SALSA VERDE: GREEN TOMATILLO SALSA
Steps:
- Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
- For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
- For the Roasted version:
- Preheat a broiler.
- Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
CHEF JOHN'S GREEN CHICKEN CHILI
Make this easier version of chili verde using chicken and a tomatillo-based green salsa instead of roasting and pureeing fresh tomatillos. Note that this is a green chili made with chicken and not a chili made with green chicken. Sorry if this disappoints anyone. You can serve it with sour cream, avocado, cilantro, and corn tortillas or corn bread.

- Season chicken thighs with salt on both sides.
- Transfer 1/2 the chicken to a dry, nonstick skillet over high heat. Cook until browned, about 4 minutes per side. Transfer to a bowl. Brown the rest of the chicken. Let cool to room temperature before cutting.
- Combine salsa verde, green chilies, garlic, jalapeno, and cilantro in a blender. Blend, starting on low and finishing on high, until sauce is very smooth and bright green.
- Cut chicken into bite-sized pieces and transfer back into the bowl. Combine chicken pieces, accumulated juices, and the green sauce into a pot. Season with cumin, chipotle pepper, black pepper, oregano, and salt.
- Rinse out blender with a splash of water and pour into the pot. Mix together and set heat to medium-high. Bring to a simmer; reduce heat to medium-low. Simmer until chicken is tender, depending on size of chicken pieces, about 1 hour. Stir in kidney beans and simmer until thickened, about 15 minutes.

- Put all ingredients, except salt and lime juice, in a large kettle and bring to a light boil.
- Cook for 30 minutes.
- Strain liquid into a large bowl.
- Place solid ingredients in a blender.
- Add 1/2 of the strained liquid (about 3 cups) and blend until smooth.
- You may have to do this in batches.
- Add the lime juice and salt and blend for 30 seconds.
- Chill and serve.

- 1. ROAST THE CHILI PEPPERS: I have a large heat-proof bowl with a tight fitting lid that I place the peppers in as they are finished roasting. I keep the lid laying on top of the bowl as I roast them; when the bowl gets full, I place the peppers into a heavy duty, black garbage bag. When all the roasting is complete and all peppers are in the big bag, just twist the top a little bit to keep the steam inside. Let the peppers sit and steam for a while (@20 - 30 minutes). Let them cool enough so you can handle them. You will need to use gloves (I buy those plain surgical gloves since they are a little thicker than food handling gloves). Remove the charred skin from the peppers along with the stem. If you want, you can remove the seeds also, I do not, but that is up to you.
- 2. ROAST THE TOMATILLOS: You don't want to char the tomatillos black...simply blister to a light char as there is no need to remove the skin for processing. You can roast these in the oven while you are roasting your peppers.
- 3. PROCESS THE SALSA: Place peppers and tomatillos into your food processor in batches and process to the desired consistency. Place processed veggies into a large stock pot (everything will eventually go into this pot for cooking).
- 4. Place the onion in the processor and pulse until finely chopped. Add the onion to pepper mixture along with cilantro, oregano, cumin, salt, chicken stock and vinegar into the stock pot. Stir well to combine all ingredients.
- 5. Heat the salsa mixture over medium low heat to a low simmer and simmer for about 20 minutes.
- 6. Pour salsa into sterilized pint jars leaving ½ inch head space, cover with lid and ring. Process for 20 minutes in hot-water bath. Remove the processed jars from the canner and let cool overnight. Refer to your "hot-water-bath canning" procedures.

- Preheat the oven to 450 degrees F.
- Heat 1 tablespoon of the oil in a medium nonstick skillet over medium heat. Add the sausage and cook, breaking up with a wooden spoon, until just browned, about 2 minutes. Transfer to a paper-towel-lined plate.
- Add the remaining 2 tablespoons oil to the skillet. Add the hash browns and cook, stirring occasionally, until softened and golden in spots, about 4 minutes.
- Meanwhile, add the eggs to a medium bowl and sprinkle with salt and pepper. Whisk to combine, and then stir in the Cheddar and cottage cheese.
- Reduce the heat to medium-low and stir the sausage and green chiles into the skillet to combine.
- Pour the egg mixture into the skillet. Cook, stirring frequently with a rubber spatula, until the mixture is thick, about 3 minutes.
- Transfer to the oven and cook until set, about 5 minutes.

EASY HOMEMADE SALSA
Steps:
- Add all ingredients to a food processor and pulse a few times until no large chunks remain.
- Taste and adjust seasonings, if needed, to taste.
- For best flavor, refrigerate salsa for at least 1-2 hours before serving. Store in the fridge for up to 1 week.
- This recipe makes a little less than 6 cups of salsa. I like to fill 3 pint jars and and share with friends and neighbors.

- OPTIONAL FOR CHARRED SALSA: Preheat a grill or grill pan over medium-high heat (see note if using oven). Lightly oil the grates to prevent sticking. In a large bowl, toss the tomatillos, poblanos and jalapeno and with oil. Place the vegetables on the hot grill.
