A quick and easy garlic shrimp pasta recipe with lemon, fresh or frozen vegetables, and white wine. Delicious, budget-friendly, and healthy!

8 ounces whole-wheat linguine
1 pound fresh or frozen raw shrimp (peeled, tails removed (if frozen, thaw in the refrigerator overnight before using))
2 tablespoons extra-virgin olive oil (divided)
1 shallot (peeled and diced)
5 cloves garlic (minced)
1/2-1 teaspoon crushed red pepper flakes (divided (use less if sensitive to spice; 1 teaspoon will have a good kick))
1 teaspoon kosher salt (divided)
1 teaspoon black pepper (divided)
24 ounces mixed vegetables ( of your choice, fresh or frozen. If frozen, thaw and drain)
1/4 cup dry white wine (such as Sauvignon Blanc (or substitute low-sodium chicken broth))
Zest and juice of 1 large or 2 small lemons
3 tablespoons freshly grated Parmesan cheese (plus additional as desired)
2 tablespoons chopped fresh parsley (plus additional as desired)

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta until al dente, according to package directions. Reserve 1/4 cup pasta water, drain remaining water, and then toss with a bit of olive oil to prevent sticking. Set aside.
  • Meanwhile, rinse the shrimp and pat dry. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the shallot and cook until fragrant, about 2 minutes. Add the garlic and cook 1 additional minute. Add the shrimp, and then sprinkle with half the amount of red pepper (1/4 or 1/2 teaspoon depending upon your desired spice level), 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Sauté, stirring to coat with garlic, just until cooked through (both sides will be pink and opaque), about 3 to 4 minutes. Remove to a plate and set aside.
  • Heat the remaining 1 tablespoon olive oil over medium high. Add the vegetables and the remaining 1/4 or 1/2 teaspoon red pepper, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Cook until the vegetables are hot and lightly sautéed, 4 to 5 minutes. Add the white wine and return the shrimp to the skillet. Cook for 2 minutes, allowing the wine to reduce. Stir in the lemon zest and juice and remove from heat.
  • Add the pasta to the skillet and toss. If the pasta is too dry, add a bit of the reserved pasta water. Serve warm, topped with Parmesan and parsley.

3 cloves garlic, finely chopped
1/4 teaspoon crushed red pepper flakes
1/2 cup dry white wine or Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1/4 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1/4 teaspoon salt
1/8 teaspoon pepper
3 tablespoons chopped fresh parsley
2 tablespoons butter

Steps:

  • In 5-quart saucepan or Dutch oven, cook pasta as directed on package. Drain; return to saucepan. Stir in spinach, tomatoes and 2 teaspoons of the oil. Cover to keep warm.
  • While pasta is cooking, in 12-inch nonstick skillet, heat remaining 1 teaspoon oil over medium-high heat. Add onion; cook and stir 1 minute. Add shrimp, garlic and pepper flakes; cook and stir 2 minutes.
  • Stir in wine, broth, salt and pepper; cook 2 minutes or until shrimp are pink and firm. Remove from heat; stir in parsley and butter until butter is melted. Add shrimp mixture to pasta mixture in saucepan; toss to mix.

1 tablespoon vegetable oil
1 pound medium shrimp - peeled and deveined
3 tablespoons minced garlic
2 tablespoons butter
2 tablespoons grated Parmesan cheese

Steps:

  • Cook pasta in a large pot of boiling water with vegetable oil until al dente.
  • Meanwhile, place the shrimp in boiling salted water for 3 to 5 minutes, just until they turn pink. Cooking time will depend on the size of the shrimp. Remove the tails, and place in a bowl of warm water.
  • In a microwave safe bowl, mix butter or margarine and minced garlic. Microwave on high for 45 seconds, or until melted. Stir.

1/2 cup fat-free (skim) milk
3 cloves garlic, finely chopped

Steps:

  • In 5- to 6-quart Dutch oven, heat 3 quarts water to boiling; add linguine and shrimp. Cook 3 to 4 minutes or until linguine is tender and shrimp are pink. Drain and return to Dutch oven; cover to keep warm.

1 (16 ounce) package penne pasta
¾ cup unsalted butter
2 ½ tablespoons olive oil, or to taste, divided
2 cloves garlic, minced
1 pound raw shrimp, peeled and deveined
salt and ground black pepper to taste
1 cup cherry tomatoes, halved
3 tablespoons capers
1 bunch fresh asparagus, trimmed
½ cup shredded Parmesan cheese
1 lemon, quartered

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • While pasta is cooking, heat butter and 2 tablespoons olive oil in a large pan over medium heat. Add garlic and cook until fragrant, making sure not to burn, about 2 minutes. Add shrimp, salt, and pepper. Cook for 2 minutes; add tomatoes and capers. Cover and cook over medium-low heat until shrimp are completely pink, about 3 minutes more.
  • Drain the penne and return it to the empty pot; toss with 1/2 tablespoon olive oil. Keep warm.
  • Pour 1 inch of water into a pot and add a steamer basket. Bring water to a boil and add asparagus. Cover the pot and steam until al dente, about 3 minutes.
  • Scoop 1/4 of the spaghetti onto a plate. Add 1/4 of the asparagus and 1/4 of the shrimp mixture, making sure to include the butter sauce as well. Sprinkle with Parmesan cheese and serve with a lemon wedge. Repeat with remaining spaghetti, asparagus, shrimp, Parmesan, and lemon wedges for each serving.

1 lb dried fettuccine noodles, cooked according to package instructions

Steps:

  • In a large pan, melt together the olive oil and 2 tablespoons of butter over medium heat. Add the garlic and sauté for 30-60 seconds, until fragrant.
  • Add the shrimp to the pan in a single layer. Cook for 1-2 minutes on one side, until just beginning to turn pink, then flip. Add the Holland House® White Cooking Wine and red pepper flakes. Bring to a simmer and cook for 2-3 minutes, or until the wine reduces by about half and the shrimp are cooked through.
  • Add the lemon juice and remaining 2 tablespoons of butter and stir until the butter melts. Season with salt and pepper to taste. Fold in ¼ cup chopped parsley.
  • Toss the shrimp and sauce with fettuccine until well coated. Garnish with the remaining tablespoon of chopped parsley. Serve immediately.

I usually use Fusilli pasta, also I use the white wine instead of the vermouth. If you prefer to use a garlic press, to mince the garlic that works too. Just be careful not to burn it.   • Using slotted spoon, transfer shrimp to medium bowl. Add remaining 3 teaspoons minced garlic and pepper flakes to skillet and cook until fragrant, about 1 minute.
  • Add flour and cook, stirring constantly, for 1 minute; stir in vermouth or wine and cook for 1 minute.
  • Add clam juice and parsley; cook until mixture starts to thicken, 1 to 2 minutes.
  • Off heat, whisk in butter and lemon juice. Add shrimp and sauce to pasta, adding reserved cooking water if sauce is too thick.
  • Season with black pepper. Serve, passing lemon wedges separately if desired.
