- Preheat oven to 400 degrees. Lightly oil a baking sheet or coat with nonstick spray. In a large bowl, combine flour and Emeril's Essence; set aside. In a large bowl, combine Panko and Parmesan; set aside. Working in batches, dredge onion rings in flour mixture, dip into eggs, then dredge in Panko mixture, pressing to coat. Spread onion rings in an even layer on the prepared baking sheet; coat with nonstick spray. Place into oven and bake until golden brown and crispy, about 20-25 minutes. Serve immediately.

- Mix bread crumbs, oregano & cayenne (mix these ingredients on a sheet of wax paper it will make the next step easier).

- They won't be fully coated, don't worry they will still have a crunch (especially with Panko crumbs).

- Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. - Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. - In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.

MOM'S ONION RINGS

- Preheat the oven to 200 degrees F. Set a cooling rack over a baking sheet.
- Separate the onions into rings and put in a large bowl. Toss with 1/2 cup of the flour. Arrange the floured rings on the cooling rack; let stand for 15 minutes.

- Cut off the ends of the onions and peel off the outer layers. Slice the onions into 1/2" rings. Discard the smaller pieces or save for a later use. Separate the rings and add them to a 9x13 baking dish. Pour the buttermilk on top, making sure all of the onion rings are covered with the buttermilk. Cover and place onion rings in the refrigerator to soak for at least 2 hours.
- Preheat oven to 400 degrees. Line two large baking sheets with parchment paper and set aside. Remove the onion rings from the fridge and set aside.
- Add the flour, smoked paprika, salt, and the pepper to a small bowl and mix well. In a separate bowl, beat the eggs and set aside. In another bowl, add the panko breadcrumbs plus a little extra salt, if desired.
- Remove each onion ring from the buttermilk and dip into the flour mixture, then the egg, then the panko, making sure to coat well. Depending on how much you use, you may need more panko bread crumbs. If so, just add a bit more to the bowl.
- Place the onion rings in a single layer on the prepared baking sheets and spray the onion rings well with nonstick cooking spray.
