I've tweaked this recipe a few times, and everyone enjoys it. You can use frozen blackberries, but fresh are best. The lime zest really complements the sweet fruit, and the sour cream pastry is delightful. -Kimberly Reisinger, Spring, Texas

6 cups fresh or frozen blackberries
1/2 cup sugar
3 tablespoons cornstarch
1 teaspoon grated lime zest
SOUR CREAM PASTRY:
1-1/3 cups all-purpose flour
3 tablespoons sugar, divided
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
7 tablespoons cold butter, divided
1/2 cup sour cream
1/4 cup heavy whipping cream

Steps:

  • Place the blackberries in a large bowl. Combine the sugar, cornstarch and lime zest; sprinkle over berries and gently toss to coat. Pour into a greased 9-in. square baking dish., In a large bowl, combine the flour, 2 tablespoons sugar, baking powder, salt and baking soda; cut in 5 tablespoons butter until crumbly. Combine sour cream and heavy cream; gradually add to crumb mixture, tossing with a fork until mixture forms a ball. , Roll out to fit top of baking dish; place pastry over filling. Trim and seal edges; cut slits in top. Melt remaining butter; brush over pastry. Sprinkle with remaining sugar., Bake, uncovered, at 375° for 30 minutes. Cover and bake 15-20 minutes longer or until filling is bubbly and crust is golden brown. Cool for 15 minutes before serving.

1/2 stick butter, melted, plus more for greasing pan
1 1/4 cups plus 2 tablespoons sugar
1 cup self-rising flour
1 cup whole milk
2 cups fresh (or frozen) blackberries
Whipped cream and/or ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with butter.
  • In a medium bowl, whisk 1 cup sugar with the flour and milk. Whisk in the melted butter.
  • Rinse the blackberries and pat them dry. Pour the batter into the baking dish. Sprinkle the blackberries evenly over the top of the batter. Sprinkle 1/4 cup sugar over the blackberries. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle the remaining 2 tablespoons sugar over the top. Top with whipped cream or ice cream . . . or both!

1 cup all-purpose flour
2 teaspoons baking powder
½ cup milk
¼ cup melted margarine
2 cups fresh blackberries
½ cup white sugar
1 cup water

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish.
  • Whisk 1/2 cup sugar together with the flour and baking powder in a mixing bowl. Stir in the milk and margarine until a batter forms. Scrape into the prepared baking dish. Add the blackberries, and sprinkle with 1/2 cup sugar. Pour in the water.
  • Bake in the preheated oven until the batter has risen and the top is brown, 45 minutes to 1 hour. Cool before serving.

4 cups fresh blackberries
1 teaspoon lemon juice
1 cup all-purpose flour

3 tablespoons shortening
1/2 cup whole milk
Vanilla ice cream, optional

Steps:

  • In a large saucepan, combine 1/2 cup sugar and cornstarch. Stir in blackberries and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour into a 1-1/2-qt. baking dish coated with cooking spray., In a small bowl, combine the flour, baking powder, salt and remaining sugar; cut in shortening until crumbly. Add milk; stir into flour mixture just until moistened. Drop by tablespoonfuls onto hot fruit. , Bake at 400° for 25-30 minutes or until topping is golden brown. This is my uncles recipe that he makes for family get togethers. It is the best! Other berries can be substituted but blackberries are our favorite! For smaller families or get togethers, this recipe halves easily!

5 cups blackberries
3 cups sugar
3 tablespoons butter
2 cups sifted flour
1/2 cup shortening
1/2 teaspoon salt
3 teaspoons water (a bit more could be necessary depending on your flour)
1 (16 ounce) box refrigerated pillsbury ready crust pie dough

Steps:

  • Place filling ingredients in a pot and barely cover with water and bring to a boil.
  • Place first three dumpling ingredients in a bowl. Cut shortening into flour using pastry cutter, forks or your hands until it resembles course meal.
  • Add water one teaspoon at a time until dough holds together in a ball and does not crumble when pressed.
  • Flour a work surface and roll out dumpling dough to about 1/4 - 1/8 inch thick and cut into squares.
  • Drop dumplings into berry filling and cook 30 minutes. Make sure to stir when dropping in dumplings so they don't stick together.
  • Pour filling into a 4 quart rectangle baking dish.
  • Roll out pre-made crusts and place over berries. *Most pre-made pie crust boxes come with 2 single crusts. You will need both crusts and trim the extra off. If you have the patience you can create a lattice crust using the pre-made dough for a pretty presentation.
  • Bake your cobbler according to the Pillsbury Ready Crust box directions.
  • This recipe can be halved or 2 smaller cobblers made by using two 2 quart dishes and using one pre-made crust per cobbler.

The buttery crust and sweet blackberries make one delicious fruit dessert. Mmmm, we wish we had a piece right now!

BOTTOM LAYER
1/4 cup(s) butter or margarine, softened
1/2 cup(s) sugar (splenda doesn't work well in this recipe)
1 cup(s) self-rising flour
1/2 cup(s) 2% or whole milk
TOP LAYER
2 cup(s) blackberries, fresh or frozen
- note: if using frozen berries, thaw first, and save the juice.
1/2 cup(s) sugar
1 cup(s) cold tap water to cover
- note: use the saved juice from the berries to add more flavor to the cobbler. if you don't have enough juice, use what you have then add water to make 1 cup of liquid to pour on top of the cobbler.

Steps:

  • Preheat oven to 350 degrees. For the bottom layer, beat the ingredients together using a mixer. It will be like a thick cake batter.
  • Spray the pan lightly with PAM then pour the batter into an 8 or 9-inch pan. Using a spatula spread the batter to the edges of the pan.
  • For the top layer, place the blackberries on top of the batter in a single layer, covering the batter with the blackberries.
  • Sprinkle the sugar over the blackberries.
  • Then pour 1 cup cold tap water on top.
  • Place on cookie sheet (sometimes it bubbles over) and place on center rack in oven.
  • Bake for 45 minutes to 1 hour; until the top is brown and the center doesn't jiggle. Cool before serving.
  • Serve with vanilla ice cream and/or whipped topping.
  • This same recipe may be used with apples, apricots, or canned peaches. If these fruits are used, place them on the bottom of a greased pan, batter on top, then sugar and water over all.
  • You may substitute boysenberries, huckleberries, or blueberries for the blackberries.
