1 cup all-purpose flour
1 tablespoon Emeril's Essence Creole Seasoning
1 1/2 cups Panko*
1/2 cup grated Parmesan
2 onions, sliced
1/2-inch thick and separated into rings
2 large eggs, beaten

Steps:

  • Preheat oven to 400 degrees. Lightly oil a baking sheet or coat with nonstick spray. In a large bowl, combine flour and Emeril's Essence; set aside. In a large bowl, combine Panko and Parmesan; set aside. Working in batches, dredge onion rings in flour mixture, dip into eggs, then dredge in Panko mixture, pressing to coat. Spread onion rings in an even layer on the prepared baking sheet; coat with nonstick spray. Place into oven and bake until golden brown and crispy, about 20-25 minutes. Serve immediately.

1/4 cup plain breadcrumbs
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
2 medium onions, cut cross ways into 3/16-inch rings
2 tablespoons 1% low-fat milk
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Spray a cookie sheet with lite olive oil or other veggie oil.
  • Mix bread crumbs, oregano & cayenne (mix these ingredients on a sheet of wax paper it will make the next step easier).
  • Dip onion rings into the milk and allow the excess to drip back into the bowl.
  • Dip into the crumb mixture.
  • They won't be fully coated, don't worry they will still have a crunch (especially with Panko crumbs).
  • Place onion rings in a single layer on the cookie sheet.
  • Bake onion rings until the crumbs are golden and the onions are soft (approx 30 minutes).
  • Sprinkle with salt & pepper and then serve.

1/2 teaspoon cayenne
1 cup lowfat buttermilk
1/2 cup plus 2 tablespoons all-purpose flour

1 to 2 large Vidalia onions, peeled

Steps:

  • Preheat the oven to 450 degrees F.
  • Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
  • Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.

1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed

1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up.   • Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.

  • Preheat the oven to 425°F. Grease a large baking sheet with cooking spray.
  • Slice the onions into 1/2-inch wide rings then place the rings in a bowl of water.
  • In a medium bowl, whisk together the flour, 1 teaspoon salt and 1/4 teaspoon pepper. In a second medium bowl, whisk together the egg whites and the mayonnaise. Add the breadcrumbs to a third medium bowl.

1/2 cup cornstarch

1 1/2 cups milk
1 cup club soda
1 large egg

Steps:

  • Preheat the oven to 200 degrees F. Set a cooling rack over a baking sheet.
  • Separate the onions into rings and put in a large bowl. Toss with 1/2 cup of the flour. Arrange the floured rings on the cooling rack; let stand for 15 minutes.
  • Fill a large, wide pot with 2 inches of vegetable oil and heat to 365 degrees F over medium-high heat. In a large bowl, whisk the remaining 2 cups flour with the cornstarch, paprika, cayenne, lime zest and 1 1/2 teaspoons kosher salt. Add the milk, club soda and egg and whisk to combine.

Servings will vary greatly depending upon your onions - approx 4 rings per serving. Please use very large onions and they should be sweet onions (such as Vidalia, Maui, or Walla Walla). Regular onions just won't taste the same.

Steps:

  • Cut off the ends of the onions and peel off the outer layers. Slice the onions into 1/2" rings. Discard the smaller pieces or save for a later use. Separate the rings and add them to a 9x13 baking dish. Pour the buttermilk on top, making sure all of the onion rings are covered with the buttermilk. Cover and place onion rings in the refrigerator to soak for at least 2 hours.
  • Preheat oven to 400 degrees. Line two large baking sheets with parchment paper and set aside. Remove the onion rings from the fridge and set aside.
  • Add the flour, smoked paprika, salt, and the pepper to a small bowl and mix well. In a separate bowl, beat the eggs and set aside. In another bowl, add the panko breadcrumbs plus a little extra salt, if desired.
  • Remove each onion ring from the buttermilk and dip into the flour mixture, then the egg, then the panko, making sure to coat well. Depending on how much you use, you may need more panko bread crumbs. If so, just add a bit more to the bowl.
  • Place the onion rings in a single layer on the prepared baking sheets and spray the onion rings well with nonstick cooking spray.
  • Bake at 400 degrees for about 15 minutes. Remove from oven, flip the onion rings, and spray the other side with nonstick cooking spray. Return to the oven and bake for an additional 15 minutes.
  • Remove from the oven and serve warm.

Olive oil cooking spray
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
  • Stir together the buttermilk and cornstarch in a shallow bowl.
  • Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
  • Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

1 large onion (about 10-12 ounces)
2 tablespoons unbleached all-purpose flour
1 large egg
1/2 cup milk
2 tablespoons butter (melted)
1/2 cup unbleached all-purpose flour
2 cups panko breadcrumbs
2 tablespoons cornmeal
1 teaspoon dried parsley
1 teaspoon paprika
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon kosher salt
cooking spray (or parchment paper)

Steps:

  • Cut off the stem end of the onion, peel back the skin, and cut the onion into 1/2-inch slices. Separate the onion slices into rings and discard or save the ends for making stock.
  • Bowl 1: Add the 2 tablespoons of flour to a medium bowl. Set aside.
  • Bowl 2: Crack the egg into a medium bowl and scramble slightly. Add the milk, melted butter, and 1/2 cup of flour. Stir to combine and set aside.
  • Bowl 3: Combine the panko breadcrumbs, cornmeal, dried parsley, paprika, chili powder, garlic powder, pepper, and salt.
  • Preheat the oven to 425˚F, and spray two large baking sheets with cooking spray or layer with parchment paper.
  • Drop each onion ring into the flour bowl and coat thoroughly with flour.
  • Remove the onion ring from the flour and drop it into the egg mixture. Flip to coat entirely.
  • Remove the batter-coated onion ring, let the extra batter drip off, and then drop it into the breadcrumb mixture and coat completely.
  • Carefully remove the breaded onion ring without shaking off the coating, and place it on the prepared baking sheet.
  • Repeat with the remaining onion rings and place them on the baking sheet without touching each other. You can put little rings inside of big ones to save space.
  • Bake the onion rings in a preheated oven until crispy, about 15 to 20 minutes. Turn over about halfway through so each side browns evenly.
  • Preheat your air fryer to 425˚F for about 5 minutes. Lay the coated onion rings in a single layer in the air-fryer basket, leaving a little space in between each ring.
  • Return the basket to the air fryer and cook 15 to 20 minutes, or until crispy and golden. Flip about halfway through so they cook evenly. Repeat with the remaining onion rings.
  • Serve warm with ketchup or your favorite dipping sauce. Serves 2.

  • Place slices of onion in a shallow dish.
  • Pour the buttermilk over the top and let them soak for about 1 to 2 hours then refrigerated.
  • Preheat oven to 450 degrees F.
  • Line baking sheet with parchment paper or foil.
  • Combine panko, bread crumbs, and corn flakes. In a large dish, place half of the crumbs; season with salt. Reserve the rest for when the first batch is used up.
  • Dip each soaked onion ring into the crumb mixture; coat well.

I am not a fan of fried foods. After trying a few different oven baked recipes, I came up with this one. Feel free to cut out the jalapeno or lessen the cayenne if you don't like spicy rings.

Steps:

  • Spray a cookie sheet with non stick spray.
