4 salmon fillets (about 4 ounces each)
2 tablespoons maple syrup
1 tablespoon plain Greek yogurt (can substitute with mayonnaise)
2 tablespoons whole wheat panko breadcrumbs
10 grams about 4 teaspoons finely chopped pecans
¼ teaspoon salt
1/8 teaspoon dried garlic powder

Steps:

  • Heat oven to 425 degrees F. Line a rimmed baking sheet with foil and place a wire rack over top. Spray rack with cooking spray.
  • In a small bowl, whisk together maple syrup and yogurt until smooth. Spread about 2 teaspoons of the syrup mixture on top of each salmon fillet.
  • Mix remaining ingredients in a separate small bowl. Gently press approximately 1 tablespoon of the breadcrumb mixture onto the top of each fillet.
  • Lightly spray each piece of fish with cooking spray or canola oil (this will help it turn crispy and brown).
  • Bake for 8-10 minutes, or until salmon flakes easily with a fork and topping is browned and crispy.

Salmon is my number one favorite "meat" so I'm always looking for a variety of ways to cook it. Here is another of several ways I like to prepare it. (I only make this with REAL maple syrup, so can't vouch for the results if you substitute.)

3 tablespoons maple syrup
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 1/2 teaspoons cornstarch, dissolved in
1 tablespoon water
4 salmon fillets
1 scallion, sliced thin (white part plus about 2-3 inches of the green)
1 tablespoon toasted sliced almonds (optional)

Steps:

  • In a small bowl whisk together the syrup through cornstarch solution until smooth.
  • Place the fillets skin-side-down in a shallow baking pan.
  • Pour the syrup mixture over the salmon.
  • Bake about 15-18 minutes at 450°F until the fish flakes easily; baste with glaze halfway through cooking.
  • Sprinkle with scallion and almonds before serving.

1/4 cup soy sauce
sesame seeds

Steps:

  • Marinate the 2 salmon fillets in mixture of 1/3 cup maple syrup and 1/4 cup of soy sauce for at least 2 hours in the refrigerator.
  • Remove from refrigerator, spoon out marinade into a saucepan and reduce over medium-low heat until you're left with about half the original volume (about 10 minutes).
  • Broil the fillets in a lightly oiled pan for about four minutes, skin side up.
  • Flip the fillets over and brush the flesh side liberally with the reduced marinade.
  • Sprinkle sesame seeds over top and broil for another 4 minutes or until the surface is caramelized and the salmon is no longer translucent in the centre.

1 - 2 lb salmon fillets
2 Tbsp butter
1/3 c "pure" maple syrup (i recommend not using the fake stuff)
1 tsp worcestershire sauce
1/2 tsp salt
1/4 tsp pepper
1/2 tsp ground mustard
1/2 c pecans, chopped fine
salt for sprinkling
fresh lemon wedges for serving

Steps:

  • 1. In a medium saucepan, melt the butter. Stir in the maple syrup, Worcestershire sauce, salt, pepper, and ground mustard. Stir over medium heat until the mixture is warmed through, 3-4 minutes. Remove from the heat and let cool to room temperature.
  • 2. While the marinade is cooling, pour the pecans into a dry skillet and heat over medium heat, tossing frequently, until golden and toasted. Remove from heat; let the pecans cool to room temperature and then chop finely.
  • 3. Take your Salmon fillets and slice them up into individual serving pieces. Place the salmon fillets in a gallon-sized ziploc bag. Pour the maple marinade over the salmon, coating the salmon pieces evenly. Seal the bag and refrigerate for 30 minutes or up to 4 hours.
  • 4. Preheat the oven to 325 degrees F. Line a baking sheet with foil and lightly spray with nonstick cooking spray.
  • 5. Place the toasted, chopped pecans on a plate or shallow pie dish. Remove the salmon from the refrigerator. Dip the top side of each salmon fillet in the pecan crumbs pressing the salmon lightly into the pecans so they adhere to the top of the salmon. 1/3 cup real maple syrup*
3 Tbsp soy sauce ((not low-sodium))
2 cloves garlic (, minced)
Freshly ground black pepper and chopped green onions ((optional))

Steps:

  • In a mixing bowl whisk together maple syrup, soy sauce and garlic. Place salmon into a baking dish then pour maple syrup mixture evenly over salmon.
  • Cover and refrigerate 30 minutes, carefully rotating salmon once halfway through. Preheat oven to 400 degrees during last 10 minutes of marinating salmon.
  • Spray a 13 by 9 inch baking dish with cooking spray then transfer marinated salmon into greased dish (don't discard marinade). Bake in preheated oven until salmon is cooked through, about 15 minutes.
  • Meanwhile, pour marinade into a small saucepan, bring to a boil over medium-high heat, stirring frequently. Once it reaches a boil, reduce heat slightly and allow to cook several minutes, stirring frequently, until reduced to 1/4 cup.
  • Serve salmon warm with 1 Tbsp of the maple soy glaze drizzled over top and black pepper and green onions if desired (I don't think it needed salt because of the soy but feel free to add it if you think it needs it).

  • MAKE SAUCE/MARINADE AND PREPARE SALMON: Sprinkle salmon with salt and pepper. Place all marinade/sauce ingredients in a small bowl or measuring cup. Microwave for 15 seconds until butter is melted. Use half of sauce to coat top and sides of salmon. Reserve remaining sauce for drizzling. (If you have time, to enhance flavor, place half of cooled marinade in ziploc bag and add salmon. Marinate for 15 minutes then discard marinade).
  • TOP WITH PECANS: Place pecans on flat plate and dip top and sides of salmon in pecans to adhere. Or sprinkle top and sides of salmon with pecans, pressing lightly to adhere.
  • BAKE AND SERVE : Bake, with nut topping side up, for 10-12 minutes depending on thickness of salmon (bake 10 minutes per inch of thickness). Salmon should be easy to flake but still be warm pink in middle (not dry and pale light pink). If salmon has skin on bottom, to remove it, slip spatula between skin and flesh. Lift and transfer to plate. Drizzle with remaining sauce. And serve with lemon wedges if desired.
