- Heat 1 tablespoon butter in a large skillet over medium-high heat. Cook the sausage until golden, about 2 minutes. Season the chicken with salt and pepper, then toss with the flour in a bowl; add to the skillet and cook until browned but not cooked through, about 3 minutes.
- Add the onion, peppers, garlic, 1/2 teaspoon salt, and pepper to taste and cook 3 minutes. Add the wine, scraping up any browned bits; bring to a boil and cook until slightly reduced, about 1 minute. Add the broth and bring to a gentle simmer. Cover and cook until the sausage and chicken are cooked through, about 5 minutes.
- Transfer the chicken, sausage and vegetables to a platter with a slotted spoon. Increase the heat to high and stir the parsley and cherry peppers and their liquid into the skillet; boil until reduced by one-third, 2 to 3 minutes. Remove from the heat and stir in the remaining 1 tablespoon butter. Pour the sauce over the chicken mixture.
SAUSAGE, ONION AND PEPPER BAKED PASTA
This pasta dish lures you with sausage, onion and pepper and seals the deal with gooey fontina cheese.

- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat 2 tablespoons of the olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil and season with salt and pepper.
- Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl using a slotted spoon. Add the green and red bell peppers and onion to the skillet with the sausage drippings and cook, stirring occasionally, until softened and golden in spots, about 8 minutes. Transfer to the bowl with the sausage.
- Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
- Add the tomato sauce, half of the fontina and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and top with the remaining fontina and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.
PENNE, PEPPERS, AND CHICKEN-APPLE SAUSAGE SAUTE
This recipe originated with my son, who makes it with very spicy chicken sausages. I loved it so much that I adapted it to suit our taste. Because my husband prefers less spicy food, I use milder chicken-apple sausage. This is one of our favorite dinners.

- Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.
- Heat oil in a large skillet over medium heat. Cook and stir peppers until slightly tender, about 7 minutes. Stir in onions and cook until onions soften and turn golden, 7 minutes. Add garlic and cook 5 minutes, stirring occasionally.
- Stir sausage slices into onions and peppers, reduce heat to medium-low, cover, and simmer for 10 minutes.
- Stir drained penne into sausage and onions and reduce heat to low. Season with garlic and herb seasoning, sea salt, and pepper to taste.

- Place a large pot of water on the stove to boil for pasta.
- When the water boils, salt it and cook pasta to al dente, with a bite to it.
- Prick sausages with a fork.
- Place chicken sausages in a large skillet and add 1 inch of water.
- Add 1 tablespoons extra-virgin olive oil to the skillet, (1 turn of the pan).
- Bring water to a boil then reduce heat a little.
- Allow all the liquid to cook away then brown and crisp the casings, 5 to 6 minute.
- Preheat the broiler.
- While pasta and sausage cook, heat a deep skillet over med. heat with 2 tablespoons extra-virgin olive oil (2 turns of the pan).
- Add the peppers, onions and garlic and season with salt and pepper.
- When the sausages are cooked through, slice them on an angle and add them to the peppers and onions.
- Cook together until peppers and onions are tender and sliced sausages are crisp at edges, then deglaze the pan with white wine or chicken stock.
- Stir in crushed tomatoes and bring to a bubble, reduce heat to low.
- Drain the rigatoni and return it to warm pot.
- Add ricotta cheese, salt and pepper, parsley and basil and half of the Parmigiano, a couple of handfuls, stir to combine.
- To assemble the "fake bake," place half the sausage, peppers, onions and sauce in the bottom a baking dish.
- Top with all of the pasta and then the remaining sausages and sauce.
- Cover the top of the dish with the grated Parmigiano and place under broiler 2 minute to brown cheese and set the pasta.

- Prick sausages with a fork. Place chicken sausages in a large skillet and add 1 inch of water. Add 1 tablespoon extra-virgin olive oil to the skillet, 1 turn of the pan. - Place the giardiniera, parsley, basil and lemon zest in the food processor and grind into a relish.
- Slice sausages on an angle. Fill each roll with a little relish, then peppers and onions then the sliced sausages.
SPAGHETTI WITH CHICKEN, SAUSAGE, AND PEPPER SAUCE

- In a large saucepan sauté the onion, the garlic, and the bell pepper in the oil over moderately high heat, stirring, until the vegetables begin to brown. Add the chicken, the sausage, the tomatoes with the juice, the wine, the orégano, the basil, and the sugar and boil the mixture gently, stirring occasionally, for 10 minutes. While the mixture is boiling, in a kettle of boiling salted water boil the spaghetti until it is al dente and drain it well. To the tomato mixture add the cream and salt and pepper to taste and simmer the sauce for 3 minutes, or until it is thickened slightly. Divide the spaghetti between 2 plates and spoon the sauce over it.

- In 6 quarts of boiling salted water, cook the pasta until al dente. About 10 to 13 minutes. Drain and set aside.
- Stir in 2 Tbls of olive oil into the pasta.
- In the meantime, fry the sausage in a large frying pan in 2 Tbls of olive oil until the sausage cooked through and browned all over.
- Remove the sausage from the pan and let stand.
- Drain the excess oil in the frying pan.
- Add the peppers, onions, garlic, oregano and basil to the pan, cover and cook on medium heat until the peppers are tender and slightly browned.
- Cut the sausages into 1 inch pieces and add to the peppers.
- Increase the heat and add the white wine.
- Cook until the wine is reduced by half.
- Stir in the butter and the parsley.
- Season with salt and pepper.
- Plate the pasta and spoon the sausage mixture on top.
- Optional: Plate the pasta, pour a good quality, or homemade vodka sauce over the pasta, then top with sausages and peppers.
- Serve with Parmesan cheese.
