1/3 cup finely chopped onion
1 tablespoon butter
2 cups shredded reduced-fat cheddar cheese
1-1/2 cups reduced-fat biscuit/baking mix
1/2 cup fat-free milk
1 large egg, beaten
1 cup finely chopped fully cooked ham

Steps:

  • In a nonstick skillet, saute onion in butter until tender; set aside. In a bowl, combine cheese and biscuit mix. Stir in milk and egg just until moistened. Fold in ham and onion mixture., Coat muffin cups with cooking spray or use paper liners; fill three-fourths full. Bake at 425° for 13-15 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1/2 cup ham (thin sliced and diced)
2 cups almond flour
1/4 cup coconut flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp garlic powder
1 1/2 cup shredded cheddar cheese (divided)
4 eggs
6 tbsp butter (melted)
3/4 cup heavy cream
1/4 - 1/2 cup water

Steps:

  • Preheat the oven to 350* and line 12 muffin cups with parchment paper liners.
  • In a large glass bowl sift together the almond flour, coconut flour, baking powder, salt and garlic powder. Toss in one cup cheddar cheese and the chopped ham. Stir the flour mixture to combine with the ham and the cheddar cheese.
  • To the flour mixture you will now add in the melted butter, cream, eggs and water. Thoroughly mix all the ingredients together to form a batter. The batter will be slightly thick as these are dense muffins.
  • Divide batter evenly into the muffin tin. Sprinkle each muffin top with the remaining 1/2 cup shredded cheddar.
  • Bake for 30 minutes in 350* oven. Test with a toothpick to check for doneness as these muffins are quite dense and oven temperatures can vary slightly. If they need more time keep them in the oven for a few minutes longer.
  • Remove and enjoy. These muffins are great hot out of the oven, but also keep well in an airtight bag or container in the fridge for a few days.

1/4 cup minced fresh chives
1 teaspoon baking powder
1 teaspoon dried parsley flakes

1 large egg, room temperature
1 cup plus 2 tablespoons buttermilk
6 drops hot pepper sauce

3/4 cup shredded Velveeta
TOPPING:
5 tablespoons shredded Parmesan cheese
3-1/2 teaspoons butter
1/2 teaspoon paprika
1/2 teaspoon dried parsley flakes

  • In a large bowl, combine the first 8 ingredients. In another bowl, beat the egg, buttermilk and pepper sauce. Stir into dry ingredients just until moistened. Perfect combination for a perfect savory snack (and the kids will love them!)

Number Of Ingredients 9

280g plain flour
1 tbsp baking powder
100g sliced cooked ham, finely chopped
140g cheddar cheese, coarsely grated (whichever strength you like)
2 eggs
250ml milk
85g butter, melted and cooled
Salt and pepper
12 large tsp Branston pickle (big or small chunk)

Steps:

  • Preheat oven to 200C (fan). Grease a 12 cup muffin tin, or line with paper cases. I find it easier to grease the tin as when using cases, the cheese in the muffins melts to the cases which makes them hard to get out.
  • Sift together the flour, baking powder and salt and pepper to taste into a large bowl. Stir in the ham and 100g of the grated cheese.
  • Lightly beat the eggs in a separate bowl, then add the milk and the melted butter and beat together.
  • Make a well in the centre of the dry ingredients and pour in the egg, milk and butter mixture. Stir gently until just combined taking care not to over-mix.
  • Spoon half the muffin mixture equally between the prepared muffin tin. Add a tsp of Branston pickle in the centre of each of the muffins, then spoon the remaining mixture equally on top of the Branston pickle so that it is covered. Scatter the remaining cheese on top of the muffins. Bake in the preheated oven for 20-25 minutes until well-risen, golden brown and firm to the touch.
  • Leave the muffins to cool in the tin for 5 minutes then transfer to a wire rack. These are best eaten warm but can also be enjoyed cold. Great for the kids lunchboxes. If not keen on Branston pickle, simply leave it out! Enjoy!

Steps:

  • Preheat your oven to 350 degrees. Spray a muffin tin heavily with cooking spray. (Please note that a silicon muffin tin works best.) Set aside.
  • In a large bowl, whisk together the eggs, milk, and spices.
  • Stir in 1/2 cup of the shredded cheddar cheese, ham, and the green onions.
  • Fill the muffin tins. Top with the reaming 1/4 cup cheese.
  • Bake for 25 to 30 minutes or until the eggs pull away from the side of the muffin tin and are set in the middle.

6 slices of lean ham

Steps:

  • Lightly oil 6 x 1/2 capacity muffin trays. Line with a slice of lean ham.
  • Mix 100g ricotta, 40g grated reduced fat cheddar and some parsley in a bowl and dollop into trays.
  • Crack an egg into each and back at 180C until egg just sets (15-20 minutes).

1/2 teaspoon paprika
3 ounces butter
6 slices honey roast ham, chopped into 1 cm pieces

250 ml milk
6 tablespoons finely grated parmesan cheese (to sprinkle on top)

Steps:

  • Pre-heat oven to 190°C/375°F.

1 (16.3 ounce) can refrigerated biscuit dough, separated
1 cup shredded Cheddar cheese
4 ounces sliced deli ham, chopped
1 large egg, beaten
2 teaspoons everything bagel seasoning, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 8 cups of a standard muffin tin with paper liners.
  • Roll each biscuit until 1/4 inch thick. Sprinkle with Cheddar cheese and ham. Wrap biscuit dough around the filling, pinch the edges to seal, and form into a ball. Press into the prepared muffin cups. Brush with beaten egg and sprinkle with bagel seasoning.
  • Bake in the preheated oven until golden brown, about 12 minutes.
