3 tablespoons vegetable oil
1 tablespoon water
1 egg
1/3 cup light corn syrup
3 tablespoons butter or margarine, softened
3 tablespoons peanut butter
1 tablespoon plus 1 1/2 teaspoons water
1 1/4 teaspoons vanilla
Dash salt
3 1/2 cups powdered sugar
1 bag (14 oz) caramels, unwrapped
2 tablespoons water
1 1/2 cups unsalted dry-roasted peanuts
1 bag (11.5 oz) milk chocolate chips (2 cups)

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. In large bowl, stir cookie base ingredients until soft dough forms. Press dough in bottom of pan. Bake 12 to 15 minutes or until light golden brown. Cool completely, about 30 minutes.
  • In large bowl, beat all filling ingredients except powdered sugar with electric mixer on medium speed until creamy and smooth. Gradually beat in powdered sugar until well blended (filling will be thick). Press filling over cookie base. Refrigerate while preparing caramel layer.
  • In 2-quart saucepan, heat caramels and 2 tablespoons water over low heat, stirring constantly, until caramels are melted. Stir in peanuts. Spread evenly over filling. Refrigerate about 15 minutes or until caramel layer is firm.
  • In small microwavable bowl, microwave chocolate chips uncovered on High 1 to 2 minutes, stirring once, until melted. Spread evenly over caramel layer. Refrigerate about 1 hour or until chocolate is set. For bars, cut into 9 rows by 4 rows. Store covered at room temperature.

1 cup all-purpose flour, plus more for dusting
1/4 teaspoon baking soda
1/8 teaspoon fine salt
1/2 cup crunchy natural peanut butter
1/2 cup packed light brown sugar
1 large egg
1 cup semisweet chocolate chips
6 tablespoons unsalted butter, softened
1 cup confectioners' sugar
1/4 cup sour cream
1/4 cup lightly crushed candy-coated peanut butter candies
1/2 cup lightly crushed potato chips
1/2 cup broken-up pretzel sticks

Steps:

  • For the peanut butter cookie base: Preheat the oven to 350 degrees F with a rack set on the middle shelf. Lightly butter a 9-by-9-inch baking dish.
  • Whisk together the flour, baking soda and salt in a medium bowl.
  • Combine the butter, peanut butter and brown sugar in another medium bowl. Beat with a hand mixer until creamy, about 2 minutes. Add the egg and mix well. Add the dry ingredients and beat until just combined. With lightly floured hands, press the dough into the prepared baking dish and bake until lightly browned, 24 to 28 minutes. Place the baking dish on a cooling rack and cool completely.
  • For the chocolate sour cream frosting: Place the chocolate chips in a medium heat-proof bowl. Microwave in 30 second intervals until the chocolate is melted. Set aside to cool slightly.
  • Whip the butter with a hand mixer until light and fluffy. On low speed, add the confectioners' sugar, 1/2 cup at a time, and whip until all of the sugar has been added and the mixture is smooth and creamy. Add the melted chocolate and sour cream and mix until well combined.
  • To assemble: Spread the chocolate sour cream frosting evenly on top of the peanut butter cookie base. Top with the crushed peanut butter candies, potato chips and pretzels. Cut into 16 bars and use a small offset spatula to remove the bars from the pan.

1 (18 1/4 ounce) package chocolate cake mix (experimenting with other cake flavors is OK)
1/4 cup vegetable oil
1 large egg
1 cup dry roasted peanuts
1 (14 ounce) can sweetened condensed milk
1/2 cup creamy peanut butter (or crunchy)
12 ounces semi-sweet chocolate chips
1/2 ounce cooking spray

Steps:

  • Heat oven to 350°F
  • Coat a 9x13" baking pan lightly with non-stick cooking spray.
  • Beat cake mix, oil and egg in large mixing bowl, on medium speed until somewhat crumbly. Add peanuts and stir. Measure out and set aside 1 1/2 cups of the cake crumb peanut mixture to be used later. Pour remaining mixture into prepared pan and press out to evenly cover the bottom of the pan.
  • Beat sweetened condensed milk and peanut butter in a medium bowl until smooth (hint: use the same bowl you used for cake crumbs). Spread this over the prepared cake crust. This will be a bit challenging. Be careful but don't worry if you struggle with the cake layer a bit.
  • After spreading the mixture sprinkle about 4 oz of semi sweet chocolate chips evenly over the peanut butter mixture.
  • Pour reserved cake crumb mixture over the top and spread evenly, pressing down gently.
  • Bake 25 - 30 minutes until set. Remove from oven. Turn oven off. Top with Remaining about 6 oz more of chocolate chips. Return to oven for 1 minute and then remove from oven. Use a spatula to spread the chocolate evenly over the top of the bars. Cool and store in covered container. Enjoy.
  • Note: You can be creative with this recipe. The cake flavor may be changed. Other flavor chips may be substituted for chocolate. Other nuts may be substituted or combined for/with peanuts. Other nut butters may be substituted for peanut butter. This one basic recipe can produce many bar variations.

Yummy, soft cookies flavored with your favorite candy bar! Reeses Peanut butter cups, Snickers, Caramello! If you like toll house cookies, but wish they were a little softer, these are the ones for you! My daughter loved the Reese's Cups quartered into them. For folks with orthodontia or sensitive teeth, these are perfect!

1 cup salted butter
3/4 cup dark brown sugar
3/4 cup white sugar
2 eggs
2 teaspoons vanilla
1 teaspoon baking powder
1 teaspoon salt
2 1/2 cups flour
6 ounces roughly chopped candy bars (use amount and kind you prefer)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cream together the butter and the sugars until fluffy, beat in the eggs and vanilla. Add the flour with the baking powder and salt mixed inches Stir until blended. Fold in gently the chopped candy bars. If desired, add a cup of chopped almonds, walnuts, pecans or other nut.
  • 3. Drop on a cookie sheet in the size you wish and bake until edges are browned nicely in the middle of the oven (ten minutes or less). Transfer to a cooling rack. From here they disappeared so I can't tell you shelf life but assume these will freeze nicely and ship well.

1 (17 1/2 ounce) package betty crocker peanut butter cookie mix (1 lb 1.5 oz)
3 tablespoons vegetable oil
1 tablespoon water
1 egg
1/3 cup light corn syrup
3 tablespoons butter or 3 tablespoons margarine, softened
3 tablespoons peanut butter
1 tablespoon water
1 1/2 teaspoons water
1 1/4 teaspoons vanilla
1 dash salt
3 1/2 cups powdered sugar
1 (14 ounce) bag caramels, unwrapped
2 tablespoons water
1 1/2 cups dry-roasted unsalted peanuts
1 (11 1/2 ounce) bag milk chocolate chips (2 cups)

Steps:

  • Heat oven to 350°F
  • Spray bottom only of 13x9-inch pan with cooking spray.
  • In large bowl, stir cookie base ingredients until soft dough forms.
  • Press dough in bottom of pan.
  • Bake 12 to 15 minutes or until light golden brown.
  • Cool completely, about 30 minutes.
  • In large bowl, beat all filling ingredients except powdered sugar with electric mixer on medium speed until creamy and smooth.
  • Gradually beat in powdered sugar until well blended (filling will be thick).
  • Press filling over cookie base.
  • Refrigerate while preparing caramel layer.
  • In 2-quart saucepan, heat caramels and 2 tablespoons water over low heat, stirring constantly, until caramels are melted.
  • Stir in peanuts.
  • Spread evenly over filling.
  • Refrigerate about 15 minutes or until caramel layer is firm.
  • In small microwavable bowl, microwave chocolate chips uncovered on High 1 to 2 minutes, stirring once, until melted.
  • Spread evenly over caramel layer.
  • Refrigerate about 1 hour or until chocolate is set.
  • For bars, cut into 9 rows by 4 rows.
  • Store covered at room temperature.
