablespoon ground cumin
1 teaspoon ground dried chipotle pepper
½ teaspoon freshly ground black pepper
¾ teaspoon dried oregano
1 teaspoon kosher salt, or more to taste
2 (15 ounce) cans white kidney beans, drained and rinsed

Steps:

  • Season chicken thighs with salt on both sides.
  • Transfer 1/2 the chicken to a dry, nonstick skillet over high heat. Cook until browned, about 4 minutes per side. Transfer to a bowl. Brown the rest of the chicken. Let cool to room temperature before cutting.
  • Combine salsa verde, green chilies, garlic, jalapeno, and cilantro in a blender. Blend, starting on low and finishing on high, until sauce is very smooth and bright green.
  • Cut chicken into bite-sized pieces and transfer back into the bowl. Combine chicken pieces, accumulated juices, and the green sauce into a pot. Season with cumin, chipotle pepper, black pepper, oregano, and salt.
  • Rinse out blender with a splash of water and pour into the pot. Mix together and set heat to medium-high. Bring to a simmer; reduce heat to medium-low. Simmer until chicken is tender, depending on size of chicken pieces, about 1 hour. Stir in kidney beans and simmer until thickened, about 15 minutes.

HATCH GREEN CHILI SALSA

Hatch Green Chili Salsa image

I make this recipe in large batches since Hatch chilies are not available year round. I can it so that it will last for several months. I have plenty to cook with (for Chili Verde, green chili chicken enchiladas, etc.) and some to use for gift baskets during the holidays. This recipe is for one of the small batches I made (@15...

Provided by Jeanne Benavidez

Categories     Other Appetizers

Time 3h

Number Of Ingredients 10

15 lb fresh, hatch green chili peppers
4 lb tomatillos, husked and rinsed
2 large yellow or white onions, peeled and quartered
2 Tbsp minced garlic
1 c cilantro, fresh, chopped
1 Tbsp dried oregano
1 Tbsp dried cumin
1 Tbsp salt (i use garlic salt, but regular or kosher salt is fine)
2 can(s) chicken stock
1 c white vinegar

Steps:

  • 1. ROAST THE CHILI PEPPERS: I have a large heat-proof bowl with a tight fitting lid that I place the peppers in as they are finished roasting. I keep the lid laying on top of the bowl as I roast them; when the bowl gets full, I place the peppers into a heavy duty, black garbage bag. When all the roasting is complete and all peppers are in the big bag, just twist the top a little bit to keep the steam inside. Let the peppers sit and steam for a while (@20 - 30 minutes). Let them cool enough so you can handle them. You will need to use gloves (I buy those plain surgical gloves since they are a little thicker than food handling gloves). Remove the charred skin from the peppers along with the stem. If you want, you can remove the seeds also, I do not, but that is up to you.
  • 2. ROAST THE TOMATILLOS: You don't want to char the tomatillos black...simply blister to a light char as there is no need to remove the skin for processing. You can roast these in the oven while you are roasting your peppers.
  • 3. PROCESS THE SALSA: Place peppers and tomatillos into your food processor in batches and process to the desired consistency. Place processed veggies into a large stock pot (everything will eventually go into this pot for cooking).
  • 4. Place the onion in the processor and pulse until finely chopped. Add the onion to pepper mixture along with cilantro, oregano, cumin, salt, chicken stock and vinegar into the stock pot. Stir well to combine all ingredients.
  • 5. Heat the salsa mixture over medium low heat to a low simmer and simmer for about 20 minutes.
  • 6. Pour salsa into sterilized pint jars leaving ½ inch head space, cover with lid and ring. Process for 20 minutes in hot-water bath. Remove the processed jars from the canner and let cool overnight. Refer to your "hot-water-bath canning" procedures.

GREEN CHILE FRITTATA

Green Chile Frittata image

This simple frittata packs a big punch when it comes to flavor. It's full of potatoes, sausage, green chiles and cheese for a complete breakfast all in one dish. Make it ahead and heat up for breakfast throughout the week. A quick salsa made with diced canned tomatoes goes on the side for extra flavor and color.

Provided by Gabriela Rodiles

Categories     main-dish

Time 30m

Yield 8 servings

Number Of Ingredients 12

3 tablespoons olive oil
6 ounces sweet or spicy sausage links, casings removed
1 cup shredded hash browns, thawed
6 large eggs
Kosher salt and freshly ground black pepper
1/2 cup shredded sharp Cheddar
3 tablespoons cottage cheese
One 4-ounce can mild diced green chiles
One 14-ounce can petite fire roasted diced tomatoes, lightly drained
Half a small white onion, diced
1/4 cup cilantro leaves, chopped
Juice of 1 lime

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat 1 tablespoon of the oil in a medium nonstick skillet over medium heat. Add the sausage and cook, breaking up with a wooden spoon, until just browned, about 2 minutes. Transfer to a paper-towel-lined plate.
  • Add the remaining 2 tablespoons oil to the skillet. Add the hash browns and cook, stirring occasionally, until softened and golden in spots, about 4 minutes.
  • Meanwhile, add the eggs to a medium bowl and sprinkle with salt and pepper. Whisk to combine, and then stir in the Cheddar and cottage cheese.
  • Reduce the heat to medium-low and stir the sausage and green chiles into the skillet to combine.
  • Pour the egg mixture into the skillet. Cook, stirring frequently with a rubber spatula, until the mixture is thick, about 3 minutes.
  • Transfer to the oven and cook until set, about 5 minutes.
  • Meanwhile, combine the diced tomatoes, onions, cilantro and lime juice in a medium bowl. Season with salt and pepper.
  • Run a rubber spatula around the edge of the skillet and slide the frittata onto a cutting board. Cut into wedges and serve with the salsa.

  • Spread the tomatillos, chilies, garlic, and onion on a parchment-lined baking tray and roast in a pre-heated oven for between 8-10 minutes at 400ºF/200ºC.You can optionally broil the ingredients for a couple of minutes in the end to slightly char the tomatillo/ peppers and add more of a smoky flavor to the green salsa.Alternatively, you could broil, pan-roast, or even boil the ingredients – all of which are quick and easy. For the best flavor, I prefer oven roasting or pan-roasting, though!
  • Transfer all the ingredients to a blender or small food processor and process to your desired consistency. Then add the cilantro, salt, and lime juice (optional) and blitz a few more times until thoroughly incorporated.
  • Store: The tomatillo green chili salsa will last for between 7-10 days in an airtight container in the refrigerator.Freeze: Allow the salsa to cool, then transfer to an ice-cube tray (to portion the salsa) or an airtight container, leaving 1-inch headspace, and freeze for between 3-4 months.Allow the salsa to thaw in the fridge or at room temperature before enjoying. I’ve noticed it’s not quite as spicy upon thawing, and I’ll often add in a little additional fresh cilantro – but otherwise, it freezes wonderfully!

  • OPTIONAL FOR CHARRED SALSA: Preheat a grill or grill pan over medium-high heat (see note if using oven). Lightly oil the grates to prevent sticking. In a large bowl, toss the tomatillos, poblanos and jalapeno and with oil. Place the vegetables on the hot grill. Grill vegetables, turning often, until the skin is charred and the vegetables are tender, about 8-10 minutes. Remove vegetables from the grill and transfer to a plate. Set aside to allow to cool slightly. (Optional – If you don’t like a strong smoky flavor, use your hands or the back of a paring knife to scrape off some of the charred skin and discard.)
  • Prep peppers and onions: Cut off the stems off the peppers and discard. Cut peppers in half lengthwise and remove seeds if you want a mild salsa. Roughly chop the peppers. Set the tomatillos aside.
  • Blend Salsa: Place the onion, peppers and garlic in the bowl of a food processor. Pulse until roughly chopped (about 10 pulses). Add in the tomatillos and pulse again to roughly chop (about 8-10 pulses). Add in the cilantro, lime juice, agave and cumin. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Pulse again until vegetables are broken down, but salsa is still chunky. Taste and adjust for seasoning with more lime juice, cilantro, salt and pepper if desired. Continue to pulse if a thinner salsa is desired.
  • Refrigerate: For best results, cover salsa, transfer to the refrigerator and allow the flavors to marry for at least 30 minutes.
