Steps:
- Preheat oven to 350ºF.
- Line 10 muffin cups with paper muffin liners.
- Using electric mixer, beat 1/2 cup butter and 1 cup brown sugar in large bowl to blend. Add 3 eggs and mix well. Beat in almond and vanilla extracts. Sift flour, baking powder and salt into medium bowl. Add to butter mixture and beat until combined. Add whipping cream and beat just until smooth. Fold in chopped macadamia nuts. Divide batter equally among prepared muffin cups. Sprinkle each muffin with whole macadamia nuts.
- Bake until tester inserted into center of muffins comes out clean, about 25 minutes. Serve warm or at room temperature.

BANANA MACADAMIA NUT MUFFINS
These are delicious with macadamia nuts, but are also very good with the more traditional pecans or walnuts. This recipe is less sweet than some muffin recipes - which I think makes them perfect for breakfast. Try them plain, or cut in half and toast in a toaster oven with butter.

- Heat oven to 400. Grease muffin cups, or line with paper baking cups.
- Beat mashed banana, oil, milk, nuts, and egg with a spoon in a medium bowl.
- Stir in remaining ingredients just until moistened (batter will be lumpy, so don't be tempted to overbeat).
- Spoon batter into muffin pan.
- Bake about 20 minutes at 400, just until golden brown. Immediately remove from cups.

Steps:
- Heat oven to 400°F Spray bottoms of 12 muffin cups with nonstick cooking spray.
- In medium bowl, combine flour, nuts, coconut, sugar, baking powder, lemon peel, cardamom and salt. Make well in center; whisk in milk, oil and egg until just moistened. Spoon into muffin cups. (I like to sprinkle a little cinnamon & sugar on top before baking.
- Bake 20 to 25 minutes or until nicely browned. Cool in pan on wire.
- rack 10 minutes; remove from pan. Cool completely.

Steps:
- Preheat oven to 350°F.
- Line a 12-cup muffin tin with paper liners.
- In a small, microwave-safe bowl, melt together the butter and chopped dark chocolate. Heat in 30 second intervals, stirring frequently until smooth. Set aside to cool slightly.
- Dissolve espresso or coffee in hot water. Set aside.
- In a large mixing bowl, whisk together flour, sugar, baking powder and salt. Make a well in the center and add eggs, buttermilk, dissolved coffee, and vanilla extract or Kahlua .
- Stir till partially mixed, then stir in melted chocolate mixture until the batter is almost smooth then stir in the chocolate chunks and nuts if using, mixing just until everything is incorporated.
- Spoon batter into lined muffin cups 2/3 full. Bake for about 16-20 minutes, or until a tester inserted into the center comes out clean.
- Cool muffins before serving at room temperature or slightly warm.
MOCHA-MACADAMIA NUT-CHOCOLATE COOKIE ICE CREAM SANDWICHES
Steps:
- In the large bowl of an electric mixer fitted with a paddle or beaters, on medium speed soften the butter. Add the brown and granulated sugars. When the sugar is incorporated, raise the speed to high and continue to beat until fluffy, scraping down the sides of the bowl and under the beaters with a rubber spatula, as necessary. Lower the speed to medium and add the eggs, 1 at a time, and the vanilla, again scraping down the sides of the bowl as necessary. Turn the speed to low, gradually pour in the flour mixture, and beat until just combined. Add the chocolate and nuts and again beat until just combined.
- Sift together the flour, cocoa, espresso, baking soda, and salt. Set aside.
- Scrape the dough out of the bowl and wrap in plastic wrap. Refrigerate 2 to 3 hours, up to overnight. Position the rack in the center of the oven and preheat the oven to 350 degrees F. Line 1 or 2 baking trays with parchment paper.
- Remove the dough from the refrigerator and divide into mounds, about 1-ounce each (the size of an unshelled walnut). Roll between the palms of your hands, forming 60 to 62 balls of dough. Arrange the balls on the prepared trays, about 2 inches apart. Bake until slightly firm to the touch, 13 to 15 minutes, reversing the trays from front to back after 7 minutes to ensure even baking. Place the trays on racks to cool. After a few minutes, transfer the cookies to the racks with a wide metal spatula to continue to cool. If reusing the baking tray, cool slightly before arranging the balls of dough on it.
- Take the ice cream out of the freezer and let soften slightly for 10 minutes. When the cookies have cooled, spread half of the cookies with some ice cream. Top with another cookie and press lightly. Wrap in plastic wrap and freeze until firm.

- Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups (2 1/2x1 1/4 inch) with shortening, or line muffin cups with paper baking cups.
- In medium bowl, mix flour, cocoa, baking powder and salt; set aside. In large bowl, beat brown sugar, milk, oil, coffee and egg with fork or wire whisk. Stir in flour mixture just until flour is moistened. Fold in chocolate chunks. Divide batter evenly among muffin cups.

LOW CARB MACADAMIA NUT & MOCK BANANA MUFFINS
This is from Food Network's low carb chef, George Stella, and I found it in Low Carb Living Magazine. I liked these because they rose (I was afraid they wouldn't - I can't even get ordinary muffins to rise!), and the banana extract overshadows the soy flavor, which is a very good thing. These are best fresh out of the oven, but are still good for the first couple of days. The magazine says that each muffin is 8.5 net grams carb & 8.1 grams protein.

- Preheat oven to 375°F.
- Spray (6 muffin) muffin tin with vegetable oil spray.
- Mix wheat bran and 1 T soy flour, then coat the muffin tin with the mixture (do this step over a trash can!).
- Mix soy flour, Splenda, baking powder, eggs, cream, and banana extract in a large bowl with a wire whisk.
- Whisk in club soda.
- Fold in nuts.
- Fill muffin tins evenly, and bake for 20 to 25 minutes, using the toothpick test for doneness.
- The tops will be golden brown, but it is a bit hard to tell by color change since soy flour is dark.

WHITE CHOCOLATE-MACADAMIA NUT MUFFINS
There are plenty of sweets on site with the white chocolate-macadamia nut combination, but not one muffin could I find. These are terrific. Toasted coconut is added and what a natural affinity these three flavors have for each other! These are sweet muffins, perhaps more suitable for teatime than for breakfast, but we eat them any time of day. I got the recipe from "White Chocolate," a book by Janice Wald Henderson.

- With the rack in the center of the oven, preheat oven to 400 degrees. Lightly butter twelve 3-1/2 inch muffin cups, or line with paper liners.
- In a large bowl, combine the flour, brown sugar, baking powder and salt.
- In another bowl, whisk together the milk, butter vanilla, and egg.
- Make a well in the center of the dry ingredients. Gradually stir in the liquid ingredients just until combined. Do not overstir.
- Stir in the white chocolate chips, nuts and coconut.
- Spoon batter into prepared muffin cups, filling to the top.
- Bake in preheated oven about 20 minutes or until muffins are a very light brown and a cake tester inserted in the center comes out clean.
- Cool muffins in pan on wire rack 5 minutes. Remove muffins from the pan and eat while warm or serve cooled to room temperature on rack.
- Store in an airtight container up to 2 days or freeze up to 1 month.
BANANA MACADAMIA NUT MUFFINS
These are really very special muffins - super moist and full of flavor. You can substitute your preference and use different nuts instead of the macadamias. Original recipe is from Epicurious, but I tweeked it a bit.

- Preheat oven to 350° and grease or place cupcake liner papers in 12 muffin cups.
- Sift first 4 ingredients into a large bowl.
- Combine bananas, both sugars, butter, milk, egg and vanilla in a medium bowl.
- Mix into dry ingredients, then fold in half of nuts.
- Divide batter among prepared muffin cups and and sprinkle tops with remaining macadamia nuts.
- Bake until muffins are golden brown and tester inserted into center comes out clean, about 25 minutes.
