2 medium boneless, skinless chicken breasts (about 8 ounces each)
kosher salt, black pepper, and other seasonings as desired (see blog post above for suggestions)

Steps:

  • Place chicken in the bottom of the slow cooker. Position the chicken so it's in a single layer and season, if desired (see blog post above for suggestions).
  • Cover and cook medium boneless, skinless chicken breast on LOW for 1 1/2 to 2 1/2 hours (for other cuts of chicken, such as boneless things, or bone-in chicken breasts or thighs, and for cooking times on HIGH, see the blog post above).
  • Check the chicken for doneness with an instant-read thermometer. (If you're using bone-in chicken, don't touch the thermometer to the bone.) The chicken should be 165 degrees F (I remove mine 5 to 10 degrees early, since the temperature will rise as it rests). Remove the chicken to a plate or cutting board and let rest 5 to 10 minutes so the juices can reincorporate (if you plan to shred the right in your slow cooker, you can let it rest there).
  • When the chicken is cooked through, shred it using a hand mixer, two forks, or your fingers. Serve as desired.

2 lbs. boneless, skinless chicken breasts
1 Tbsp. olive oil
1/2 tsp. salt
1/2 tsp. pepper
1 (8 oz.) jar, taco sauce
1 (10 oz.) can, Rotel tomatoes and chilies
1 tsp. liquid smoke
Chopped cilantro for garnish, if desired

Steps:

  • In a slow cooker, add the uncooked chicken. Drizzle with the olive oil, and top with the salt and pepper.
  • In a bowl, stir together the taco sauce, Rotel, and liquid smoke. Pour over the top of the chicken. Set the slow cooker to low heat, and cook for 5-6 hours, or high heat for 2-3 hours.
  • Once the chicken has cooked, remove chicken breasts from the slow cooker and shred with forks. Return chicken to slow cooker and cook for another 30 minutes on low.
  • Enjoy on top of nachos, nachos, a taco salad, in soup or use for the filling in enchiladas.

1 lb boneless skinless chicken breast, cut into 1-inch-wide strips
2 tablespoons taco seasoning mix (1/2 of 1-1/4-oz. pkg.)
2 tablespoons flour
1 green pepper, cut into 1-inch-wide strips
1 red pepper, cut into 1-inch-wide strips
1 cup frozen corn
1 1/2 cups salsa
1 cup shredded four-cheese Mexican blend cheese

Steps:

  • Spray crock pot with cooking spray.
  • Place chicken with seasoning and flour in slow cooker.
  • Stir in all remaining ingredients except the shredded cheese; cover with lid.
  • Cook on low for 6 to 8 hours.
  • Stir well just before serving.
  • Top with the shredded cheese and serve over rice.

4 boneless, skinless chicken breasts
1 1/4 teaspoon cumin
1 tablespoon chili powder
1/2 teaspoon coriander
1/4 teaspoon paprika
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1/3 cup chicken broth
1/3 cup (packed) cilantro leaves, chopped
2 limes
1 large onion, chopped
1 jalapeno, seeded and minced
4 garlic cloves, minced
1 tablespoon olive oil

Steps:

  • Heat the oil in a medium sized sauté pan. Add the onion and sauté for 5 minutes. Add the cumin, chili powder, coriander, paprika and garlic and sauté two more minutes. Deglaze the pan with the chicken broth making sure to scrape up any browned bits. Turn off and set aside. Sprinkle the chicken with salt and pepper. Add to crock pot. Squeeze the lime on top, add the cilantro, jalapeno, and pour the onion and garlic mixture over top. Cook on low for 3-5 hours, or until cooked through (different crock-pots cook at varying heats) and tender. Remove chicken breasts from the crock pot, shred and place in a bowl. Scoop out the onions and add to the chicken. Depending on the amount of juices produced, you may want to add some or all of the juice back to the shredded chicken. For fast and easy soft tacos, add this chicken to taco sized flour tortillas with shredded lettuce, avocado, tomato, cilantro, red onion, and cheese (I like cheddar, pepper jack, or feta best). Add a dollop of sour cream and salsa, too, if you like. Kitchen Tip: To easily juice the lime, roll it on the counter top a few times like you are kneading it. Then slice in half and squeeze. Or use a hand juicer. My favorite is the Pampered Chef Citrus Press. Recipe Note: You could also prepare this recipe in a pressure cooker. Cook for about 20-30 minutes on high pressure if chicken is thawed, 40-45 minutes if chicken is frozen.

1 teaspoon whole dried chipotle powder
1 teaspoon whole cumin seed
1/2 teaspoon crushed red pepper flakes
1 tablespoon dried onion flakes
1 teaspoon whole Mexican oregano
1/2 teaspoon kosher salt
1/2 teaspoon garlic granules
1/2 teaspoon cornstarch
1/4 teaspoon black peppercorns
1 1/2 cups basmati rice
1 (28 ounce) can diced peeled tomatoes
1 (6 ounce) can tomato paste
3 cups chicken stock (Homemade is best)
6 chicken thighs, skinned, boned, cut into 3/4 inch cubes
2 yellow onions, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 -3 jalapeno chile, roasted, seeded, devained, minced
1 (8 ounce) can diced Ortega green chilies

Steps:

  • Grind the first 9 ingredients in a spice mill.
  • Combine all ingredients except the Ortega Chilies in crock pot.
  • Mix well.
  • Cover and cook on low for 4 hours until rice and chicken are done.
  • Like most crock pot rice dishes, it will turn mushy if over cooked.
  • Add chilies, mix well and serve.
  • You need a nice salad to counterpoint this dish, maybe Jicama & Cucumber or shredded baby carrot& toasted Pinones (Pine Nuts) dressed with Key Lime Juice or a tart Vinaigrette.
