BLUEBERRY GINGER MOJITO PITCHERS

Steps:
- Peel and grate the ginger and add it, together with the sugar and cold water, to a saucepan. Bring it to the boil and stir until the sugar dissolves. Cover and let steep for 15 minutes. Strain and cool in the refrigerator when done.
- Add the blueberries, lime wedges and fresh mint leaves to the glass (or pitcher). Muddle with a wooden spoon so the blueberries are broken and the mint and lime release their juices and flavor. If assembling pitchers you can cover them at this stage and leave in the refrigerator until ready to serve.
- When ready to serve, add the simple syrup, vodka and top off with club soda. Give it a quick stir and then pour into glasses with ice cubes. Garnish with a handful of fresh blueberries and a sprig of mint.
- The recipe outlined below is for 2 tall glasses, but you can use the ratio to make pitchers (depending on how big your pitcher is double or quadruple the recipe).
- Combine the blueberries, mint leaves and lime wedges in the pitcher and muddle it in there with the back of a wooden spoon. When you are ready to serve add the vodka, ginger simple syrup and club soda. Stir and pour into glasses with a couple of ice cubes. Garnish each glass with some fresh blueberries and a sprig of fresh mint.
BLOOD ORANGE GINGER CRANBERRY MOJITO'S

- For the Ginger simple syrup:
- In a small pan, combine the ginger, sugar and water and bring to a simmer, stirring until the sugar is dissolved, about 2 minutes. Then set aside to chill. You can make this ahead of time.
- For the Sugar rim:
- Rub the rims of the glasses with a lime wedge and then gently coat them in brown sugar. Let them dry as you get together the ingredients for the drinks.
- To make the Mojitos:
- In the bottom of four heavy highball glasses, divide the mint and lime wedges evenly between the four glasses, 2 tablespoons simple syrup to each glass and use a muddler to smash them all together and release the mint oil and lime juice.
- Add ice cubes, rum and blood orange soda to fill the glass most of the way. Put a floater of cranberry juice on the top (a couple tablespoons) You could serve as is (I love the look of the floater and the two different colors) or stir them together.
- Garnish with fresh mint, cranberries and candied ginger.

CRANBERRY AND GINGER MOJITO

- For the syrup, combine all the ingredients in a saucepan and bring to a boil.
- Allow to simmer for 5 minutes then remove from the heat and allow to cool slightly.
- Blend the mixture until smooth then strain to remove all the fruit pulp.
- Allow to cool completely.
- To make the mojito, pour syrup into the bottom of a tall glass, add ice, cranberries, mint leaves and lime wedges. Add the rum and top with soda water/club soda.
- Serve.

- Place the pineapple juice and slices of ginger into a small saucepan. Bring to the boil, then simmer for 5-10 minutes until the liquid has reduced by half. Leave to cool to room temperature, then discard the ginger.
- Make the caramelized pineapple next. Heat the butter in a frying pan until starting to foam.
- Dust the pineapple slices in the brown sugar and place in the frying pan. Fry, turning once, until both sides are golden and caramelized (about 3-4 minutes). Put to one side.
- Place 6 mint leaves in each glass (this recipe is for two glasses). Add the lime juice and lime slices to the glasses.
- Pour in the reduced pineapple-ginger juice and muddle everything together with a spoon.
- Fill the glasses up two-thirds of the way with crushed ice, then pour over the spiced rum. Top with the soda water (club soda) and mix again. Add more ice to fill up to the top if necessary.
- Garnish the glasses with a small sprig of mint and a slice of caramelized pineapple.

PINEAPPLE GINGER MOJITO
My grandmother, a native of Philly, gives me her "Philadelphia" magazines when she is finished reading them. Each month, they feature a recipe created by a chef in one of their reknown Philly restaurants/clubs. This mojito is credited to mixologist Tony Abou-Ganim of the G Lounge. I have to admit that I have never been a big fan of mojitos; however, I was willing to give this a try. After making this yesterday, I am totally addicted. I am going to enjoy drinking these all summer. This is a bit of a pain to prepare and you have to wait four days for the pineapple and rum to fuse, but the result is well worth it. Prep time does not include the 4 days wait on the rum fusion. We used the 10 Cane rum, as the recipe suggested. Also, the recipe notes that you will need to choose a sweeter, gold pineapple and be sure to remove the core completely or your rum will have a bitter aftertaste. This recipe calls for quite a bit of ginger, so DH peeled it and put it in a food processor instead of dicing by hand.

- To make the pineapple-rum: Peel, core and slice pineapple and pack into a glass container with a cover. Add rum to completely cover pineapple. Seal container and store in a cool place for four to five days. Taste rum occasionally to check progress. When rum has reached the desired flavor, strain it through a sieve, bottle, and refrigerate for up to two weeks. Yields one liter.
- To make ginger syrup: In a medium saucepan over medium-high heat, bring water and ginger to a boil. Add sugar, stirring until dissolved. Reduce heat to low and simmer for 1 hour. Remove from heat and cool to room temperature. Strain through a sieve, bottle, and refrigerate for up to one month. Yields approximately 3 cups.
- To make mojito: In a 14-oz glass, muddle spearmint, lime juice, and ginger syrup, to release the spearmint oils without tearing the leaves. Fill the glass with crushed ice, and add pineapple-infused rum. Stir the drink to incorporate the flavors and coat the ice. Add more crushed ice, stir again, top with soda water, and stir once. Garnish with a sprig of mint and spear of pineapple.

- Juice the limes. You should wind up with about 1/4 cup of juice. Reserve the juiced halves.
- In a bowl, mash the lime halves, juice, rum, mint, sugar, and ginger with a spoon or masher of choice.
- Allow it to sit for about 20 minutes, and then strain into a bowl. Discard the solids.
- Fill 4 glasses with ice, 1/2 cup rum mixture and 1/2 cup club soda.
- Garnish with mint sprigs.
